Development, Implementation and Assessment of Food Safety management system (FSMS) HACCP - Hazards Analysis & Critical Control Points is a widely recognised and used product safety management principle in food manufacturing, processing, treatment and service organisations. Implementation of HACCP is a legislative requirement for the food industry in many countries. By partnering with a quality management system, the food organisation is able to manage the safety of food products under the internationally recognized management system structure. HACCP principles require identification of the critical control points in the manufacturing or service processes and set up of the controls for food safety. ISO 22000 - Food Safety Management System is an international standard designed to ensure worldwide safe food supply chains and provide a framework of internationally harmonised requirements for the global approach that is needed. BRC British Retail Consortium first issued the Global Food Standard in 1998 with the intention of eliminating multiple audits by retailer and third party auditors on food manufacturers supplying UK retailers with their own brand products. This standard is used as the benchmark for food safety management and has been extensively revised to reflect EU legislation and continuous best practice requirements. It possesses a comprehensive scope covering all areas of product safety and legality issues and addresses part of the due diligence required of both the supplier and the retailer. The BRC standard has now become the internationally recognised mark of excellence. Certification to the standard verifies technical competence and aids suppliers, brand owners and retailers fulfilment of legal obligations. It also safeguards the consumer. The retailers, food producers, importers, caterers, ingredient suppliers and the food service industry can all benefit greatly from this essential standard. It is currently used by suppliers in Europe, Africa, North and South America, Asia Pacific, and the Middle East. FSSC Food Safety Systems Certification food safety is a global concern, not only because of the importance for public health, but also because of its impact on international trade. Globalization of food production and procurement makes food chains longer and more complex and increases the risk of food safety incidents. Effective and harmonized food safety systems shall manage and ensure the safety and suitability of food in each link of the supply chain. For this reason ISO developed the standard for food safety management systems ISO 22000, which applies to all organizations in the food chain and thus ensures integrity of the chain. Parallel to this development there is an increasing need for harmonized certification of the food safety systems in order to create justified confidence that all necessary measures are taken to ensure food safety in previous links of the chain. In this context ISO developed the technical specification ISO/ TS 22003 that contains requirements for bodies providing certification of the food safety management systems. These developments were triggered by the increasing need of food manufacturers for a generally accepted food safety certificate that meets with the requirements of the subsequent customers in the chain and may incorporate the requirements of the different certification schemes of the retail organizations. As a follow up the FoodDrinkEurope took the initiative to develop a technical specification that specifies the requirements for good practices in food manufacturing and that meets customer requirements. Implementation of these good practices is an essential part of the food safety system and creates confidence in trade. The British Standard Institution (BSI) issued these requirements as the Publicly Available Specification BSI PAS 220. As a next step FoodDrinkEurope initiated the development of a certification scheme for food safety systems of food manufacturers that incorporates the standards ISO 22000, ISO/TS 22002-1 / PAS 220 and guidance on the application of ISO 22000, ISO/TS 22004. The aim of this scheme is to harmonize the certification requirements and methods for food safety systems in the food chain and to ensure the issue of trustworthy food safety certificates that are comparable as regards content and scope. The Foundation was commissioned by FoodDrinkEurope to develop this scheme and retains the legal ownership and the licence agreements for the certification bodies. Development, Implementation and Assessment of Occupational Health & Safety OHSAS 18000 - Occupational Health & Safety is an international occupational health and safety management system specification. The specification is comprised of two parts, 18001 and 18002, and embraces BS 8800 and a number of other publications. The standard follows the structure of ISO 14001, requiring top-level commitment to compliance with legislation, prevention of accidents, promotion of good health and continual improvement. Industrial Food Safety Assurance Program (IFSAP ) Each year, the consumption of unsafe food leads to illnesses in over 2 billion people and 32 million deaths worldwide (WHO, 2012). Food safety hazards can be introduced or enhanced in food materials along the food chain through wrongful acquisition of ingredients, poor storage practices, unclean work area, poor personnel hygiene and practices. In industrial set ups, where every employee s role is vital to the collective achievement of set targets, poor food safety practices which can result in illnesses, loss of productive man hours, high medical expenses and high staff turnover cannot be tolerated.
