INGREDIENTS: 2 Vidalia onions 2 tablespoons butter 2 cubes beef bouillon 2 dashes salt 2 dashes pepper 2 dashes ground paprika DIRECTIONS: Preheat oven to 400 degrees F (200 degrees C). Peel and core onions, then slice halfway through. Place onions on sections of aluminum foil large enough to wrap them completely. Place a bouillon cube in the center of each onion; place pat of butter on top. Season with salt, pepper, and paprika. Wrap the onions in foil. Roast in a preheated oven for 15 min. John said to prepare the onion the same way, but to put it a microwave safe bowl and microwave the prepared onion for 2 or 3 minutes
Page 5 Newsletter Title Vidalia Onion Soup "A huge hit for dinner, the sweet taste of Vidalia onions combines with chicken broth and cream for a rich, deeply flavored treat. The soup is blended in a blender, so it comes out so creamy and thick! If you like Vidalias, you'll love this soup. You can make a lighter version by using milk and no heavy cream." A_RAVEN_FAN Ingredients Original recipe makes 4 servings 6 large Vidalia onions 6 tablespoons butter 4 tablespoons all-purpose flour 2 cups chicken broth 1 cup heavy cream 1/2 cup milk chopped fresh parsley for garnish (optional) Directions 1. Slice onions thinly. Place half of the onions in a skillet with half of the butter; cook, covered, over medium-high heat until soft, about 10 minutes. Remove to a platter, and cook remaining onions with butter. Return two-thirds of the reserved onions to the skillet. (Reserve the rest for garnish.) 2. Stir in flour until well combined with onions. Slowly stir in chicken broth. Remove from heat, and let cool about 10 minutes. Stir in cream and milk. Pour into a blender, and blend until smooth and creamy. Return to stovetop, and heat through over medium-low heat. Volume 1, Issue 1 Page 6 German Potato Salad 4 medium potatoes 4 slices of bacon 3 tblspn. of bacon drippings 1 small Vidalia Onion 1 small green pepper 1/2 cup of celery 2 tblspn. sugar 1tblspn. flour 1tsp. salt dash of pepper 1/4 cup of vinegar 1/2 cup of water Optional: 2 hard boiled eggs Boil potatoes with skin still on, cool, peel and cut into bite size pieces. Cook bacon until crispy Place slices of bacon between paper towels and press gently to absorb excess grease. Finely chop the Vidalia Onion, celery and green pepper and sauté in saved bacon drippings. Mix sautéed vegetables with 2 tblspn. of sugar, 1 tblspn. of flour,1 tsp. of salt and a dash of pepper. Stir until smooth. Add 1/4 cup of vinegar and 1/2 cup of water to the mixture, bring to a boil and then simmer until sauce thickens. Crumble bacon slices over potatoes. Add the potato pieces and crumbled bacon to the sauce and toss until evenly coated with sauce. Optional: Garnish with hard boiled egg slices.
