Balance 360 Approved Freezer Crockpot Meals Welcome to our first freezer crockpot meal extravaganza! I have tasted every single one of these recipes and have found them to be delicious. I hope you and your families will love them, too. In about two hours, you should be able to assemble five delicious meals that are complete. Not only have I found you delicious main dishes, I have also finished the entire menu. You will be preparing 5 meals. Once you have all of the ingredients at home, I imagine most cooks can assemble these in about 2 hours. On the days you re ready to eat them, you simply toss the ingredients into your slow cooker and turn it onto low. Here s what you ll be making: Maple Dijon Glazed Chicken served with rice and vegetables Cilantro Lime Chicken w/ Corn and Black Beans Sweet Potato and Apple Soup served with peanut butter and gluten-free crackers Chicken Fajitas in gluten-free tortillas served with salsa and dairy-free cheese Easy Crock Pot Meatloaf served with rice and vegetables With best wishes, Holly Larson
Get Started! 1. Pull out the grocery list and cross off anything that you already have. 2. Head to the grocery store and purchase everything else (don t forget the freezer containers). 3. Wash hands, put on some music and get to work: a. Start by cooking the brown rice so that it can cook and cook down while you re doing everything else. b. Make the ketchup; it can be stored in the fridge as long as you ll be making your meatloaf within a few weeks. c. Label your five freezer containers with the recipe titles, date and cooking directions (8 hours on low). d. Label two containers for your cooked rice. e. Assemble the five meals. f. Bundle the fajitas with the gluten-free tortillas and cheese in the freezer. g. Divide the cooked rice into two freezer safe containers and store one with the maple dijon chicken and one with the meatloaf.

Maple Dijon Glazed Chicken 1 1/2 pounds chicken breasts, cut into cubes 1 cup Dijon mustard 1/2 cup maple syrup 2 Tablespoons r ed wine vinegar salt and pepper to taste 1. Toss all ingredients into your freezer container. 2. Day of: cook for 8 hours on low or until chicken is cooked and tender 3. Serve with cooked rice and steamed veggies.
Cilantro Lime Chicken w/ Corn and Black Beans 1 1/2 pounds chicken breasts, cut into cubes Juice from 1 lime 1 bunch fresh cilantro, chopped 1 (16 oz) bag frozen corn 2 minced garlic cloves 1/2 red onion, chopped 1 can black beans, drained and rinsed 1 tsp cumin salt and pepper to taste 1. Toss all ingredients into your freezer container. 2. Day of: cook for 8 hours on low or until chicken is cooked and tender. Enjoy!
Sweet Potato and Apple Soup 3 medium sweet potatoes, cubed (peeling is optional) 3 medium apples, cored and cubed 3 cups chicken broth, low sodium 1 cup apple cider 2 teaspoon cinnamon 1 tablespoon maple syrup 1 lemon, juiced 1 tablespoon sage, leaves 1/8 teaspoon salt tablespoon black pepper, ground 1. Place all ingredients into your freezer container. 2. Day of: cook for 8 hours on low. Puree using an immersion blender until smooth. Enjoy! 3. Serve soup with gluten-free crackers and peanut butter.
Chicken Fajitas 1 medium red bell pepper 1 medium yellow bell pepper 1 medium green bell pepper 1 2 large red onion 1 pound boneless skinless chicken breasts 1 2 cup chicken broth 1 tablespoon chili powder 1 teaspoon cumin 1/2 teaspoon paprika 1/4 teaspoon garlic powder 1/4 teaspoon onion powder 1/4 teaspoon red pepper flakes 1 teaspoon salt 1 teaspoon pepper 1. Place all ingredients into your freezer container. 2. Day of: cook for 8 hours on low. Remove chicken, slice thinly and put back in slow cooker to coat with sauce. 3. Serve with gluten-free tortillas, salsa and dairy-free cheese.
Easy Crock Pot Meatloaf 2 eggs, beaten 1 2 cup dairy-free milk 2 3 cup gluten-free bread crumbs 1 2 chopped onion 1 tsp salt 1 4 tsp pepper 1 2 tsp sage 11 2 lbs lean ground beef Balance 360 Ketchup (see recipe below) 1. Label freezer bags with cooking directions and date. 2. Mix together place into freezer safe bags. Place in freezer. 3. On Cooking day, put frozen meatloaf in crockpot, cover with ketchup. Cook on low for 810 hours 4. Serve with rice and veggies.
Balance 360 Ketchup 1 teaspoon olive oil 1/2 cup minced onion 12 (ounce) can tomato paste 1/4 cup apple cider vinegar 2 tablespoons honey 1/4 teaspoon cinnamon (optional) 1/4 teaspoon salt 1/3 cup water 1. In a small frying pan, heat oil over medium heat. Add onion and stir frequently. Remove from pan. 2. In a large bowl, mix together onions, tomato paste, vinegar, honey, cinnamon and salt. Add in 1/4 1/3 cup of water, mixing until you get ketchup to the consistency you like. 3. If you prefer a smoother ketchup, use an immersion blender (or regular blender) to blend in the minced onions. Ketchup can be kept in sealed container in refrigerator for a few weeks.
