Installation Installation, assembly and troubleshooting must only be performed by skilled personnel strictly in accordance with the following instructions : Remove the machine from the packing and throw away the protection pieces. Remove the protection film from the equipment; in case of glue traces, use a detergent and dry. The rating plate is on the rear of the machine. Check the plate to determine if the equipment is set to run with the available line voltage. Check that the available power voltage matches the one printed on the rating plate. During running of the machine the voltage must be within +/- 10% of the correct rating. For the installation of the machine an omnipolar switch must be mounted between the power network and the equipment and it must have a minimum contact distance of at least 3mm per pole. Allow easy access to the switch. During the installation the following rules and regulations must be observed: Legal regulations in force (to be defined Country by Country) Accident protection requirements and laws in force (to be defined Country by Country). rev. 0 11/11/2009 3/8
4. Positioning and fixing M Fig. 2 Position IDROCHEF on the tank like shown in drawing no. 2 and fix it by screwing the adjustable clamp M until its complete blocking. Fill the tank respecting the levels shown in drawing no. 2: minimum 80 mm and maximum 20 mm under the edge of the tank. It is possible to use tanks with a maximum edge of 40 mm, with a maximum capacity of 50 litres. WARNING: operation allowed with water only! Never use other inflammable or explosive fluids. The regular replacement of the used water is highly recommended, in order to avoid bacterial proliferations. To empty the tank, carefully follow the following instructions: Switch off IDROCHEF and disconnect it from the power socket; Take the equipment out from the immersion tank; Empty the tank. CAUTION: wait for the water to be cold before discharging it: danger of burns! rev. 0 11/11/2009 4/8
5. Starting operation WARNING: before connecting the electrical plug make sure the equipment is properly fixed on the tank; if not, the equipment could fall into the tank: danger of electrical shock! WARNING: connect the equipment to a power socket provided with the proper protection. The use of an automatic protection switch with differential current 10 ma is recommended. Main switch Digital Thermostat Pilot light Fig. 3 Connect the plug to a proper power socket and operate the main switch to activate the equipment; the circulation pump and the heating element start working. The lighting of the LOW LEVEL pilot light means that it is necessary to restore the correct water level. When this alarm occurs, IDROCHEF turns into safety state, i.e.: o the pump switches off; o the heating element is disconnected; Once the correct water level is restored, the equipment starts working and the pilot light switches off. rev. 0 11/11/2009 5/8
6. Regulation of the working temperature The regulation and the holding of the working temperature are operated by the digital thermostat: 8 Fig. 4 1 U P 1. Display 2. Working Led 3. UP key 2 3 4 5 6 7 To change the working temperature value, press the regulation key (6): the display shows SP1. Press the keys UP or DOWN in order to raise or to reduce this value (range: 0 C 99.9 C). Press again the regulation key (6) to confirm the change. The display will show the instantaneous temperature. The temperature shown on the display is expressed in centigrade degrees (Celsius). The working Led (2) stays lit until the set working temperature is reached. The Led 3, 4 and 5 indicate that the present temperature is respectively lower, the same or higher compared to the set one. rev. 0 11/11/2009 6/8
7. Cleaning and maintenance The cleaning of the equipment is very important; it ensures the smooth operation of the machine and its long life and gives a good impression to the customer. WARNING: Before any maintenance disconnect the machine from the power source! During the cleaning never use direct pressure water jet! Cleaning can be started only when the equipment has cooled down. Safety Thermostat Fixing screws Protection case 1 2 3 Fig. 5 For a careful cleaning remove the heating element protection case (5): this way it is possible to reach the heating element and the circulation pump: Unloose the two fixing screws (we recommend to unloose them without removing them, in order to avoid their eventual loss); Remove the protection case according to the sequence shown in drawing 5; At the end replace the protection case and fix it by tightening the two screws again. It is possible to use IDROCHEF without the protection case, but the use with the mounted protection is highly recommended: the bags containing the food could block the pump aspiration or come into contact with the heating element, causing their breaking! rev. 0 11/11/2009 7/8
To avoid the formation of scale on the heating element and on the aspiration pipes and delivery of the pump, after the end of the work or at least once a week, we recommend to add some vinegar to the water in the tank and make IDROCHEF work like this for 15-20 minutes. For a more accurate cleaning of the circulation pump it is also possible to remove its lower closing by loosing the fixing screw. At the end put back and properly fix the cap again with the provided screw. The parts in stainless steel and plastic must be cleaned with water and a dedicated detergent (do not use abrasive products). Do not use metal brushes, their use could rust the equipment. Don t ever and for any reason use detergents containing acid. Before any long stand-by of the machine proceed carefully with the cleaning as described above. IDROCHEF is equipped with a safety thermostat which intervenes in case of malfunction of the digital thermostat, preventing an eventual overheating of the equipment. When the safety thermostat intervenes it disconnects the machine from the power source. Wait for some minutes, then unloose the plastic cap (drawing 5) on the rear of the equipment and press on the knob to the end in order to reset the device. In any case get in contact with the service in order to check an eventual fault. 8. Important warning Before any long stand-by of the machine proceed with the cleaning as described above and dry it carefully. In case of defect working, switch off the equipment, disconnect it from the power source and call the service. As already said, the equipment must be used in a proper way only. The manufacturer declines to take any responsibility if the rules written in this instruction book have not been strictly observed. For any technical intervention ask skilled engineers only. 9. Wiring diagram See enclosed wiring diagrams. Warning Get rid of the machine in a proper way by following the national disposal rules. Always protect the machine from the intervention of not authorized persons.
