ADFCA Policy A planned process of transition from inspection to audit. Voluntary Grace period

Evaluating Compliance ADFCA following international best practice (WHO) Government agencies are responsible for assessing HACCP and need to obtain evidence that the 7 principles are applied effectively

Who will audit?

Legal requirements for FSMS Regulatory responsibility to evaluate compliance Compliance Audits External Resources Internal Resources

Internal Resources: Food Inspectors Most Governments evaluate regulatory compliance internally. A team of FSMS auditors will be responsible for assessing compliance with Food Safety Management System Requirements Training requirements?

Compliance Audits? Two key questions to satisfy: Are the controls and limits within the plan technically valid? Are the controls within the plan being complied with in practice?

Inspection Audit A change for all everyone The inspectors Change in role Most inspectors prefer the role of auditor Adviser, consultant

Inspection Audit The business Has to take responsibility Identify who is in charge of food safety? Ensure appropriate documents and records are in place

Inspection versus Audit You must do this! How do you manage this risk?

Finding evidence of compliance? Past Present Future Documents Records Documents Records Observations Interviews with manager

ADFCA Audit Protocol Ref: ADFCA HACCP Standard {CoP} Observation of food safety practices Assessment of food safety documents & records Assessment of commitment of manager (chef) & food safety culture of the business
