The History of Tequila Tequila originated in the Mexican state of Jalisco in a town called Tequila. Tequila is the alcohol which is fermented from the pineapple on the agave plant. The agave plant takes between eight and twelve years to reach the point in which the plant can be used for tequila production. When the agave is ripe, jimadores (farmers whom work on agave plantations) start the process to turn agave into tequila. Each pineapple weights between forty and eighty pounds and each one is able to make up to eight bottles of tequila. First the leaves from the agave are cut, and the pineapple from the agave is the only part of the plant used to make tequila. The pineapples are taken to a distillery where they are cut in half and placed in special furnaces to roast so the starches can be processed into sugar. The pineapples are shredded and pressed to extract the aguamiel from the pulp. The aguamiel (sweet sap extracted from the pineapple of the agave) will then be placed in fermentation tanks where yeast is added, converting the aguamiel of the roasted pulp into alcohol. The aguamiel is fermented for thirty to forty-eight hours. The aguamiel can be distilled up to three times. The first is more of a low distillate, the second and third are used to purify and perfect the liquor. The last step is to let the tequila sit in oak barrels for at least two months, creating Tequila Blanco. For the alcohol to be considered tequila it must sit in the barrel for at least fourteen days or the Mexican government does not recognize it as tequila There are four kinds of Tequila: Blanco, Reposado, Añejo and Reserva. A blanco tequila has to sit in oak barrels for at least two months. Reposado ages for at least one year. Añejo tequila, Agaves favorite, ages over a one to three year period of time. Reserva ages much longer for a much smoother taste, which is the best. In Mexico, contrary to popular belief, tequila is drank straight without salt or lime. But however you wish to drink it, enjoy a fine tequila at Agaves.
