5 Fettuccine with Meatballs Serves 4 Preparation time: 20 mins. Cooking time: 25 mins 500g lean minced beef or lamb 1 cup wholegrain breadcrumbs 1 egg, lightly beaten 4 spring onions, finely chopped 1 carrot, peeled and grated 2 cloves garlic, crushed 2 teaspoons VEGEMITE spread 1 tablespoon light olive oil 1x 737g jar tomato pasta sauce ½ cup water Salt and pepper, to taste 400g fettuccine, cooked, drained, kept warm ½ cup KRAFT Italian 4 Cheese Blend COMBINE the beef, breadcrumbs, egg, spring onions, carrot, garlic and VEGEMITE. Form into 24 even sized balls. HEAT the oil in a large frying pan, add meatballs and cook over a medium heat for 8-10 minutes until golden brown all over. Add the pasta sauce and water, bring to the boil, reduce heat and simmer for minutes, or until meatballs are cooked through. Season to taste. 6 Quick Tomato & Mushroom Pasta Sauce

7 Quick Tomato & Mushroom Pasta Sauce Serves 4 Preparation time: 10 mins. Cooking time: 15 mins 1 tablespoon olive oil 1 large onion, finely chopped 150g button mushrooms, sliced 2 garlic cloves, crushed 700g jar tomato pasta sauce cup red wine 1 teaspoon brown sugar 400g fettucine, cooked, drained and kept warm 1 cup KRAFT Italian 4 Cheese Blend Basil leaves, for garnish HEAT the oil in a saucepan over medium heat. Add the onion and mushrooms and saute for 2-3 minutes until softened, add the garlic and cook a further minute. ADD the tomato sauce, wine and brown sugar then simmer gently for 10 minutes or until slightly thickened. 9 Creamy Alla Panna Penne Serves 4 Preparation time: 10 mins. Cooking time: 20 mins 1 tablespoon oil 4 rashers short cut bacon, sliced 200g button mushrooms, sliced 4 spring onions sliced 1 cup cream cup KRAFT Italian 4 Cheese Blend Freshly ground black pepper 350g penne pasta, cooked, drained and kept warm HEAT the oil in a saucepan and saute the bacon, mushrooms and spring onions for 4-5 minutes or until softened. ADD the cream and half the cheese and simmer until slightly thickened. SEASON with the black pepper and toss through the pasta. Stir until smooth and simmer for 2-3 minutes. 11 Mediterranean Pizza Makes one 26cm pizza Preparation time: 10 mins. Cooking time: mins 1 x 26cm pizza base or large pita bread cup pizza sauce 1 cups grated KRAFT Pizza Blend Cheese 50g sliced prosciutto 12 cherry tomatoes cup pitted Kalamata olives Basil leaves, torn, to serve SPREAD pizza sauce over the pizza base and top with half the cheese, prosciutto, tomatoes and olives. Sprinkle over the remaining cheese. BAKE in a hot oven at 200 C for minutes or until the cheese is browned. Scatter over basil leaves. Serve immediately. 13 Tropical Pizza Makes 1 Preparation time: 10 mins. Cooking time: mins 1 large pita bread, or pizza base cup pizza sauce 50g salami or ham cup pineapple pieces 1 cups grated KRAFT Pizza 4 Cheese Blend teaspoon dried basil teaspoon dried oregano SPREAD pizza sauce over the pita bread and top with half the cheese, salami, pineapple and herbs. 15 Nachos Supreme Serves 4-6 as a snack Preparation time: 10 mins. Cooking time: 12 mins 200g bag corn chips 1-2 cups grated KRAFT Mexican 3 Cheese Blend 300g jar salsa 1 large avocado, chopped Sour cream, for serving, if desired LAYER corn chips and cheese in a shallow oven-proof dish or pie plate. Bake in a moderate oven 180 C for minutes until cheese has melted and lightly browned. TOP with the salsa and chopped avocado, drizzle with sour cream if desired. Serve immediately. 16 Salsa Topped Chicken Enchiladas

17 Salsa Topped Chicken Enchiladas Serves 4 Prepararion time: 20 mins. Cooking time: 25 mins 2 tablespoons oil 500g chicken breast fillet 1 onion, cut into 8 wedges 1 yellow, green and red capsicum, half thinly sliced, half chopped 2 teaspoons ground cumin 3 cups chopped cooked chicken 400 g can red kidney beans, rinsed and drained 250 g PHILADELPHIA Spreadable Light Cream Cheese cup chopped coriander 8 medium tortilla wraps 2 cups grated KRAFT Mexican 3 Cheese Blend 300 g jar salsa 2 tomatoes, chopped red onion, chopped cup coriander leaves, for garnish HEAT the oil in a frypan and cook the chicken for 6-8 minutes. Remove and chop. Heat the remaining oil in the pan and saute the onion and capsicum until softened, add cumin and cook for 1 minute. Stir through chicken, beans, PHILLY and coriander. DIVIDE the filling into 8 and spoon down the centre of each tortilla then roll to enclose filling. Place in a greased 3 litre capacity shallow, rectangular baking dish. Sprinkle with the cheese, cover with foil and bake in an oven at 180 C for 10 minutes, remove the foil and cook a further 5 minutes. COMBINE the salsa, tomatoes, onion and remaining capsicum then spoon along the enchiladas. Garnish with coriander and serve with green salad. Serve immediately. 19 Cheesy Scalloped Potatoes Serves 4-6 Preparation time: 15 mins. Cooking time: mins 250 ml PHILADELPHIA Light Cream For Cooking cream alternative 1 cup milk 3 cloves garlic, crushed Salt and freshly ground black pepper, to taste 1.25 kg potatoes, peeled and thinly sliced 1 cup KRAFT Perfect Melt 3 Cheese Blend WHISK together the PHILLY, milk, garlic and seasonings. ARRANGE half the potatoes in a greased 1 1 / 2-2 litre capacity shallow baking dish. Pour over half the PHILLY mixture and sprinkle with half the Parmesan. Repeat with remaining potatoes, PHILLY mixture and Perfect Melt cheese. COVER and bake in a moderate oven at 180 C for 45 minutes. 20 Cauliflower Cheese

21 Cauliflower Cheese Serves 4 Preparation time: 10 mins. Cooking time: 20 mins 1 large cauliflower, cut into florets and steamed until just tender 30g butter 2 tablespoons flour 1 bay leaf 1 cups milk 2 cups grated KRAFT Perfect Melt 3 Cheese Blend Salt and pepper, to taste PLACE cauliflower in a lightly oiled litre shallow baking dish. Melt butter in a saucepan; add flour and cook, stirring, for one minute. Whisk in milk, add bay leaf and cook, stirring until the sauce boils and thickens. Remove from heat, discard bay leaf and stir in of the cheese. Season to taste. POUR sauce over cauliflower, sprinkle with remaining cheese and bake in a moderate oven at 180 o C for 20 minutes or until the cheese is golden. Serve immediately. 22 Roasted Pumpkin, Bacon & Leek Quiche

23 Roasted Pumpkin, Bacon & Leek Quiche Serves 6-8 Preparation time: 20 mins. Cooking time: 1¼ hrs 300g pumpkin, chopped into 2cm cubes Olive oil spray 2 sheets frozen shortcrust pastry, thawed 20g butter 3 rashers shortcut bacon, finely sliced 3 leeks, trimmed, washed well and sliced 4 eggs 1 cup thickened cream 1 cup grated KRAFT Perfect Melt 3 Cheese Blend 2 tablespoons snipped chives MELT butter in a frypan and saute the bacon and leeks gently for 6-8 minutes. Place pumpkin, bacon and leeks in pastry case. Beat together eggs and cream then pour over vegetables and bacon. Sprinkle with cheese and chives. BAKE in a moderately slow oven 160º C oven for minutes or until custard is just firm. Stand for at least 10 minutes before removing from pan. Serve warm or cool. PLACE pumpkin on a lined baking tray, spray with oil and bake in a moderate oven at 180º C for 25 minutes or until just cooked. CUT each sheet of pastry into 16 even squares and use to line a well oiled 28cm fluted loose- based flan tin, overlapping and pressing together to ensure there are no holes.
