3 Warning Do not operate, maintain or repair the Hot Bain Marie before reading this manual. Care should be taken when moving the unit as it is of considerable weight. Disconnect power source before maintaining or repairing the unit. Installation and repairs should be undertaken by a qualified engineer. Only genuine H&K Ltd replacement parts should be used. Warranty Equipment manufactured by H&K Ltd is guaranteed for a period of one year from date of delivery. H&K Ltd warranty terms cover labour charges and replacement of defective parts within this period. Claims for defective equipment will be accepted if the defect is a result of manufacturing error or of a part s non-compliance. H&K Ltd does not accept responsibility for defects caused by the mishandling, abuse or neglect of equipment. Parts replaced after the one year period has elapsed are covered under warranty for 90 days. 4 Introduction The Hot Bain marie is designed to hold pre-cooked products at a regulated temperature prior to serving. An integrated manual water fill and drain facility is provided. The unit is supplied with removable well dividers and cross members for holding different pan combinations. A storage area for empty Blanco pans is integrated into the unit of the unit. Electrical power supplies are provided for the lowerator trolley. The Hot Bain Marie has a fixed top glass section and a rotating front breath guard for ease of cleaning. On/off switches for elements, heatlamps and the temperature controller are in the electrical control panel on the operator side of the unit. Tools required for installation H&K Europe 1:

5 Installation Upon receipt of equipment inspect for damage. Any damaged parts should be reported to H&K Ltd within 24 hours of receiving the unit. Remove all packaging and protective coverings from the outer sides of the unit. Position unit to store layout plans. Check and set all positional dimensions with store layout drawings. Level the unit by adjusting the legs to increase or decrease the height as necessary (fig.1). Use qualified engineers to make all electrical, refrigeration and plumbing connections. Position the service panels. These panels hook onto the cross members of the service wall at the customer view of the unit (fig.2). 6 Top curved glass 1. Unscrew and remove the glass support bracket tops. (fig.4) 2. Carefully remove all protective coverings from top curved glass. 3. Position curved glass onto the support brackets. 4. Re-tighten support bracket tops ensuring a washer is placed on either side of the glass. Front rotating glass 1. Loosen securing screws on mounting bracket. (fig.5) 2. Carefully remove all protective coverings from front glass. 3. Position into mounting brackets. 4. Re-tighten securing screws. (fig.6) Filling the water well The drain and fill control valves are positioned behind the vented door at the till end of the unit (fig.7). During operation the water level must be monitored periodically and topped up as required using the fill valve. 1. The power to the unit must be turned off. 2. Drain valve handle must be in shut position. 3. Turn fill valve handle to open position. 4. Check water level in the well and turn the fill valve handle to the shut position once the water has reached the maximum level mark on the well sidewall. (fig.8) Draining the water well 1. 8 Maintenance CAUTION Allow unit to cool before cleaning inside the hot well Repairs should be carried out by qualified engineers The unit should be cleaned regularly with a mild soap and water mixture. Do not use abrasive cleaners; they will damage the finish of the unit. The heater elements have been set at a height that allows the area beneath them to be cleaned. This must not be done until the unit is cool. Breath guard assembly The breath guard assembly (fig.9) can be rotated to allow either side to be cleaned. fig.9 Breath guard assembly Hot well heater element replacement 1. Remove the service panels from the front of the unit. 2. Disconnect the main 32 amp power plug from the socket (fig.10). This isolates the island from all mains power and is located within the service wall. 3. Remove the heater element access panel (fig.11). 4. Disconnect the wire connections to the elements. 5. Unscrew the locking nuts. 6. Remove the heater element from inside the hot well (fig.12). 7. Fit new element, screw on locking nuts, reconnect wires, replace access panel, reconnect power plug, replace service panels. H&K Europe 1:
