2 Introduction Overview Introduction Bacon slices arrive at the restaurant fully cooked. They are reheated in the microwave or convection oven. Smallwares Half size solid microwaveable pan lid Microwaveable Pans with false bottoms and solid lids Tongs Safety Equipment Oven mitts (back-up oven procedure) Dry yellow towels Rack handle (back-up oven procedure) Half pans (back-up oven procedure) Half racks (back-up oven procedure) Stainless Steel Pans with false bottoms and solid lids (back-up oven procedure or holding) Get Ready Proper hand washing is one of the most important steps in remaining healthy and keeping food safe. Unclean hands can introduce bacteria or foreign material to food or to clean food contact surfaces. Hands must be washed frequently following these steps. Wet hands and arms Wash hands with approved soap Rinse hands Dry hands Sanitize hands A blue bandage and gloves must be worn over a cut. Gloves must be worn over nail polish or acrylic nails and wherever required by state and/or local ordinance. Hands must be washed and sanitized before putting on gloves. All employees must wear a hat or hairnet when preparing products. Page 2 Bacon Slices

3 Introduction CCP shows the critical control point. Each step identified by a CCP must be monitored and documented to ensure safety of the food. This symbol shows a step in the procedure that must be followed exactly or personal safety could be affected. This symbol indicates a key point in the procedure Bacon Slices Page 3

4 Heating Bacon Slices - Microwave Introduction Overview Follow these steps to heat Bacon Slices in the microwave. Standards Wash Hands As in all areas of food preparation, wash your hands properly before and after preparing any food products. Gloves must be worn whenever required by state or local ordinance for ready to eat food contact. Hands must be washed before putting on gloves. Place Bacon on Lid Remove bacon pouch from walk-in cooler. Open sealed pouch and remove the amount of bacon to be cooked. Wrap remaining bacon in bag with plastic wrap and write the discard time on the opened bag using time tag. Return to walk-in cooler. Wash Hands Place one sheet of bacon on half-size microwaveable pan lid with the bacon-side down, paper-side up. DO NOT remove paper. As in all areas of food preparation, wash your hands properly before and after preparing any food products. Gloves must be worn whenever required by state or local ordinance for ready to eat food contact. Hands must be washed before putting on gloves. Page 4 Bacon Slices

5 Heating Bacon Slices - Microwave Heat Bacon Slices Place bacon in microwave. Use the table below to select the cook time for the microwave used. Current (A&W) Alternative (Thin Cut) 1 minute 25 50% power 1 minute 30 30% power Current (A&W) Alternative (Thin Cut) 1 minute and 25 seconds@ 50% power 1 minute 35 40% power The 900 watt microwave is not recommended for cooking bacon slices. Refer to oven cooking procedures if 2100 watt or 2700 watt microwave is not available. Remove and Break Bacon To prevent burns, use oven mitts or clean dry yellow towel to remove microwaveable lid from the microwave. Tray will be hot! At end of cook cycle remove bacon from microwave. Using tongs, remove paper and transfer bacon slices to pan with false bottom. Break bacon slices in half. Bacon slices should be about 2" - 3" in length after being broken. Write Discard Time and Hold Place solid lid on pan. Write discard time on time tag and place tag on pan. Store at room temperature at the sandwich assembly area Bacon Slices Page 5

Standards Wash Hands As in all areas of food preparation, wash your hands properly before and after preparing any food products. Gloves must be worn whenever required by state or local ordinance for ready to eat food contact. Hands must be washed before putting on gloves. Preheat Oven Preheat oven to correct temperature setting. Load Pan(s) and Start Timer Remove bacon pouch from walk-in cooler. Open sealed pouch and remove the amount of bacon to be cooked. Wrap remaining bacon in bag with plastic wrap and return to walk-in cooler. Write discard time on opened bag. Place biscuit liner on half pan. Place one sheet of bacon slices on pan bacon side down. Bacon will be cooked on top of biscuit liner. Remove paper from bacon. Place half rack on top of bacon slices. This will prevent the bacon on the liner from being blown around in the oven by the oven fan during the cook cycle. Page 6 Bacon Slices

Gloves must be worn whenever required by state or local ordinance for ready to eat food contact. Hands must be washed before putting on gloves. When the oven controller displays "Load", place pan in oven on the bottom rack. Close door and start oven timer. Rules for Loading Oven Load pans of biscuits or side items from the top rack down. Load pans of bacon from the bottom rack up. Racks in oven 1. Biscuits 2. Biscuits 3. Side items 4. Bacon slices 5. Bacon slices General Cooking Rules Always remove products from the oven with a designated tray handle. At the end of any cook cycle, remove cooked products before adding new trays. This helps prevent cross-contamination. 8 Heating Bacon Slices - Oven (back-up procedure) DO NOT cook bacon in the XCEL oven. After loading products wash, rinse and dry hands. Sanitize hands. Remove and Break Bacon When timer sounds, use oven mitts or clean, dry yellow towel and rack handle to remove container from the oven in order to prevent burns. Pan will be hot! Hold pan flat/even when removing from oven to prevent spilling hot product on you. Alert others around you when carrying hot products and equipment. At end of cook cycle remove bacon from oven. Using tongs, transfer bacon slices to pan with false bottom. Break bacon slices in half. Bacon slices should be about 2" - 3" in length after being broken. Write Discard Time and Hold Place solid lid on pan. Write discard time on time tag and place tag on pan. Store at room temperature at the sandwich assembly area. Page 8 Bacon Slices
