3 Introduction UTZ CERTIFIED is a worldwide certification program that sets standards for responsible production and sourcing of agricultural commodities. UTZ CERTIFIED products have been produced according to the criteria of the UTZ CERTIFIED Codes of Conduct. The UTZ CERTIFIED Chain of Custody requirements have been designed to provide a high level of confidence that UTZ CERTIFIED tea originates from an UTZ CERTIFIED producer. These requirements are a set of chain-wide administrative and technical requirements ensuring the traceability of UTZ CERTIFIED tea. Therefore it includes above all criteria for physical and administrative separation of UTZ CERTIFIED tea and non-utz CERTIFIED tea. UTZ CERTIFIED strives to continuously improve its certification documents through regular revisions in close cooperation with all stakeholders. The first UTZ CERTIFIED Chain of Custody for tea was developed with several stakeholders in Why an updated version? UTZ CERTIFIED has continued to review this document to maintain un updated set of requirements that is in accordance with our vision to achieve sustainable agricultural supply chains and the traceability of the products back to their origin. Also the updated version streamlines the approach and terminology as much as possible with the Chain of Custody documents for Coffee and Cocoa. The UTZ CERTIFIED Good Inside Chain of Custody for Tea version 2.0 November 2011 replaces the UTZ CERTIFIED Chain of Custody for Tea, version 1.0 July UTZ CERTIFIED has the overall authority for the issuing and amendment of the requirements stated in this document. Scope This document applies to all operations and activities in the tea supply chain that involve physical handling of certified products, a change in ownership and are leading to product claims. The UTZ CERTIFIED tea program and these Chain of Custody requirements only cover the tea content of tea products. Other end-product ingredients of tea products are not included. 4 The Chain of Custody requirements as described below also apply for the supply chain of Rooibos. In that case, in all parts of the document tea can be replaced by rooibos. In this respect, the activities decaffeinating and soluble processing are not applicable for rooibos. Who must be certified? Chain of custody certification is required for all chain actors who: obtain legal ownership of UTZ CERTIFIED tea and physically handle the tea and make product claims about UTZ CERTIFIED Good Inside (business-to-business and/or business-to-consumer) By product claim we mean a reference to an UTZ claim (with or without the logo), that is made on a product. The product can be a bulk product (business-to-business) or a consumer package (business-to-consumer). Physically handling refers to altering the product or opening bags and not to handling or transporting a closed unit. Please note that it counts as an own activity, when the supply chain actor subcontracts the physical handling of tea. The subcontractor is part of the certification of the supply chain actor who is outsourcing the activity. The certificate holder is responsible for compliance of the applicable control points of the subcontractor. For example, if a supply chain actor buys and sells tea but subcontracts the processing, then the supply chain actor still needs to obtain the Chain of Custody certification. Further information regarding subcontracting/outsourcing is specified as a control point in section A.5. Please note that supply chain actors that blend UTZ certified tea always have to be audited and certified against these Chain of Custody requirements. In tea, physically handling includes the following activities: - Bagging/bulking/re-packing - Pre-blending/mixing of made tea - Decaffeinating - Soluble processing - Blending (consumer blend) - Packing (consumer packing) UTZ CERTIFIED Good Inside 2011 Page 4 of 18

5 For a producer (group) that produces green tea leaves and a tea factory that handles the fresh leafs UTZ tea up to obtaining made tea, the chain of custody is integrated in the UTZ CERTIFIED Good Inside Code of Conduct for Tea Farms and Code of Conduct for Tea Factories respectively and are checked as part of the annual (re)certification. No additional Chain of Custody certification is needed. Who does not need to be certified? Supply Chain actors that are not required to be certified against this document (these supply chain actors may be certified against these requirements at their own request): Subcontractors In the case that the subcontractor is part of the certification of the supply chain actor who is outsourcing the activity, this subcontractor does not need to have a separate Chain of Custody certification. In this situation, the certificate holder is responsible for compliance of the applicable control points of the subcontractor. Please note that subcontractors that blend UTZ Certified tea need their own audit and certification for Chain of Custody. Small volume supply chain actor For supply chain actors that handle less than 50 metric ton of made tea per calendar year, the Chain of Custody certification is not mandatory. UTZ Certified allows then these small volume supply chain actors to use the logo and make the product claim without being certified. They do not need to comply with a self-assessment of compliance regarding the applicable activities. Please refer to the specific policy. This policy can be requested at communications@utzcertified.org. To be able to record UTZ CERTIFIED tea transactions, every Chain of Custody-exempt supply chain actor must register in the UTZ CERTIFIED traceability system for tea to obtain a license. In this way, they can manage their purchases and sales in the system. UTZ CERTIFIED Good Inside 2011 Page 5 of 18

6 Obtaining Chain of Custody Certification Certification must be carried out by a Certification Body, approved by UTZ CERTIFIED (for requirements see the UTZ CERTIFIED Good Inside Certification Protocol). A list of approved Certification Bodies can be found on the UTZ CERTIFIED Training Center website. To obtain the certification for UTZ CERTIFIED Chain of Custody, an organization has to comply with all control points which are applicable to the activities of the organization. Any requests for exceptions to these requirements must be consulted to the UTZ CERTIFIED certification department (written requests only): certification@utzcertified.org. Making on-product claims Supply chain actors that decide to make product claims about UTZ CERTIFIED must be certified against the Chain of Custody requirements. The first audit should occur in the period between three months before and three months after the supply chain actor starts to handle the certified tea. The validity of the certificate starts from the date that the Chain of Custody requirements are proven to be in place or when the certification decision has been taken by the CB. Requirements for the use of the UTZ CERTIFIED Good Inside logo are stated in the UTZ CERTIFIED Tea & Rooibos Labeling and Communications Policy. The UTZ CERTIFIED Good Inside logo can only be used upon written approval by UTZ CERTIFIED. 7 These documents can be downloaded at the UTZ CERTIFIED Training Center website: Date of Compliance Certification according to the version 2.0 is possible from 1 st of December 2011 onwards. It is also possible to become certified according to the requirements of the UTZ Certified Chain of Custody version 1.0 June 2009 until 29 th of February Audits conducted after this date conforming to the UTZ CERTIFIED Chain of Custody version 1.0 will not be accepted. It is mandatory from the 1 st of March 2012 to be audited against the requirements of the UTZ CERTIFIED Chain of Custody for Tea version Any requests for exceptions to these requirements must be consulted to UTZ CERTIFIED certification department in writing: certification@utzcertified.org. Definitions Final buyer: The organization that is the final buyer of the UTZ CERTIFIED tea. In most cases this is the tea packer. The final buyer needs to be a registered member of UTZ CERTIFIED. First buyer: The organization that is the first buyer of the UTZ CERTIFIED tea. This tea comes from an UTZ CERTIFIED producer. The first buyer needs to be a registered member of UTZ CERTIFIED. Made tea: The dry tea product that is obtained after fermentation/crushing and/or drying of the fresh green tea leaves. Operator: The organization that is the legal owner of the tea, that physically handles the tea and makes an UTZ CERTIFIED Good Inside claim either on or off-product. Subcontractor: The organization contracted by the producer or organization to carry out specific tasks that are covered in this document. Supplier: Individual, company or other legal entity providing goods or services to an organization. UTZ CERTIFIED Good Inside 2011 Page 7 of 18

8 Supply chain actor: Each party carrying out activities (including importing) within the UTZ CERTIFIED supply chain. UTZ Certified tea: Tea originating from an UTZ Certified producer UTZ Certified input: Input that counts towards the percentage claim for a certified product. UTZ Certified output: Raw materials, semi-finished products or finished products that are produced and/or supplied by an organization with an UTZ claim. 10 Sections overview This document is divided into different sections that represent different activities in the supply chain. Each supply chain actor in the supply chain of UTZ CERTIFIED tea must comply with the sections of the applicable activities. A General Applicable to all supply chain actors to be certified against the UTZ CERTIFIED Chain of Custody for tea. B Handling of certified made tea Applicable to all supply chain actors that handle UTZ CERTIFIED made tea up to the stage of final blending (e.g. bulking, and pre-blending) C Final blending Applicable to all supply chain actors that make consumer blends of UTZ CERTIFIED tea D Consumer packing Applicable to all supply chain actors that pack UTZ CERTIFIED tea E Decaffeinating tea Applicable to all supply chain actors that decaffeinate UTZ CERTIFIED tea F Soluble processing Applicable to all supply chain actors that process UTZ CERTIFIED tea into instant tea through soluble processing (e.g. freeze-dried or spray-dried). 11 Nº CONTROL POINT GUIDANCE COMMENT Section A - GENERAL 1. GENERAL DOCUMENTED CONTROL SYSTEM 1.1 The supply chain actor has a clearly documented control system, which addresses each applicable section of the UTZ CERTIFIED Chain of Custody requirements. For each chapter, the documented control system must: a) Specify the personnel responsible for the monitoring and control; and b) Provide examples of forms, records or documents that show compliance. 2. IDENTIFICATION OF CERTIFIED INPUTS AND OUTPUTS 2.1 The supply chain actor operates a system for assuring, verifying, and monitoring whether UTZ CERTIFIED tea that is received from its suppliers, is indeed UTZ CERTIFIED. The system can be based on written documents and procedures and/or an automated system. 2.2 The supply chain actor documents each purchase and sale of UTZ CERTIFIED tea. This documentation can be done by an invoice or UTZ CERTIFIED sales record. When a supply chain actor purchases UTZ CERTIFIED tea from its suppliers, it operates a system that includes the following requirements: a. Verifying the validity of the UTZ CERTIFIED certificate of the supplier of the tea; b. Verifying the invoices and/or documents that accompany the shipment of the tea to confirm its certified status; c. Specifying the fact that the purchase regards UTZ CERTIFIED tea in all documentation. For each purchase or sale of UTZ CERTIFIED tea a buyer confirmation/sales announcement is made, verified and/or confirmed through the Good Inside Portal. 2.3 The supply chain actor operates a system that allows any UTZ CERTIFIED tea sold by the organization to be linked to a specific sales invoice issued. The system can be based on written documents and procedures and/or an automated system. The supply chain actor operates a system to ensure that all sales invoices issued for UTZ CERTIFIED tea include the following: a. A description of the origin of the tea as indicated in the contract (origin, quality, volume); and b. A transaction ID. This ID is generated in the UTZ Good Inside Portal upon every transaction of the UTZ CERTIFIED tea. c. Any other information that identifies the tea (at the discretion of the organization). 2.4 The volume of UTZ CERTIFIED tea of the supply chain actor in the Good Inside Portal is up to date and matches the volume of the available UTZ tea. If the supply chain actor has bought UTZ tea and sells it on as non-utz tea, the supply chain actor removes the sold volume from the account of UTZ volume in the Good Inside Portal. 12 2.5 The supply chain actor maintains appropriate records of its total volume purchased of UTZ CERTIFIED and non- UTZ CERTIFIED tea. The supply chain actor keeps records of its total annual volume purchased and handled UTZ CERTIFIED and non-utz CERTIFIED tea. a. Records allow the auditor to trace a given certified output back to the certified inputs. b. Records allow the auditor to determine the conversion rates for the certified outputs from given certified inputs. 3. SEPARATION OF UTZ CERTIFIED AND NON-UTZ CERTIFIED TEA 3.1 The supply chain actor operates a system for assuring that UTZ CERTIFIED tea is not mixed or exchanged with non- UTZ CERTIFIED teas during storage and transport. The supply chain actor operates a system to assure that UTZ CERTIFIED tea is not mixed or exchanged with non-utz CERTIFIED tea during storage and transport. This could for example be done through separation and identification of UTZ CERTIFIED tea. Nº CONTROL POINT GUIDANCE COMMENT 4. RETROACTIVE CLAIMING 4.1 When a shipment is claimed UTZ CERTIFIED at a later stage than the initial contract between producer and first buyer, the producer and first buyer must agree upon a premium. The first buyer is the next immediate actor in the supply chain who purchases from a producer/factory who is a Code of Conduct certificate holder 4.2 In case of retroactive claiming, the supply chain actor must (retroactively) issue a transaction/sales announcement for the purchase in the Good Inside Portal. 5. OUTSOURCING 5.1 In case the certificate holder outsources any activities within the scope of the UTZ CERTIFIED Chain of Custody certification, the following applies: The certificate holder is responsible for compliance of the applicable control points of the subcontractor. The subcontractor is part of the certification of the supply chain actor who is outsourcing the activity. A self- assessment of compliance against the UTZ CERTIFIED control points relevant to the services must be provided. If the subcontracting activities include physical handling of the tea, the CB may decide to include the subcontractor in the physical audit. Please note that The self-assessment can be done by the subcontractor or by the supply chain actor (certificate holder). The self-assessment is done by using the UTZ Chain of Custody checklist. The certificate holder can adapt the UTZ CERTIFIED checklist for the subcontractors with only the control points applicable to the provided services. Subcontractors may be certified to Chain of Custody on their own request. In cases when subcontractors have an own UTZ Chain of Custody certificate, the subcontracted activities do not have to be checked again by the CB; a valid certificate of the subcontractor at the certificate holders office is sufficient to show compliance. 13 subcontractors blending UTZ CERTIFIED tea always must be audited and certified against the Chain of Custody requirements. 5.2 The certificate holder operates a system which is able to show that when outsourcing the activities for the UTZ CERTIFIED tea, upon return, the certificate holder receives the same UTZ CERTIFIED tea. The system can be based on written documents and procedures and/or an automated system. 6. RECORD KEEPING 6.1 All records requested along the UTZ CERTIFIED Chain of Custody are accessible for external inspection and are kept for a minimum of two years. PRE-BLENDING/BULKING OF UTZ CERTIFIED TEA FOR STORAGE AND TRANSPORT 1.1 The supply chain actor operates a system for bag loads to assure that bags of certified tea contain 100% UTZ CERTIFIED tea. 1.2 The supply chain actor operates a system for bulk loads to assure that big bags or containers of tea contain 100% UTZ CERTIFIED tea. The system can be based on written documents and procedures and/or an automated system. It is allowed to blend different kinds of UTZ CERTIFIED tea. Blending with non-certified tea is NOT allowed. The system can be based on written documents and procedures and/or an automated system. It is allowed to blend different kinds of UTZ CERTIFIED tea. Blending with non-certified tea is NOT allowed. 2. SECURE PRODUCT IDENTIFICATION 3.1 The supply chain actor enables visible identification of UTZ CERTIFIED tea. The supply chain actor operates a secure system to attach the UTZ CERTIFIED Good Inside logo (using food quality paint) to (big) bags of UTZ CERTIFIED tea, in a way that it will not become detached during storage, handling or transportation. 3.2 The supply chain actor operates a system to assure for bag loads that only bags containing 100% UTZ CERTIFIED tea will bear the UTZ CERTIFIED Good Inside logo. 3.3 The supply chain actor operates a system to assure for bulk loads that only big bags or containers containing 100% UTZ CERTIFIED tea will bear the UTZ CERTIFIED Good Inside logo. CONFIRMATION OF INPUTS 1.1 The supply chain actor shows that correct confirmations of arrival have been issued for each received UTZ CERTIFIED tea lot. The supply chain actor confirms arrival of each UTZ CERTIFIED tea lot via the UTZ CERTIFIED Good Inside Portal. This procedure also applies for tea that is retroactively claimed UTZ CERTIFIED. 2. PRODUCT FLOW CONTROL OF UTZ CERTIFIED TEA 2.1 The supply chain actor enables visible identification of UTZ CERTIFIED tea. 2.2 The supply chain actor operates a solid system which assures that each lot of finished product (blended tea) to be sold with the UTZ CERTIFIED claim (UTZ CERTIFIED name/logo on its packaging) contains at least the required percentage of UTZ CERTIFIED tea. 3. IDENTIFICATION OF CERTIFIED OUTPUTS 3.1 The supply chain actor maintains appropriate records of the total volume of UTZ CERTIFIED and non-utz CERTIFIED tea that is purchased and blended. The supply chain actor operates a secure system to attach the UTZ CERTIFIED Good Inside logo (using food quality paint) to (big) bags of UTZ CERTIFIED tea, in a way that it will not become detached during storage, handling or transportation. Requirements for the use of the UTZ CERTIFIED Good Inside logo are stated in the Tea & Rooibos Labeling and Communications Policy. The supply chain actor keeps records of its total annual volume purchased UTZ CERTIFIED and non-utz CERTIFIED tea. Records should allow an independent assessor to trace a given certified output back to the certified inputs. 2 Blending with non-certified tea can only take place at this final blending stage and in accordance with the UTZ CERTIFIED Logo Use Requirements on permissible percentages. CONFIRMATION OF INPUTS 1.1 The supply chain actor shows that correct confirmations of arrival have been issued for each received UTZ CERTIFIED tea lot. The supply chain actor confirms arrival of each UTZ CERTIFIED tea lot via the UTZ CERTIFIED Good Inside Portal. This procedure also applies for tea that is retroactively claimed UTZ CERTIFIED. 2. SECURE PRODUCT IDENTIFICATION AND THE USE OF THE UTZ CERTIFIED Good Inside LOGO 2.1 The supply chain actor operates a system that assures that only products complying with the requirements of this standard bear the UTZ CERTIFIED Good Inside name and/or logo. 2.2 The supply chain actor complies with the UTZ CERTIFIED Good Inside Logo Use Requirements. 3. IDENTIFICATION OF CERTIFIED OUTPUTS The supply chain actor maintains appropriate records of the total volume of UTZ CERTIFIED and non-utz CERTIFIED tea that is purchased and packed. On-product use of the licensed UTZ CERTIFIED name and/or logo is only allowed when this product contains the required percentage of UTZ CERTIFIED tea. The organization operates a solid system that assures that packages bearing the UTZ CERTIFIED Good Inside logo always contain the required amount of UTZ CERTIFIED tea. The UTZ CERTIFIED Good Inside logo and any other on-product claim may only be used when in compliance with the UTZ CERTIFIED Logo Use Requirements. The requirements are mentioned in the Tea & Rooibos Labeling and Communications Policy. The organization must show written approval of UTZ CERTIFIED on the use of the logo or any other product claim of UTZ CERTIFIED Good Inside. The auditor does not check if the logo is used correctly, but only checks the approval letter. Exceptions to these requirements may only be made when UTZ CERTIFIED has granted its approval in writing. The supply chain actor keeps records of its total annual volume purchased UTZ CERTIFIED and non-utz CERTIFIED tea. Records should allow an independent assessor to trace a given certified output back to the certified inputs. UTZ CERTIFIED Good Inside 2011 Page 16 of 18

SEPARATION OF UTZ CERTIFIED AND NON-UTZ CERTIFIED TEA 1.1 The supply chain actor operates a system which assures that UTZ CERTIFIED tea is not mixed with non- UTZ CERTIFIED tea in storage and transport. 1.2 The supply chain actor operates a system which assures that lots of UTZ CERTIFIED tea are not mixed with non- UTZ CERTIFIED tea throughout the decaffeinating process. 1.3 The supply chain actor operates a system which assures that UTZ CERTIFIED decaffeinated tea is not mixed with non-utz CERTIFIED tea in storage and transport. 2. IDENTIFICATION OF CERTIFIED OUTPUTS 2.1 The supply chain actor operates a system that allows any UTZ CERTIFIED tea sold to be linked to the specific sales invoice issued by the supply chain actor. This could for example be done through separation and identification of UTZ CERTIFIED tea. This could for example be done through separation and identification of UTZ CERTIFIED tea. CONFIRMATION OF INPUTS 1.1 The supply chain actor operates a system for assuring, verifying, and monitoring whether UTZ CERTIFIED tea that is received from its suppliers, is indeed UTZ CERTIFIED. When an supply chain actor purchases UTZ CERTIFIED tea from its suppliers, the organization operates a system that includes the following requirements: a. Specifying the fact that the purchase relates to UTZ CERTIFIED tea; b. Verifying whether the lot of tea contains at least the required percentage of UTZ CERTIFIED tea. c. Verifying the invoices to confirm its certified status. 2. SEPARATION OF UTZ CERTIFIED AND NON-UTZ CERTIFIED TEA 2.1 The supply chain actor operates a system which assures that UTZ CERTIFIED tea is not mixed with non- UTZ CERTIFIED tea in the extraction process. 2.2 The supply chain actor operates a system which assures that UTZ CERTIFIED tea liquor is not mixed with non-utz CERTIFIED tea liquor in the drying process. Extraction of UTZ CERTIFIED tea (extracting the tea flavor, aroma, and color from the tea) is carried out in complete runs, separated physically (separate extractor cells) or in time from similar operations carried out on non-utz CERTIFIED tea. The lots of tea liquor (outputs of the extraction process) that are intended for use with the UTZ CERTIFIED Good Inside claim, contain at least the required percentage of UTZ CERTIFIED tea. Only lots of tea (inputs for the extraction process) that are composed from at least the required percentage of UTZ CERTIFIED tea can be considered UTZ CERTIFIED inputs.
