2 INTRODUCTION There is so much more to juicers than making the great healthy juice. The benefits to your health and life will be large if you get in the habit of using your juicer in ways I am going to share with you. There are so many applications to your cooking that will make better use of what's growing in your garden. Juicing is good for you because you are making it fresh and the liquid is more alive. It s also good for you as the vitamins contained in your home grown fruit and vegetables are quickly absorbed by the body. Think how much better it is for you to have a fresh vibrant juice in the morning instead of your regular cup of coffee. One gives you optimum nutrients quickly, and one takes them away. I use my juicer to make fruit and vegetable juice, pasta, sorbet, nut butters, muffins, wheatgrass juice and spreads and sauces. But I never knew you could 2
3 do all this when I first got a juicer and am yet to find many people who use it to the full advantage. As long as you have juicer that is good enough you can do all this and more! I have a SAMSON GB-9001 juicer model that I purchased about 6 years ago. It cost me around $380 if I remember correctly but does all these things and is still going strong. As with anything, you get what you pay for and I truely see a quality juicer as an investment. Not only because your health is your greatest investment at any cost, but also in the money saved from juice, sorbet and other food costs. I have no idea what this would amount to if I added it all up. All I know is a juice from the local juice shop is around $6 and some people get them every day. I think my juicer has justified its purchase many times over. As organic gardeners we are perfectly positioned to take advantage of what a juicer offers us. This is the reason I wrote this book as I believe there is much to offer your life (not to mention your health!).we already have the fresh organic 3
4 produce that is ready to go into the juicer, skin and all chemical free! No need for us to even wash it! We will sometimes have excess harvest that we can juice instead of it going to waste. Also, we never have to waste the pulp that comes out of the machine. Have you ever thrown that out? You will never throw it out again! At the very least we can use it in the compost or worm farm. A juicer can help us in becoming self sufficient making more of our own fresh healthy food and visiting the supermarket less. Yes it takes a bit of extra time but we get a superior end result. Since we all have to eat why not eat superior home made food that has REAL taste, yet truly builds our health-not deteriorate it. What I decided I would do is give you less lists of mindless recipes 2 apples, 4 carrots 1 stalk ginger etc BORING! I don t think that is going to inspire you to get into juicing you can go on the net and get hundreds of these. I want you to make up your own favorite combinations and refine them as you go on. You will get many ideas here today 4
5 that you may not have ever found. I tend to always combine 25% fruit juice and the rest vegetables. Oranges, carrot, mango, pineapple, cabbage, beetroot, apple and celery are the ones I use most for strait juicing. There are many variations of all these but these are the ones I come back too. Though at certain times of the year, grape juice, passion fruit sorbet or plum sauce may become a staple as I rush to use the harvest. I am going to give you the practical ways I use my juicer that I have discovered over the years. A juicer is vital to kick start our health. Its super clean eating, its fun, you can be creative, efficient and you will see measurable results in your health and energy. Once you feel this for yourself, my hope is that you will become addicted to juicing. Remember it is important to remove the seeds of fruit before juicing. And that a variety of ingredients is better than just having the same single fruit or vegetable for more than a few days. 5
6 PRACTICAL DAY TO DAY JUICING IDEAS HOW TO GET MORE FROM YOUR JUICER I don t store my juicer away in the pantry or other storage area like most people. I find when people do this it is likely to stay there gathering dust for too long. I keep it on the kitchen bench for day to day use. Juice must be made fresh of course. And once the produce is juiced it is best used as soon as possible. When I get my juicer onto gear though I try and make as much as I need for at least a few days or more. Cleaning it is the downfall and you don t want to be doing that 3 times a day. So I try and fill at least a 2 liter GLASS bottle (avoid plastic) and then use any of 6
7 the pulp within about 12 hours. If I don t use it by then, it can go to the compost Recently when I have been making cold drinks during the summer (mainly orange with vegetable juice blended with ice) I get a small thermos and fill that to take with me where ever I go. That way I have no excuse for buying any fast and nasty drinks when out. I suggest you do the same thing as a small thermos is less than $10 and you will get good use from it. Of course in season produce will give you the best results every time so as a general rule I will have more hardy citrus and vegetable blends during the winter and more light fruity drinks during the summer. Summer is so hot here in Queensland that the juicer has become a life saver! Making sorbet from 100% fresh organic fruit is a staple desert as long as your juicer will do it it s so quick and easy. During the hot periods, I make up batches and it stores perfectly in the freezer in glass jars. 7
8 I always add some lemon juice to my batches now. It s not really for the taste, rather so the juice is preserved longer and I find this works well. Lemons being a good natural preserver the same reason you apply it to stop avocado turning brown. RECIPE IDEAS FROZEN SORBET (QUICK) Pick your favorite fruit such as pineapple or mango. Cut the fruit up into cubes or strips (whatever size fits in your juicer) and place them in the freezer until frozen. I lay them on aluminum foil so they are not touching. Feed them through the juicer and out comes beautiful smooth sorbet. Easy! FROZEN SORBET (LONGER) - Make your juice as per usual. When you have the juice, pour it into a long baking type glass tray and place in 8
9 the freezer. After about 35 minutes when it starts to freeze, pull it out and whisk it up with a fork. Repeat this process 3 or 4 times and your sorbet will be done. Yes it takes longer but there are benefits for this method such as adding herbs, sugar syrup or fruit combinations before you freeze. GREEN DRINKS You have probably heard how green drinks are alkalizing and so good for your inner health. By having your own wheatgrass growing you can chop the grass when you need it and juice it strait away. I don t always have it growing so I use spirulina powder instead. The great thing about putting that into juice is that you don t taste it like you do when mixing it with water. MUFFINS After juicer carrots or apples, take the pulp aside and use it in your muffin mix. Same for any citrus, berries or anything really. The pulp is still good food and should not be wasted. It makes your muffins more nutritious. If you don t like muffins, then 9
10 consider adding the pulp to your breads, cakes or simple mix it with honey and nuts to make health snap bars. I use vegetable pulp to thicken soups or make dips. SOUPS Juice some of the veggies first and then add the juice to make a unique stock. This works great with carrots and beetroot. I like to do this with herbs too but instead of getting liquid- it makes a flavor intensive pulp that is great for soup. GINGER MORNING ZING 1 stick of ginger (3cm), 1 apple, 2 carrots and 2 stalks of celery. Juice them together and you have your morning zing drink. SUMMER ICE For any of your normal juice recipe s instead of just drinking the juice, pour the juice in a blender with ice and drink it as an ice crush. Alternatively, get your juice and pour it into ice molds and freeze. Then when you want a cold ice drink, simply blend the ice cubes. A great little standbye. 10
11 HERB BUTTERS Juice the herbs and keep the pulp. It works so well when combined with butter to make herb butter. Another great advantage is making light work of pesto. Juice the basil bunch first and use the pulped basil. You can make exciting types of pesto using this method and they are great stirred through fresh pasta. SPREADS AND DIPS 2 ways I use my juicer to make spreads. One is by simply using the juice and combining that with other mashed vegetables/cream/yoghurt. Think pureed roasted sweet potato with a little carrot juice and some crushed coriander seed and cinnamon. The other way is to juice the vegetable, then combine the juice with some of the pulp until you get the desired consistency. Great for beetroot or capsicums. SAUCES- From tomato sauce to apple sauce the basic method is to heat the juice in a pot add all your ingredients and then simmer (reduce) until you have a sauce consistency. 11
12 COPY THE SHOPS in the last few years here, we have seen an explosion of juice shops and juice bars. For a while my brother and I joined in the craze until we decided we would give it a go ourselves. Our favorite drink at the time was the Mixed Berry Bang! and we made it at home like this apple juice, frozen yoghurt, ice cubes and frozen mixed berries (blueberries and raspberries). We just blended this up and that was it. If you have fresh berries then all the better, but frozen work too. Normal yoghurt in place of frozen yoghurt would work. SHAKES Well how many possible shakes could you make? Endless possibilities. But here is my approach Don t go for so much milk. Some yoghurt is better. Add a cube or two of ice and 2 tablespoons of crushed nuts. Also pure honey or vanilla extract and some nutmeg. I tend to always come back to either apple juice or banana pulp as my base. Berries are another great choice. 12
13 SOUP Think carrot, celery and tomato juice for adding into your soup base. Not only the juice, but also the pulp thickens up the soup really well. One thing after ready this book is that you will never throw out the pulp as waste again! SALAD DRESSING - Interesting salad to try - One day a friend made for me an interesting salad. It was grated carrot, pine nuts and sultanas dressed with orange juice, salt and herb dressing. It is amazing how well it worked! MENS HEALTH 1 beetroot, 1 carrot, 1 stick celery, 1 apple, 1cm slice ginger, 3 sprigs of parsley and 1 tablespoon of LSA mix or other crushed nuts. Simply juice all the produce and add in the crushed nuts at the end. A great health tonic. ACTIVE WOMAN 1 ripe banana, ½ cup fresh pineapple juice, ½ cup coconut milk, ½ cup plain yoghurt, 1tsp honey, 2 tbsp wheat germ. Blend this mixture up and pour over ice cubes. 13
14 You could also add the LSA mixture or other crushed nuts. ENERGISE! 1 cup spinach leaves, 1 green apple, 1 pear. Juice all these and then mix in 1 teaspoon of spirulina powder or your own fresh wheatgrass juice would be even better. FOR YOUR KIDS One thing I know is that they sure love sorbet. If you really want to hide how healthy the sorbet is, serve it in waffle ice cream cones just like its ice cream. As always, let them pick the fruit and veggies they are going to juice. If they have grown it or harvested it they become involved and WANT to eat it. Stick to interesting fruit juice mixes with a few veggies thrown in. They will acquire their natural sweet taste in place of the artificial sweet taste in no time at all. It takes us adults a little longer to get that back! But it will happen. Kids will also love the new kind of shakes to make. Try passion fruit, banana or peaches blended with milk (calcium source) and a little vanilla extract. 14
