wine Like many of the world s great wines, our wine list is created to reflect a sense of place. Cavallo Point sits at the gateway to California s venerable North Coast, home to some of the world s most renowned wine-growing regions. Our list celebrates the history of wine in California, and presents a vision of where it is going. From the state s legendary wineries that laid the foundation, and the cult wines driving the mystique, to the small production, artisanal producers who are pushing the envelope of quality, we strive to tell the true story of wine in California. While we are passionate about the wines made here by our friends and neighbors, we would be remiss to ignore the incredible wines produced around the globe. The centuries old wine-making traditions brought here from the old-world have been built upon to become the California wine culture that we enjoy today. We pay homage to those traditions through our extensive collection of the finest wines produced throughout the world. The Cavallo Point wine list is comprised of over 2,200 selections from 25 countries, with vintages dating back to 1922. Our Sommeliers are always happy to offer their guidance and recommendations. If you have a special bottle from your cellar you would like to enjoy while dining with us, our corkage fee is $25.00 per 750ml, and we will gladly waive one corkage fee for each equivalent bottle purchased from our list. We thank you for coming to Cavallo Point, and are happy you can spend some time with us at this very special place. Whether you are here for a few hours or a few days, we hope to make your time with us memorable and enjoyable. Jamie Harding, Wine Director Monica Zanotti, Lead Sommelier Since 2009

american white CHARDONNAY From dozens of admired estates to small boutiques, California produces thousands of versions of one of the world s most popular and versatile grape varietals. From crisp, lively and lip-smacking to rich, powerful, structured and creamy, the fruit profiles can range from apple and pear to tropical fruits and from unoaked to toasty. NAPA VALLEY Chardonnays from Napa Valley are ripe, firm and full-bodied, with notes of green apple, pear, and citrus. Some producers use varying amounts of oak to add vanilla and toasty notes. Some try to preserve acidity levels by fermenting in stainless steel, while others use malolactic fermentation to add creaminess. 5587 4899 4530 5707 2027 Chappellet 2013 75. italian red VENETO Located in northeast Italy between Verona and the Adriatic. Native varietals are Corvina, Rondinella and Molinara. The Amarone wines are made from native grapes that have been harvested, dried, pressed, fermented, and then aged in wood casks. It can take hours for the wines to open but they are worth the time. Full-bodied, very ripe and raisiny with varying notes of licorice, tobacco, chocolate and fig. The Valpolicella wines are made from the same stock as Amarone in a Ripasso style by reinforcing the thinner grapes with unpressed and dried grape skins from the Amarone resulting in lower alcohol, fine tannins and fruity fragrance. 1595 1584 1585 1586 2152 1587 2153 1599 1600 1589 1590 2122 1596 1598 1592 Allegrini - Corvina Veronese, La Poja 2003 95. italian red PIEDMONT Some of the most long-lived red wines in Italy are produced here in the hills of the Langhe. The villages of Barolo and Barbaresco have established a prestigious collection of single vineyards comparable to the Cru system in Burgundy. BARBARESCO While often compared to Barolo, these wines are generally softer and more elegant than their neighbor, offering a spicy aromatic with enough acidity and tannin to complement a wide variety of cuisine. Dry, rich, powerful wines, with aromas of spice, pepper and black cherry. 1608 1609 1610 1611 1603 1613 1615 2124 1617 1618 1623 1620 1621 1629 2125 1626 1627 2126 1630 Ceretto - Bricco Asili 1994 180. italian red TUSCANY BOLGHERI SASSICAIA The only D.O.C. in Italy to consist entirely of one estate, Tenuta San Guido's "Sassicaia" is the only wine produced here. Made up of 85% Cabernet Sauvignon and 15% Cabernet Franc, it is one of the first, and certainly most famous, of the "Super Tuscan" wines. 4195 1764 Tenuta San Guido - Sassicaia 1996 500. Tenuta San Guido - Sassicaia 2005 455. SUPER TUSCAN Super Tuscans are red blends that stray from the strict laws governing the wines of Tuscany. The native Sangiovese grape is often blended with French varietals such as Cabernet Sauvignon, Merlot, Cabernet Franc and Syrah. Some bottle 100% varietal wines, a practice forbidden by many DOCs in Tuscany. The result of these experiments has been the creation of some of Italy s most sought after wines. 1730 5536 5535 1733 1734 1735 1736 1737 1738 1742 2323 1741 1743 3811 1744 1745 1746 1747 4274 1750 1751 Antinori - Guado al Tasso 1997 240. fortified wine PORT Ports are named after the city of Oporto in Portugal, where they have made these dense, sweet wines for more than 300 years. It is common for blends to contain a dozen or more varietals of the more than 80 that are grown in Portugal. The wines are then fortified with brandy to stop fermentation, and boosting alcohol levels to 18-20%. VINTAGE Vintage ports come from a single year and are aged for two years in wood before maturing in bottle. These are top quality ports, but produced only three to four times per decade. 2159 2160 2161 2162 4378 4377 2164 2165 2166 4380 4379 2168 4381 2169 4395 4409 2170 2171 2172 Cockburn 1983 275. fortified wine MADEIRA Owned by Portugal, Madiera is a small, volcanic island off the coast of Morocco that produces, perhaps, the world s most resilient wine. There are four basic styles of Madeira: Sercial, the driest, is noted for almond aromas, nerve, and a searing finish. Verdelho is medium-dry, smoky, with a tang of acidity. Bual is medium-rich with higher sugar levels and balanced acidity. Malmsey is the sweetest Madeira with notes of caramel, toffee and vanilla, and gets richer with age. 2180 2182 2183 2604 2184 2188 2186 2185 Abudurham - Sercial, Reserva 1940 600. Sherry is produced by adding grape spirits to finished wine, then continuously blending together several different vintages stored in a series of casks, called a solera. Up to 33% of each cask can be withdrawn in any year and re-filled from recent vintages to ensure consistency of the finished wine. Oxidation plays an important role in the flavors of Sherry. 2178 2179 Equipo Navasos - Fino, No 15, Jerez 2008 75. Equipo Navasos - Palo Cortado, No 17, Jerez demi MV 150. 106
