Sugar Cookies 1 heaping cup lard 1 1/3 cups sugar 2 eggs - well beaten 1 cup canned milk (evaporated) or ½ and ½ 5 cups flour 4 teaspoons baking powder ¼ teaspoon salt 2 teaspoons vanilla Mix flour, baking powder and salt together. Cream lard and sugar well. Add eggs, milk and vanilla. Mix this well and add flour gradually until you have a good dough. May need more flour. Flour bread board and roll a small amount of dough real thin. Cut with cookie cutter and bake until brown in hot oven. Watch carefully. They burn easily. Grandma never had an electric stove, she always had an old fashioned stove that burned wood or coal and was still using this until she died about 1971. Ice Box Cookies 1 cup sugar 1 cup lard 3 eggs 1 cup brown sugar 1 cup butter 6 cups flour ¼ cup hot water ¼ teaspoon each of salt, cinnamon & nutmeg Dissolve soda in hot water. Cream sugar and fats. Beat eggs and add to sugar. Add soda water and 1 cup chopped nuts. Add flour with salt and spices. Mix well. Divide in 3 parts and shape in rolls. Cover with wax paper and let stand in fridge overnight. Cut in about ¼ inch thickness and bake until brown in hot oven. Sweet Soup ½ cup large Tapioca (not instant) soaked overnight 1½ cups prunes 1½ cups raisins 1 ½ cups sugar 8 cups water ½ teaspoon cinnamon (sticks are better) juice of one lemon dash of salt Put prunes, raisins, sugar, cinnamon and water on to boil. When boiling, add soaked Tapioca and boil until it is clear and prunes are tender. Stir often or it will stick to bottom of kettle. Add juice or lemon and salt a few minutes before it is done. You may want to add more lemon juice, sugar and cinnamon to taste. Add more water if too thick. It is better after standing for several hours or even days. Adele Cox Greco, daughter of Hannah, says that this soup is best warm. Danish Aebleskievers Service for 2 Persons 1 quart milk 1 cup milk ½ cup shortening (no lard, butter or margarine) c cup shortening 2 Tablespoons sugar 1 teaspoon sugar 1 teaspoon salt 4 eggs 1 egg 3 Tablespoons yeast 1 Tablespoon yeast 1 heaping teaspoon Cardamom ½ teaspoon cardamom 7 cups flour 1¾ cups flour Melt shortening, warm milk to luke warm. Add sugar, spices and yeast. Add flour. Do not stir too much, just mix. Let raise double or more. Bake in greased Aebleskiever pan. Be sure to use cardamom for flavor. Set the gas burner on low simmer. When hot, grease cups, pour dough. Adele Cox Greco says to use Aebleskiever pan on stove top and when underside of Aebleskievers are done, turn over and cook other side. Nut & Raisin Cake 3 cups flour 1½ teaspoons soda 1½ cups hot water 7+ Tablespoons butter 1¼ cups sugar 3 eggs 1 cup raisins 1 cup nuts Dissolve soda in hot water and let cool. Cream butter and sugar. Add eggs, vanilla, water, flour, salt, nuts and raisins. Bake in 350 degree oven for about 30 minutes. Make butter frosting adding a ground nut and raisin mixture. Apple Sauce Cake 2½ cups apple sauce - unsweetened ½ cup butter 2 cups sugar 4 teaspoons soda 1 teaspoon nutmeg 1 teaspoon salt 1 cup nuts 2 eggs (may omit) ½ cup shortening 4 cups flour 1 teaspoon cinnamon 1 teaspoon cloves lemon extract 1 lb. raisins Glaze for cake ½ cup corn syrup ¼ cup water Bring water & corn syrup to boil. Cool to luke warm. Pour over cool cake. Decorate with fruits & nuts if desired. Heat apple sauce. Beat in fats and sugar. Let cool. Beat eggs and add to other ingredients. Add flour and these ingredients to the apple sauce. Add candied fruits if desired. Bake at 275 for 2 hours. Cool before removing from pans. Page 3 of 5
Coconut Cookies 1 cup shortening 2 cups brown sugar 2 eggs ¼ cup hot water 1 cup coconut 2 teaspoons vanilla 4½ cups flour 1½ teaspoons baking powder Cream shortening. Add eggs and sugar. Beat well after each addition. Mix soda in hot water and add to batter. Add coconut. Sift flour, salt and baking powder together. Fold into batter. Drop from spoon and form into long cookies (2 inches long & ¾ inch wide). Mark with tongs of fork and bake at 375 degrees for 12-15 minutes. Pineapple Cookies 1 cup brown sugar 1 cup white sugar 1 cup shortening 1 cup crushed pineapple 2 eggs 4 cups sifted flour (or more) 2 teaspoons baking powder 1 cup chopped nuts Mix all ingredients together. Drop on greased cookie sheet. Bake at 375 degrees for 12-15 minutes. Page 4 of 5
Banana Towers 2 Tablespoons butter 2 Tablespoons flour 2 cups rich milk (canned milk is best) ½ cup sugar graham crackers bananas whipped topping (optional) maraschino cherries (optional) Melt butter in sauce pan. Blend flour. Stir in milk and sugar. Cook over hot water for 14 minutes. When cool add vanilla. Put a square graham cracker on dish, cover with banana slices, then with cool sauce. Put another cracker on top with more banana slices and sauce - three high if desired. May be topped with whipped topping and a maraschino cherry.
