Jones & Bartlett, Sudbury, MA. (2 nd edition) ISBN: Bulletin Description: Principles and practices of teaching individuals and groups to translate nutrition knowledge into action. Emphasis on research in and evaluation of nutrition education. Prerequisite: Undergraduate nutrition. Course Goals and Objectives: After successful completion of this course, students will be able to: 1. Apply theories (learning/educational theories, health behavior theory, health promotion theory, and communication theory) to decisions made in curriculum design, including teaching style and techniques. 2. Identify social, environmental, and psychological factors influencing health behavior in terms of appropriate theories used to change eating behavior. 3. Interpret current research. 4. Interpret and incorporate new scientific knowledge into program design. 5. Assess audience learning needs considering age, culture, needs/wants, readiness, resources, literacy level, and previous knowledge, using a variety of resources and data collection methods including interviewing techniques. 6. Select content and teaching strategies to match nutrition education goals and audience needs. Recognize and differentiate between teaching techniques and their strengths and weaknesses for specific purposes. 7. Write measurable goals and instructional objectives including cognitive, affective, and psychomotor (knowledge, attitude, and skill) domains. 8. Comprehend and apply the principles of behavioral change models, theories, and practices throughout the process of needs assessment, program development, implementation, and evaluation to improve the health of populations. (MPH) Policies: Assignments must be turned in electronically by 11:59 PM Central Time on the day due. Late assignments will only be accepted for 1 week past due. An automatic loss of 10% of the available points will occur for the first 24 hours late. After that, a loss of 20% of the available points will occur. Active participation in the discussion board is an indicator of attendance. Therefore, students are expected to check and respond to each question posted on the discussion board. In order to do this adequately students must post a minimum of 3 different times per question with a response to the original question and interaction with 2 other students. Student responses will be evaluated on the depth of thought and interactive

2 thinking. The moderator is expected to check the discussion board every day in order to facilitate discussion. (Note this is a minimum response level, i.e. 6 points.) I will check and the discussion board at least 2 times per working day. Assignments must be typed, using Word (not Works). Please use font, New Times Roman, Century, or New Schoolbook. Spacing may be similar to this syllabus. Disabilities: Any students with special needs who need special accommodations in this course are invited to share these concerns or requests with the instructor as soon as possible. Academic Honesty: All The academic community is operated on the basis of honesty, integrity and fair play. NDSU Policy, Section 355: Code of academic responsibility and conduct is found at This applies to cases in which cheating plagiarism or other academic misconduct have occurred in an instructional context. Students found guilty of academic misconduct are subject to penalties, up to and possibly including suspension and/or expulsion. Informational resources about academic honesty for students and instructional staff members can be found at Grading and Evaluation Procedures: Student performance will be evaluated using a variety of methods. Because of the nature of the online environment and lack of non-verbal cues multiple evaluations will be made using messages posted in module s discussion, your skills as moderator of discussion, 8 annotated bibliographies, and a large community project. Moderator and Class Participation: In addition to the text, readings, each student will serve as moderator for 2 questions completed in 8 days (days off for holidays are accounted for). As moderator, the student will create 1 question in collaboration with another student who will also be moderator for that week. Since the class will be divided into 2 groups due to size, the discussion board that a student moderates will be roughly ½ of the class. Each student participant must respond to each question posed by the moderators at least once during the 8 day period. A minimum of 6 additional responses to comments made by peers or the moderator are required during each module. Each moderator should summarize the results of the discussion for that week s forum and post them as a word attachment online in a new thread called summary of whatever your topic was. Summaries are due by Wednesday at 5 pm. Postings after 12 noon on Tuesday do not have to be included in any summary by the moderator. Moderators do not have to respond to the questions they pose, nor do they earn points for the discussion board module that they moderate. Questions for the each module are due by Sunday at noon so that I can post them on the discussion board by Tuesday 8 AM. NOTE:

3 Annotated Bibliography The annotated bibliography consists of articles from peerreviewed journals. You will need to turn 1 AB on each of the due dates. If appropriate, they may be shared as part of posts on the discussion board. Due Dates: Students may turn in the annotated bibliography at any time; however, actual due day is always on Tuesday. Mark your calendars for Feb 4, Feb 18, March 11 and April 1 The project: The PROJECT includes an assessment tool to evaluate current dietary practices of a target group and possible nutritional problems, developing a program outline involving several health promotion components, a nutrition lesson that targets a cause of the nutritional problem, and a plan for the evaluation of that program. This assignment will be posted at least by spring break. Due Date: Friday May 9, 2014 midnight. Review of evaluation points: Participation in discussion board 130 points (10 points per session) 14 weeks minus 1 week you are moderator Monitor of discussion board 100 points (30 for question, 30 for summary, 30 to maintain discussion & 10 for timeliness) Annotated bibliography 80 points (20 points each) The PROJECT 150 points Total 460 points Based on the number of earned points, an A is =< 90%, B is =<80-89% etc.
