1 JOB DESCRIPTION DESIGNATION: RESPONSIBLE TO: RESPONSIBLE FOR: Café/Bar & Catering Manager Head of Visitor Services Deputy Manager, Head Chef, Café/Bar and Kitchen teams DATE: August/September 2015 Purpose of Job To work with the Head of Visitor Services to maximise business potential for Arnolfini Café/Bar by providing a high quality customer experience, effective staff leadership and innovative product development. Optimise revenue generation, achieve targets and deliver cost-effective services, while maintaining an excellent quality of customer service for all users. Lead, develop and motivate the Café/Bar Team, playing a key role in ensuring an efficient, effective and welcoming experience for visitors. Develop and implement the strategic business plan for the Café/Bar that increases growth and commercial profitability. Duties and Responsibilities Manage the day-to-day operation of Arnolfini Café/Bar and ensure that Arnolfini s core values are applied to the catering operation. Lead, develop, and motivate the Café/Bar Team to deliver sales targets by consistently exceeding visitor expectations with high standards of product, service, and overall visitor experience. Working with the Head of Visitor Services, take the lead on the development and implementation of a strategic business plan for the Café/Bar that increases growth and commercial profitability. Develop the Café/Bar in line with Arnolfini s key audiences and in conjunction with the Audience Development Plan. Work closely with the Hires and Events Team to develop and deliver an excellent quality catering experience for Arnolfini venue-hire clients. Work in conjunction with Arnolfini colleagues to produce high quality internal events, such as public previews, with an emphasis on an excellent overall visitor experience. Work with the Head Chef to develop an innovative and inspiring menu, using local produce and ingredients where possible. Work with the Marketing and Communications Team to produce an effective marketing strategy for Café/Bar and increase footfall, while also working with the Bookshop

2 Manager and Visitor Services Manager to cross-promote and drive footfall across all areas of the organisation. Develop content for, and respond to, Café/Bar social media in line with the digital strategy. Develop and Maintain cost controls and purchasing procedures to minimise costs and maximise revenue. Forecast, monitor, and report on key financial performance indicators. Maintain standards as required by Healthy & Safety/Food Hygiene legislation, company practice, guidelines and standards. Ensure that all operations, including outdoor events, adhere to relevant legislation and licensing conditions including, but not limited to, Health & Safety Regulations, Risk Assessments, Public Entertainment Licence and the Disability Discrimination Act. Report any maintenance/safety defects and property damage to the Operations Assistants and Buildings Manager immediately. Take responsibility as a key holder and alarm code holder for Café/Bar, ensuring smooth and safe daily operations and security procedures are maintained. Accountable for the safe management of cash handling and float procedures, as well as the operation and maintenance of the EPOS system, including service contracts, databases, back-ups, and upgrading as required. Use EPOS system to handle and interpret sales statistics, produce sales projections, and present reports on sales activity to the Head of Visitor Services. Manage monthly stock-takes and review results and variances, meet requirements for month-end procedures, and understand the profit and loss reports. Creatively investigate and develop ideas and opportunities independently and in conjunction with Arnolfini partners, commercial suppliers, corporate sponsors, Arnolfini programme, and Arnolfini Hires and Events department. To be fully conversant with all Arnolfini policies including Equal Opportunities and Health & Safety, and ensure that all policies are adhered to at all times by following established working procedures and guidance. To carry out any further duties that may be reasonably required. Contributing to the development of a digital culture within the organisation.

3 Person Specification Essential Minimum of three years previous experience in a bar/catering environment. Proven experience of leading, managing, and developing cross-functional catering teams. Proven delivery of excellent customer experience/service delivery within a café/bar or restaurant environment. Able to act on, and resolve, customer issues. Personal Licence and/ or SIA Licence. Proven experience of managing budgets and meeting financial targets. An in-depth knowledge of the catering industry and current trends. Excellent interpersonal skills and the ability to communicate effectively at different levels with a wide range of people. A proven ability to multi-task, prioritise and deliver a high quality of work in a pressured environment. Experience of sourcing new product ranges, and developing a full Café bar product offer. Experience of stock control and stock management. A customer focused attitude, providing the best experience possible for the visitor, with a good understanding of visitor behaviour and how it can be influenced both on and offline. Experience of negotiating with suppliers to achieve best value. Extensive knowledge of sales software and EPOS systems. A passion for food and drink. Proactive attitude; able to spot issues ahead of time and propose appropriate solutions. Creativity and flair. Dedicated and flexible can do approach to working; a team player. Excellent written, verbal and IT communication skills, in particular with excel. Desirable Understanding of the arts and cultural sector and/or contemporary arts Experience of working in the cultural/museums sector Experience of Social Media Experience of working with a website CMS Understanding of current trends and discussions in arts and design Experience/understanding of accessibility issues Previous experience of staff management, including recruitment and appraisal systems.

4 About Arnolfini Arnolfini is one of Europe s leading centres for the contemporary arts, presenting innovative, experimental work in the visual arts, performance, dance, film, music and events, accompanied by a programme of learning and participation activities. Five exhibition spaces, a theatre/cinema auditorium, Reading Room and Light/Dark Studios are housed in the Grade II listed, fully accessible building. Housed in a 19 th century converted warehouse at the heart of Bristol s historic Harbourside, it also contains one of the country s best arts bookshops as well as a Café Bar serving the best in local and seasonal produce. With the support of its public stakeholders, Arnolfini is going through an exciting period of renewal. The new Director will lead the organisation through the completion of the programme of managed change and into a stable future of international artistic ambition which is firmly rooted at the heart of Bristol s cultural offer. Arnolfini s mission is to create the conditions for artistic experimentation and audience engagement across the contemporary arts. It provides Bristol and the West of England with a centre for the contemporary arts of international significance. Arnolfini is managed through a limited company with charitable status and a wholly owned trading company. It is governed by a board of Trustees, who are also directors of the company. It is in receipt of stakeholder funding from Arts Council England (as part of the National Portfolio of regularly funded organisations) and Bristol City Council. The organisation has recently reviewed its programme of activity and has ambitious plans to expand its cultural programmes and commercial activities. The post is offered at 24,000 per annum with additional commercial incentive for exceeding targets. Hours will be 40 hours per week, worked across a 7 day period. Flexibility over days and hours worked will be required to cover the demands of the operation. Annual leave entitlement will be 24 days (plus 8 bank holidays) pro rata per annum. You will need to provide evidence that you have the necessary permission to work in the UK.
