5 GENERAL GUIDLINES Here are some guidelines on what to do and not do with Nature s Stevia. Do not use our products with: direct heat microwave ovens metal water containers You can cook with stevia. Just remove from stove top and then add it. Also, you can bake with it as long as the temperature is at 350 degrees or under. Most importantly, be creative and enjoy! If you have a favorite receipe that you would like to share with us, just it to service@naturesstevia.com. We may publish it (with your permission) in future editions of this ebook! 1
6 BEVERAGES COFFEE Coffee Start with one drop of any Stevia flavor or plain or combination of flavors. For example, if you want sweet coffee with a hint of hazelnut, add 1 drop of Hazelnut Stevia and 7 drops of Plain Unflavored. Be creative and enjoy. Note: Always use purified, distilled or fresh spring water for the best tasting coffee. Iced Coffee Brew a pot of coffee and chill. In a glass add 8 oz coffee, 4 oz. milk, drops of Natures Stevia (any flavor or mix flavors) add ice. Yum! Chocolate Coffee (Mocha) Add 2 teaspoons of organic cacao and 10 drops of Plain Unflavored stevia in coffee cup. Fill with coffee and cream. Add an additional 4-8 drops of Plain Unflavored if needed. For a twist, add any other stevia flavor. Be creative and enjoy. 2
7 Espresso Without an espresso machine. Makes two 3oz. espressos. 1. In your coffee maker add 1 cup water and 3-4 tablespoons of Arabica coffee or your own fine ground coffee. Do not brew yet. (I like 4 tablespoons of coffee) 2. Warm your cup(s) in a microwave or fill with hot water from your sink to warm them. 3. If using milk. Put the milk in a bottle and shake until it is frothed. Pour milk into a small pan and warm it on the stove. 4. Start coffee maker 5. Next add Stevia to the warm coffee cup. 1-8 drops (I like 3 oz. espresso and 6 drops of Plain Stevia and 1 oz. of milk) 6. As soon as the coffee is done brewing mix and drink. (This part is key) The longer it sits after brewing the more bitter it will be) As you can see it is nice to have an espresso machine. :-) Lattes Lattes require two parts milk to one part espresso. (Most people get this confused and add equal parts of both) Cappuccinos Cappuccinos contain equal amounts of each according to the Coffee Brewers. All of our Stevia Flavors for Coffee work well. Start with 4-8 drops. Don t be afraid to mix the flavors to create your own coffee drink. 3
8 Tea TEAS Black, Green or White Tea: Everyone likes different strengths of tea. But these rules everyone should follow. Brewing time for Black Tea is 5 minutes. Water temperature Brewing time for Green and White Tea is 3 minutes. Water temperature Note: Brewing Tea longer than these set times will not increase the strength of your tea. It will only impart a bitter off taste to your tea. Purified, Fresh Spring or Distilled water taste the best. Well water and city water will impart an off taste to your tea. Iced Tea Brew 5 tea bags in 2 qts. of Purified Water for 5 minutes. Remove tea bags and place them in a bowl. Press the tea bags against the side of the bowl with a large spoon to extract all the tea. Cool tea in glass jar(s) in the refrigerator. For a 12 oz. glass of tea, start with about 6 drops of Plain Stevia. (I like 12 drops of Plain Stevia with 6 drops of Peach Stevia) Creativity is the key! Chai Latte Brew a pot of double strength chai tea and chill. In a glass add 8 oz. of double strength chai tea, drops of Natures Stevia Plain unflavored stevia, 4 oz. of milk and ice...yum! 4
9 WATER Flavored Water Flavored water is expensive! Make your own for just pennies. I like adding 20 drops of the liquid stevia soda flavors to a 16.9 oz water bottle. And for the fruit flavors drops. Only use glass or plastic. Metal water bottles should not be used with our products. Always use purified water. Remember, if your water taste bad then the end product will taste bad. Cleansing Caramel Apple Cider 1 quart Purified Water Drops of Caramel Stevia 1 tablespoon Organic Apple Cider Vinegar Mix in a quart Jar Option: In a quart jar add 1/4 teaspoon (35 drops) of Caramel Stevia and 2 tablespoons Apple Cider Vinegar top off with water. I like 40 drops. When measuring the stevia, use the dropper to fill the measuring spoon to avoid gumming up the threads on the stevia bottle. Cleansing Lemon Water 2 tablespoons Fresh Lemon Juice (about 1 lemon) Drops of Plain Stevia Option: Add 1-2 drops of Strawberry Stevia for a twist. Note: The quality, sweetness and how ripe lemons are can vary. Thus the amount of stevia will vary. 5
10 Soda MISCELLANEOUS For Soda Machines Just add 2 drops of stevia per 1 oz. of carbonated water. Taste and adjust as needed. Only purified or distilled water should be used. Hot Chocolate Put 10 drops of plain unflavored stevia and 2 teaspoons of organic unsweetened baking cacao into an 8 oz. cup. Stir in warm milk. Yum! Remember, cheap baking cacao will make cheap tasting hot chocolate. Add a drop or two of one of our other flavors to give your hot chocolate a different spin. Optional add a teaspoon of virgin coconut oil. Fresh Squeezed Lemonade 1/4-1/3 cup Fresh Lemon Juice 1/2 teaspoon (70 Drops) of Plain Unflavored Stevia When measuring the stevia, use the dropper to fill the measuring spoon to avoid gumming up the threads on the stevia bottle. Option: Add 1-5 drops of Strawberry Stevia for a twist. Note: The quality, sweetness and how ripe lemons are can vary. Thus the amount of stevia will vary. 6
11 DESSERTS Apple Crisp (Gluten, Dairy and Egg free) Filling 8-10 cups diced apples. Dice small with the skin on. 3 tablespoons Arrow Root 3/4 cups Purified Water 10 drops of Caramel Stevia (gives it a little brown sugar taste) 1/4 teaspoon (35 drops) of Plain Unflavored Stevia (this can vary a bit depending on the sweetness of the apples you use) 1/2 teaspoon Cinnamon Pinch of salt When measuring the stevia, use the dropper to fill the measuring spoon to avoid gumming up the threads on the stevia bottle. In a bowl add 1/4 cup of water, 10 drops Caramel Stevia, 1/4 teaspoon of Plain Stevia and 3 tablespoons arrow root, mix and set aside. Next, in a pot add apples, salt, cinnamon and 1/2 cup water. Cook on medium low heat for about minutes. It should be bubbling at the end. Remove from heat and add the water, stevia, arrow root mix. Pour slowly and mix well. Crust: For a 7x11 glass pan. (Gluten, Dairy and Egg free) 1/2 cup Pamela s gluten free bread mix 1/4 cup Coconut flour 1/2 teaspoon Baking Powder 1/4 cup Expeller pressed coconut oil. (This oil does not taste like coconut) 1/4 cup Purified Water 15 drops of French Vanilla Stevia or 15 drops of Plain unflavored stevia and a 1/2 teaspoon of vanilla extract continued on next page... 7
12 Apple Crisp (Gluten, Dairy and Egg free) continued... In a bowl add the bread mix, baking powder, coconut flour and mix well. In a 1/4 cup add the stevia and or the vanilla and stevia and fill with water then add to the mix. Add the coconut oil and mix. Place the mix into a well greased glass pan. (Use coconut oil) Spread the mix evenly and press the mix down. Bake in a pre heated oven at 350 for minutes. Remove and add the filling. Bake again at 350 for minutes. Let cool to set up and serve. Store in refrigerator. Optional Topping/Crust (Gluten, Dairy and Egg Free) 4 tablespoons Pamela s gluten free bread mix 2 tablespoons Coconut flour 2 tablespoons Expeller pressed coconut oil. (This oil does not taste like coconut) 1 1/2 tablespoons Purified Water 15 drops of Plain unflavored stevia and 5 drops of Caramel Stevia In a bowl add the bread mix, coconut flour and mix well. In a separate bowl mix the water and stevia and then add to the flour mix. Add the coconut oil and mix all the ingredients. It should resemble a crumb like texture. Sprinkle the mix on top of the filling before baking at 350 for I like to use the broiler option for the last 5 minutes to lightly brown the top crust. Caution: Do not over do this part or the crust will have an off taste. Let cool to set up and serve. Store in refrigerator. 8
13 Pumpkin Pie (Gluten Free)* *Special instructions for egg and dairy free pie filling on next page! Crust For a 7x11 Glass Pan. (Gluten, Dairy and Egg free) 1/2 cup Pamela s Gluten Free Bread Mix 1/4 cup Coconut Flour 1/2 teaspoon Baking Powder (Optional) 1/4 cup Expeller pressed coconut oil. (This oil does not taste like coconut) 1/4 cup Purified Water 15 drops of French Vanilla Stevia or 15 drops of Plain unflavored stevia and a 1/2 teaspoon of Vanilla Extract Filling 1 15 oz. can of pumpkin 2 eggs oz. Can of Evaporated Milk or (Whole milk, 10 drops of Caramel Stevia and 1 tablespoon arrowroot) 60 drops of Plain/Unflavored Stevia or 1/2 teaspoon (70 drops) to make it easy. 1/2 t. Vanilla Extract (optional) 1 teaspoon Cinnamon 1/2 teaspoon Ginger 1/4 teaspoon Cloves 1/2 teaspoon Salt 2 tablespoons Arrowroot 10 drops Pumpkin Spice Stevia (Optional) continued on next page... 9
14 Pumpkin Pie (Gluten Free) continued... Special Diet Options: Egg free. 2 eggs can be substituted with 1 tablespoon Arrowroot or an egg substitute. Dairy free. Evaporated Milk can be substituted with water or unsweetened coconut milk and 2 tablespoon arrowroot. The 60 drops of Plain Unflavored Stevia is replaced with this stevia combination. 50 drops of Plain Unflavored Stevia, 20 drops of Caramel Stevia, 20 drops of Pumpkin Spice. Notes: I have replaced the eggs and milk in the same recipe with said above and it turned out well. Directions Crust: Start by making the crust first and place in oven. In a bowl add the bread mix, baking powder, coconut flour and mix well. In a 1/4 cup add the stevia and or the vanilla and stevia and fill with water then add to the mix. Add the coconut oil and mix. Place the mix into a well greased glass pan. (Use coconut oil) Spread the mix evenly and press the mix down. Bake in a pre heated oven at 350 for minutes. Directions Filling: When measuring the stevia, use the dropper to fill the measuring spoon to avoid gumming up the threads on the stevia bottle. In a bowl add Evaporated Milk, Plain/Unflavored Stevia, Vanilla Extract (optional), Cinnamon, Ginger, Cloves, Salt, Arrowroot, Pumpkin Spice Stevia (Optional). In a separate bowl scramble the eggs and add. Add the pumpkin and mix all the ingredients well. Now add the filling to the crust that was prebaked. Bake again at 350 for minutes. Let cool to set up and serve. Store in refrigerator. 10
15 CANDY Chocolate Peanut Butter Fudge This recipe has a very light peanut butter flavor. 1/2 cup Coconut oil Expeller Pressed, No coconut flavor 1 Stick of Butter Salted 1/4 cup of Peanut Butter. (Double the peanut butter to give it the peanut butter cup taste) 1/4 cup Cocoa Powder It must be an organic, high grade cocoa powder 1 teaspoon of vanilla extract 1/4 teaspoon (35 drops) of Caramel Stevia 1/2 teaspoon (70 drops) of Plain Unflavored Stevia 1 teaspoon Raw Honey (optional) 2 tablespoons of Powdered Xylitol 1 oz. of Cream Cheese When measuring the stevia, use the dropper to fill the measuring spoon to avoid gumming up the threads on the stevia bottle. In a sauce pan using the lowest heat setting, add the coconut oil, butter, cream cheese and honey and mix until melted and then remove from heat. Add the vanilla extract, both stevia flavors and mix. Add the cocoa powder and mix. Now place the warm mix in a blender or food processor and mix on low-medium. This is to ensure that all ingredients are mixed well and gives the fudge a smooth texture. Pour into a glass pan or a lined pan/dish with parchment paper. Let the fudge cool and set up for a few hours in the refrigerator before cutting. Store in the refrigerator. Notes: A double batch is perfect for a family of four. 11
16 Chocolate Peppermint Fudge This recipe has a light to medium peppermint flavor. 1/2 cup Coconut oil Expeller Pressed, No coconut flavor 1 Stick of Butter Salted 1/4 cup of Peanut Butter (only a hint of peanut butter can be tasted) 1/4 cup Cocoa Powder It must be an organic, high grade cocoa powder 1 teaspoon of vanilla extract 1/4 teaspoon (35 drops) of Caramel Stevia 1/4 teaspoon (35 drops) of Plain Unflavored Stevia 1/4 teaspoon (35 drops) of Peppermint Stevia 1 teaspoon Raw Honey for flavor (optional) 2 tablespoons of Powdered Xylitol 1 oz. of Cream Cheese When measuring the stevia, use the dropper to fill the measuring spoon to avoid gumming up the threads on the stevia bottle. 17 YOGURT Caramel Yogurt Apple Dip Mix 8 oz. of plain Greek yogurt with 1/4 teaspoon (35 drops) of Caramel Stevia and one green apple sliced...yum! When measuring the stevia, use the dropper to fill the measuring spoon to avoid gumming up the threads on the stevia bottle. Yogurt Fruit Dip You can make a yogurt fruit dip with any flavor or combination of our plain stevia and stevia flavors. 13
18 PUDDING Caramel Chia Seed Pudding Nature s Stevia liquid stevia drops Milk Whole Chia Seeds. In a bowl with a cover add 1 cup milk, drops of Caramel Stevia and mix. Add 2 tablespoons whole chia seeds and mix. Cover and place in the refrigerator for 2 hours. Remove and mix well one more time (this step is important). Now let the pudding stand in the refrigerator overnight. Options: Other stevia flavors work as well. Be creative and enjoy. If using unsweetened coconut milk, use drops of Caramel stevia. For thicker pudding add an additional 1-3 tsp. of chia seeds. Note: For dairy free, we suggest using So Delicious unsweetened coconut milk. 14
19 Vanilla Chia Seed Pudding Nature s Stevia liquid stevia drops Milk Vanilla Extract Whole Chia Seeds and Vanilla Extract In a bowl with a cover add 1 cup milk, drops of Plain Unflavored Stevia and 1/2-1 teaspoons of vanilla extract and mix. Add 2 tablespoons whole chia seeds and mix. Cover and place in the refrigerator for 2 hours. Remove and mix well one more time (this step is important). Now let the pudding stand in the refrigerator overnight. Options: If using unsweetened coconut milk I use 1 teaspoons vanilla extract with drops of Plain Unflavored stevia. For thicker pudding add an additional 1-3 teaspoons of chia seeds. Note: For dairy free, we suggest using So Delicious unsweetened coconut milk. 15
20 Chocolate Chia Seed Pudding Nature s Stevia liquid stevia drops Milk Whole Chia Seeds Vanilla Extract Organic unsweetened cocoa powder. In a bowl using a whisk or protein shaker or wide mouth water bottle add 1 cup milk, drops of Plain Unflavored Stevia, 1/4 teaspoon of vanilla extract and 2 teaspoons of unsweetened organic cocoa powder and mix well. In a bowl add 2 tablespoons whole chia seeds and mix with the chocolate milk. Cover and place in the refrigerator for 2 hours. Remove and mix well one more time (this step is important). Now let the pudding stand in the refrigerator overnight. Options: If using unsweetened coconut milk add drops of Plain Unflavored stevia and 1/2 teaspoon of vanilla extract. For thicker pudding add an additional 1-3 teaspoon of chia seeds. Note: You should use an organic high grade unsweetened cocoa powder. Anything less will not taste good. For dairy free, we suggest using So Delicious unsweetened coconut milk. 16
21 SMOOTHIES Chocolate Peanut Butter Smoothie 1-2 tablespoons protein powder 2 teaspoons cocoa or cacao powder 2 teaspoons maca powder (optional) 1-2 tablespoons Nut butter (almond, cashew, sunflower seed, or peanut) 1 1/2 cups milk (Dairy, Unsweetened Almond, Unsweetened Coconut, or Unsweetened Flax Milk) 6-7 large ice cubes 1/4 teaspoon (35 drops) to 1/2 teaspoon (70 drops) of Caramel Nature s Stevia. Adjust to your taste. When measuring the stevia, use the dropper to fill the measuring spoon to avoid gumming up the threads on the stevia bottle. Combine all ingredients in blender, and mix until smooth. 17
22 Strawberry Smoothie Handful of frozen strawberries 1-2 tablespoons protein powder 2 teaspoons maca powder (optional) 1 1/2 cups milk (Dairy, Unsweetened Almond, Unsweetened Coconut, or Unsweetened Flax Milk) 4-5 large ice cubes 1/4 teaspoon (35 drops) to 1/2 teaspoon (70 drops) of Strawberry Nature s Stevia. Adjust to your taste. When measuring the stevia, use the dropper to fill the measuring spoon to avoid gumming up the threads on the stevia bottle. Combine all ingredients in blender, and mix until smooth. 18
23 Strawberry Spinach Smoothie Handful of frozen strawberries 1-2 tablespoons protein powder 2 teaspoons maca powder (optional) Handful of spinach or other lettuce 1 1/2 cups milk (Dairy, Unsweetened Almond, Unsweetened Coconut, or Unsweetened Flax Milk) 4-5 large ice cubes 1/4 teaspoon (35 drops) to 1/2 teaspoon (70 drops) of Strawberry Nature s Stevia. Adjust to your taste. When measuring the stevia, use the dropper to fill the measuring spoon to avoid gumming up the threads on the stevia bottle. Combine all ingredients in blender, and mix until smooth. 19
24 Chocolate Caramel Breakfast Smoothie for the Nutri Bullet 2 tablespoons or 1 Scoop of Plain or Vanilla Protein Powder 2 teaspoons organic high grade Cacao Powder 1 teaspoons Maca Powder (Optional because of the taste. We like it.) 1 teaspoon of Chia Seeds 1 teaspoon of Flax Seeds 1 tablespoon of dried Goji Berries 1-2 tablespoons of a nut butter (Almond, Cashew, Sunflower or Peanut) 1 small hand full of fresh spinach leaves 1 1/2 cups milk (Dairy, Unsweetened Almond, Unsweetened Coconut, or Unsweetened Flax Milk) 1/2 cup of Crushed Ice. 1/4 teaspoon (35 drops) to 1/2 teaspoon (70 drops) of Caramel Nature s Stevia. (I use plain unsweetened protein and plain unsweetened coconut milk so it needs a 1/2 teaspoon of stevia) Adjust to your taste. The Nutri Bullet because of its high rpm will grind the seeds and dried Goji berries. Other blenders may not. When measuring the stevia, use the dropper to fill the measuring spoon to avoid gumming up the threads on the stevia bottle. Combine all ingredients in blender, and mix until smooth. 20
25 Spreads Fresh Raw Jam This recipe can be used with any kind of berries. Place berries in blender with drops of plain unflavored liquid stevia and blend. Add enough berries to equal 1 cup blended. Now taste for flavor and sweetness. Add additional drops of plain unflavored or a Berry flavored stevia if needed. Pour 1 cup of sweetened blended berries in bowl and mix in 1 tablespoon of chia seeds. Cover and let stand in the refrigerator for a few hours to allow the chia seeds to absorb most of the juice. Use within 3 days. If you want it to keep up to six days add a 1/2 tablespoon of xylitol. 21
26 Chocolate Hazelnut Spread Substitutions for Peanut Butter: Unsalted Almond Butter or unsalted Cashew Butter. 1/2 cup Organic Peanut Butter (unsalted) 2 tablespoons Organic Coconut Oil (Expeller pressed, no coconut flavor) 2 tablespoons Organic Grape Seed Oil 1/2 teaspoon (70 drops) of Hazelnut Stevia (Natures Stevia) 1 teaspoon Organic Raw Honey 1/8 teaspoon Organic Vanilla Extract. 2 teaspoons Organic Unsweetened Cacao Powder Salt - just a pinch When measuring the stevia, use the dropper to fill the measuring spoon to avoid gumming up the threads on the stevia bottle. Place a pot or pan on the stove long enough to get it warm but not hot and then remove. Now combine the peanut butter, coconut oil, grape seed oil, vanilla, hazelnut stevia, honey and salt. Mix well. Then mix in the cacao powder. Mix well and store in the refrigerator. Makes about 13 Servings. Serving size 1 tablespoon. A healthy option for your gluten free bread/toast. 22

When measuring the stevia, use the dropper to fill the measuring spoon to avoid gumming up the threads on the stevia bottle. Place a pot or pan on the stove long enough to get it warm but not hot and then remove. Now combine the peanut butter, coconut oil, grape seed oil, vanilla, caramel stevia, honey and salt. Mix well. Then mix in the cacao powder. Mix well and store in the refrigerator. Note: Use the dropper to fill the 1/2 teaspoon. Easier than pouring and less messy. Makes about 13 Servings. 29 CREAM CHEESE SPREADS Chocolate Chip Cream Cheese Party Dip/Spread 1 stick of Butter softened unsalted 4 oz Softened Cream Cheese 25 drops of Plain Unflavored Stevia 15 drops of English Toffee or Caramel Stevia 1 teaspoon of Vanilla Extract 2 tablespoons of Mini Chocolate Chips Add the butter, cream cheese, stevia and vanilla in a bowl and mix well. Next, mix in the chocolate chips or place the mix in a serving bowl and sprinkle the chips on top. Serve with small pieces of graham cracker. Cinnamon Cream Cheese Spread 2 oz Softened Cream Cheese 25 drops of Plain Unflavored Stevia 1/8 teaspoon of Ground Cinnamon Add the cream cheese, cinnamon and stevia in a bowl and mix well. Spread on toast, bagel or slice of apple. 25
30 Vanilla Cream Cheese Spread 2 oz Softened Cream Cheese 1/2 teaspoon of Vanilla Extract 25 drops of Plain Unflavored Stevia Add the cream cheese, vanilla and stevia in a bowl and mix well. Spread on toast, bagel or graham cracker. Dark Chocolate Cream Cheese Spread 2 oz Softened Cream Cheese 1 teaspoon of Organic Cocoa Powder 1/8 teaspoon of Vanilla Extract. 30 drops of Plain Unflavored Stevia Add the cream cheese, cocoa powder, vanilla and stevia in a bowl and mix well.
