1 Unit 10: Hospitality in travel and tourism (LEVEL 1) Learning outcomes By completing this unit, candidates will have been introduced to the hospitality sector of the travel and tourism industry. Candidates will explore hospitality provision within an area and the products and services available. Candidates will investigate job opportunities and gain a basic introduction to relevant health and safety issues. Assessment objectives 1 Describe the hospitality providers available in an area with which you are familiar 2 Investigate the products and services available at two different hospitality providers 3 Find out about two job opportunities offered by two different hospitality providers 4 Give examples of health and safety concerns and practices for hospitality organisations and how they ensure health and safety within their organisations Knowledge, understanding and skills Examples of hospitality providers within a specified area: hotels, guesthouses, motels, bed and breakfast, inns, youth hostels, campsites restaurants including fast food outlets and cafés public houses, wine bars entertainment providers, eg clubs, bars, venues contract caterers, eg for airlines, events, leisure centres Examples of products and services provided by a hotel: bed and breakfast half board or full board tariffs single, double and family rooms honeymoon suites night porter room service weddings and conference facilities Examples of products and services offered by a fast food outlet: 24 hour opening drive thru facility meal deals children s play area/organising children s parties high chairs Consider: hours/days of work rates of pay daily tasks duties and responsibilities skills required qualifications required Examples of health and safety concerns and practices: accidents, eg slippery floors, use of chemicals, fooling around fire food poisoning injury (lifting, use of chemicals) compliance with legislation, eg Health and Safety at Work Act (employers and employees responsibilities) (continued overleaf) OCR Level 1 Nationals in Leisure and Tourism 1
2 Assessment objectives 4 Cont. Give examples of health and safety concerns and practices for hospitality organisations and how they ensure health and safety within their organisations Knowledge, understanding and skills Examples of health and safety measures: induction and training in health and safety fire practices first-aiders and first aid equipment notices and signs (shapes, colours) food storage, cleanliness of food area personal hygiene protective clothing organisational rules and guidance Assessment This unit is centre assessed and externally moderated. In order to achieve this unit candidates must produce a portfolio of evidence showing that they have met all of the assessment objectives. Portfolios of work must be produced independently. They will need to be made available, together with witness statements and any other supporting documentation, to the OCR Visiting Moderator when required. Centres must confirm to OCR that the evidence produced by candidates is authentic. An OCR Centre Authentication Form is provided in the Centre Handbook and includes a declaration for assessors to sign. It is a requirement of the QCA Common Criteria for all Qualifications that proof of authentication is received. Guidance on assessment and evidence requirements The aim of this unit is to introduce candidates to the hospitality sector of the travel and tourism industry. It is recommended that candidates are encouraged to share their own personal experiences of this sector. Some candidates may be familiar with hotels, many will have visited local fast food outlets and others may have used national venues or local leisure facilities. The range of hospitality outlets could be explored through class discussion and/or group work (Assessment Objective 1). The local Tourist Information Centre (TIC) may be able to provide promotional leaflets from providers, directories of local accommodation and/or catering provision to assist with this investigation. It is recommended that candidates concentrate on their local area (or an area with which they are familiar) for the production of evidence. Visits to hospitality providers will assist greatly in the provision of underpinning knowledge, especially for those candidates who have less experience of the range of provision, their products and services. However, the selection of outlets to visit should be carefully managed. Ideally two such visits will be arranged, enabling candidates to collect material and provide evidence about the products and services available at different providers (Assessment Objective 2). Candidates who are able to work independently may wish to arrange their own visits to outlets. Research into job opportunities (Assessment Objective 3) could be conducted at either a national or local level. Candidates could be encouraged to gain information from specialist magazines, national press, the local careers information centre, the internet or through local hospitality providers. Candidates could either research general vacancies or those suitable for themselves. In the latter case, candidates should be encouraged to reflect on the appeal of these positions and their personal skills match. This unit has links with Unit 4: Investigating options for work in leisure and tourism. 2 OCR Level 1 Nationals in Leisure and Tourism
3 Candidates may provide portfolio evidence for all of the assessment objectives in this unit using a range of presentation techniques. This may include assessor testimony/witness statements logbooks, diaries, the use of video, audio and presentation software, posters/charts, written work. Where video and/or audio evidence is provided this must be supported by assessor testimony/witness statements. Where candidates demonstrate competence, centres should record skills demonstrated on appropriate recording documentation.
