RCD 30mA rating is recommended. POWER RATING The machine will draw up to 7.1kW. WATER SUPPLY The machine should be situated within 1 metre of a drinking water supply from a rising main, terminated at a W.R.C. approved 15mm compression stoptap. This water supply should comply with both: Water pressure at the stoptap must be within the limits of 1 to 6 bar. Water Filter/Conditioner The machine must be installed with a water filter/conditioner. WASTE The machine requires a 35mm trapped outlet to mains drainage. BEAN HOPPER Max content 2.6 kg. 10 Important Safeguards Before using, cleaning or servicing the Cimbali M52 Fully Automatic, Milk Cooler or Cup Warmer, always follow these basic safety precautions: 1. Read the instructions carefully before using the machines. Ensure that anyone who will be involved with the cleaning or refilling of the machines also reads the instructions. 2. Each of the machines is to be setup on a stable horizontal surface. Ensure that the ventilation vents are free of obstructions. 3. The electrical supply leads should never trail from the machine and should always be kept away from hot surfaces and sharp edges. 4. The equipment should be located so that the electrical plugs are accessible for disconnection. 5. Do not operate a machine if any part is damaged, e.g. electrical supply lead, until it has been checked by a qualified Service Technician. 6. Never immerse a machine in water or any other liquid and never clean with a water jet. 7. If a machine should accidentally freeze up, call a Service Technician to check it before switching on. 8. Ensure you are conversant with the Health and Safety at Work and Electricity at Work Regulations 1989 (see Contents page). ALWAYS ISOLATE A MACHINE FROM THE ELECTRICITY SUPPLY BEFORE CLEANING AND SERVICING. 9. It is recommended that the machines are serviced by a Kenco trained Service Technician. 11 Setting Up Instructions Cimbali M52 Fully Automatic Ensure the machine is connected to the electrical and water supplies and that both supplies are switched on. Manual Switch - On Lift the display panel to gain access to the programming panel. Press the Master Switch, the machine will power up and one of the following screens will be displayed. Note: When a coffee dispensing key is pressed, the drink will be delivered at the temperature reached at the time of the operation. When the tea, cappuccino or milk keys are pressed, the drink will not be dispensed until the programmed temperature has been reached. 12 Automatic Switch - On If the CLOCK function has been activated the machine will switch on automatically at the previously programmed time and switch off at the previously programmed time. The machine displays will be the same as those for the Manual Switch - On and the functioning of the machine is also the same. Note: When the machine is operating in this mode it should NOT be switched off using the Master Switch, as this will disable the programmed timings. Forced Switch - On If the machine is operating in the CLOCK function and is in the switched-off phase, it may be necessary to switch the machine on. This may be achieved without disabling or changing the programmed ON/OFF times. During switched-off phase the machine display will show: Press and hold the RESET key for approximately 2 seconds to instigate a forced Switch-On. The display will show: To switch the machine off, press and hold the RESET key for 2 seconds. The machine will switch on automatically at the next programmed time. 13 Setting Up Instructions (Cont.) Adjusting the Clock The clock may be adjusted only when the CLOCK mode is activated. 1. Switch on the machine, the display will show: 2. On the programming panel press the + or - keys to alter the time as required. Each press of the appropriate key will change the display in one minute steps. If the keys are pressed and held, the speed increases. The day will change when the display reaches Selecting a Language The display may be changed to show one of the following languages: Italian, English, French, German, Dutch, Portuguese and Japanese. 1. Switch on the machine. 2. Press the key, the display is shown in the chosen language. 3. Repeated pressing of the key will scroll the display through the available languages. Counter Display and Reset To view the counter display press the will show: key, the display To reset the counters press and hold the RESET key until the counters reset to zero. 14 Filling the Bean Hoppers The Cimbali M52 machine is fitted with two bean hoppers. Each hopper is fitted with a removable funnel to ensure a smooth flow of beans to the grinders. Note: Use only the amount of beans required for the next 3 to 4 hours, coffee beans lose their aroma and flavour if left in the hoppers for a long time. Ensure that no foreign bodies enter the bean hopper. 1. Remove the lid from the bean hopper that requires filling. 2. Ensure that the removable funnel is fitted. 3. Fill the bean hopper with required type of fresh coffee beans. 4. Refit the lid to the bean hopper. Filling the Cup Warmer WARNING: WARNING: THE SURFACES OF THE CUP WARMER ARE HOT DURING OPERATION. ENSURE THAT CUPS ARE PLACED BASE DOWN ON THE CUPWARMER (PLACING CUPS UPSIDE DOWN CREATES THE POSSIBILITY OF THE RIM OF THE CUP BURNING THE DRINKER S LIPS. 1. Ensure the cups to be loaded are clean and dry. 2. Fill the cup warmer with stackable cups. Stack the cups with the base facing down. Do not stack more than two cups. 15 Setting Up Instructions (Cont.) Frigomilk Milk Cooler 1. Ensure the milk cooler is connected to the electrical supply via the voltage transformer. 2. Ensure the milk container is clean and fitted in the machine. 3. Set the ON/OFF switch to ON. 4. Observe the temperature indicator; wait until the display reaches 5 o C (41 o F) or less. Notes: 1. Use only fresh, chilled, semiskimmed milk in the milk container. 2. Never mix old and fresh milk; ensure that the milk container is clean and dry before replenishing. 3. For better cooling performance the milk should be at a temperature of approximately 5 o C. 5. Remove the lid of the milk cooler and fill the milk container with fresh, chilled, semiskimmed milk. 6. Insert the milk tube through the hole in the machine and ensure it is fully immersed in the milk. Route the milk tube under, not over, the lifting handle. 7. Replace the lid on the machine. 16 Fresh Milk Milk Cooler 1. Ensure the milk cooler is connected to the mains electricity supply and that the supply is switched ON. 2. Insert the milk tube into the hole in the machine. 3. Press the ON/OFF switch and ensure the machine ON and high temperature lights illuminate. 4. Wait for the high temperature light to extinguish and the temperature OK light to illuminate. 5. Open the machine door and remove the milk container. Ensure the milk container is clean. Notes: 1. Use only fresh, chilled, semiskimmed milk in the milk container. 2. Never mix old and fresh milk; ensure that the milk container is clean and dry before replenishing. 3. For better cooling performance the milk should be at a temperature of approximately 5 o C. Remove the milk container lid and fill the container with fresh, chilled, semi-skimmed milk. Replace the lid. Insert the milk tube into the hole in the milk container, ensuring it is totally immersed in the milk. Refit the milk container in the machine and close the door. 17 Setting Up Instructions (Cont.) Ensure that the cup warmer is connected to the mains electrical supply, and that the supply is switched on. Set the ON/OFF switch to ON and ensure that the indicator illuminates. WARNING: WARNING: Cup Warmer THE SHELVES OF THE CUP WARMER ARE HOT DURING OPERATION. ENSURE THAT CUPS ARE PLACED BASE DOWN IN THE CUP BASKETS (PLACING CUPS UPSIDE DOWN CREATES Price Setting THE POSSIBILITY OF THE RIM OF THE CUP BURNING THE DRINKER S LIPS). Ensure the cups to be loaded are clean and dry. Load the cup baskets with stackable cups with the base facing down. Do not stack more than two cups. Adjust the temperature control to the required setting. 12

18 Dispensing Drinks Coffee/Milk 1. Position a cup on the drip tray, underneath the cappuccino system. 2. Press the key on the selection panel for the required coffee or milk product. The product LED adjacent to the selected key will illuminate whilst the product is being dispensed. Delivery will terminate automatically. 3. The temperature of a milk related product may be adjusted by altering the flow of milk to the machine. To increase the temperature (by reducing the volume of milk) rotate the milk control valve clockwise. To decrease the temperature rotate the milk control valve anticlockwise. Note: Hot Water Normally this adjuster should not be altered. However, if adjustment is required, small adjustments should be made until the correct temperature (68-70 o C) is achieved. 1. Position a cup on the drip tray, under the hot water outlet. 2. Press the TEA key on the selection panel. Hot water will be dispensed and the lamp adjacent to the TEA key will illuminate. Delivery will terminate automatically. 3. If a greater quantity of hot water is required the TEA key should be pressed and held. Hot water will be dispensed until the key is released. Note: Milk Control Valve The TEA key is for dispensing small amounts of hot water only (2 cup teapots maximum). O P E R A T O R S H A N D B O O K 13

19 Daily Cleaning The Daily Cleaning instructions detailed in this section are to be carried out at the end of each working day. WARNINGS: 1. Cleaning the Coffee Circuit TAKE NOTE OF THE HEALTH AND SAFETY WARNINGS RELATING TO THE CLEANING PRODUCTS. 2. HOT WATER, STEAM AND MILK RESIDUE WILL BE ISSUED FROM THE CAPPUCCINO SYSTEM SPOUTS DURING THE WASH CYCLES. DO NOT TOUCH THESE PARTS WITH THE HAND OR OTHER PARTS OF THE BODY UNTIL THE CLEANING CYCLE HAS FINISHED. 3. THE INTERNAL AND EXTERNAL SURFACES OF THE DELIVERY SPOUT AND THE EXPOSED AREAS OF THE COFFEE CIRCUIT CAN CAUSE BURNS IF HANDLED INCORRECTLY. The coffee circuit is cleaned using an automatic cleaning cycle, which takes approximately 5 minutes. Coffee cannot be served once the cycle has commenced. The cycle cannot be stopped, even if the machine is switched off. This procedure is also to be carried out when requested by the machine. A Perform Wash Cycle message will appear in the display window, and an audible warning will be heard. The message will be displayed for approximately 10 seconds and repeated every 10 minutes until the operation is performed. To perform the wash cycle: 1. Open the cleaning tablet access flap and insert a Bioguard Cleaning Tablet. Close the flap. 2. Lift the display panel. Press and hold the coffee circuit wash key until the message Cleaning is displayed. 3. Hot water will flow from the cappuccino spouts. 4. Wait until the automatic wash cycle finishes. 5. 20 Cleaning the Milk Circuit The milk circuit is cleaned using an automatic cleaning cycle after which the cappuccino system is dismantled and cleaned by hand. This procedure is to be carried out at the end of each day or when requested by the machine. A wash milk circuit message will appear in the display window and an audible warning will be heard. The message will be displayed for approximately 10 seconds and repeated every 10 minutes until the operation is performed. To clean the milk circuit: 1. Dilute 2 level scoops of Bioguard Milk Cleaner (using 10 ml measuring spoon supplied) in a container with 800 ml of clean cold water. 2. Remove the milk tube from the milk cooler and immerse it in the milk cleaner solution. 3. Lift the display panel and press the milk circuit wash key. 4. The milk cleaner will be sucked up automatically and flow out of the cappuccino system spout. 5. Once the wash cycle has completed remove the cappuccino system cover. 21 Daily Cleaning (Cont.) 6. Rotate and remove the top jet. 7. Disassemble the cappuccino system as follows: - Remove the coffee tube connector located on the back of the cappuccino system. - Rotate the cappuccino system 90 o anticlockwise. - Gently pull downwards and remove. - Unscrew the ring nut and disassemble the five parts. - Prepare a new dose of Bioguard Milk Cleaner (as previous) and immerse the cappuccino system parts therein (including the top jet). - Wash each part with a sanitised cloth and remove all organic residue, then re-immerse the cappuccino system in the solution. - Wash the holes of each individual part with the brush provided with the cappuccino system. - Reassemble the parts ensuring that guides A and B are aligned with pin C. - Refit the cappuccino system to the machine, refit the coffee tube, insert the top jet, ensuring the groove in the top jet is aligned as shown, and replace the cover. Top Jet 8. Fill the milk container with 1 litre of cold water and insert the milk tube. Ring Nut Casing 9. Press the milk circuit wash key. The water will be sucked up automatically and flow out of the cappuccino system spouts to rinse the milk circuit. 10. When the wash cycle has stopped, empty, rinse and replace the milk container, ready for refilling with fresh milk. C Coke Valve A Separator B Coffee Tube Connector 16

22 Drip Tray At the end of the working day, pour a jug of hot water into the drip tray, and after allowing time for the hot water to drain away, remove any deposits from the drain. Remove the drip tray (by pulling drip tray towards you), and wash the drip tray and grille under running water. Coffee Grounds Drawer Open the coffee grounds door and remove the coffee grounds drawer. Empty and wash the drawer under running water. Carefully clean the drawer housing with a damp sanitised cloth and remove any organic residue. Replace the coffee grounds drawer and lower the door. External Panels Clean all external surfaces with a soft cloth. Do not use products containing ammonia or abrasive substances. Remove any organic residue. CAUTION: Cleaning Materials Do not spray any liquids into the ventilation slots. Switching Off the Machine for Periods Over 24 Hours Coffee Grounds Door Ensure that, if the machine is to be left unused for more than twenty-four hours, the automatic cleaning sequences are carried out before switching OFF, and repeated, before placing the machine back into operation. Switch off and disconnect the electrical supply to the machine. 2. Remove the milk cooler lid. 3. Remove the milk tube and lift out the milk container. Throw away the remaining milk. 4. Wash the milk container with hot water and soap, and remove any organic residue. Rinse thoroughly and dry with a soft dry cloth. Frigomilk Milk Cooler 5. Clean the lid and internal surfaces of the machine with hot water and soap, and remove any organic residue. Rinse thoroughly and dry with a soft dry cloth. Do not use abrasive substances. 6. Refit the milk container, milk tube and milk cooler lid. Milk Container 18

24 The daily cleaning instructions detailed in this section are to be carried out at the end of each working day. Lid 1. Switch off and disconnect the electrical supply to the machine. Cap 2. Open the door of the machine. 3. Remove the milk tube and lift out the milk container. Throw away the remaining milk. 4. Wash the milk container, lid and cap with hot water and soap, and remove any organic residue. Rinse thoroughly and dry with a soft dry cloth. 5. Clean the internal surfaces of the machine with hot water and soap and remove any organic residue. Rinse thoroughly and dry with a soft dry cloth. Do not use abrasive substances. 6. Refit the milk container and milk tube and close the machine door. Cup Warmer The daily cleaning instructions detailed in this section are to be carried out at the end of each working day. 1. Switch off and disconnect the electrical supply to the machine. 2. Remove the cup baskets from the machine. Wash the cup baskets with hot water and soap. Thoroughly rinse and dry with a soft dry cloth. 3. Wipe off surfaces of the cup warmer with a clean sanitised cloth. Dry with a soft dry cloth. 4. Refit the cup baskets. 25 Display Messages Cimbali M52 Fully Automatic When the machine is working normally the display changes to provide operational information. The following is a list of messages that may appear, and the action required if they do. This message means that the boiler is not up to the required temperature. Wait until message clears. When the coffee circuit requires washing this message will be displayed and an audible warning will sound. The message will be displayed for 10 seconds and repeated every 10 minutes until the coffee circuit wash has been initiated (see Daily Cleaning). When the milk circuit requires washing this message will be displayed and an audible warning will sound. The message will be displayed for 10 seconds and repeated every 10 minutes until the milk circuit is cleaned (see Daily Cleaning). This message is displayed when the machine is filling the boiler. The operation is performed automatically and requires no operator action. Machine Cold Please wait Perform Wash cycle Wash Milk Circuit Monday 12:30 Boiler filling 20

26 This message means that the coffee grounds drawer is full. 10 more coffee selections will be allowed before coffee selection is inhibited. At this point the following message will be displayed: The access panel is to be opened and the coffee grounds drawer emptied. When the drawer is removed the following message will be displayed: Refit the coffee grounds drawer and close the access panel, the grounds counter will be reset. Note: It is not necessary to wait for the dregs drawer full message to be displayed before emptying the coffee grounds drawer. The messages will not appear if the machine has been configured for an external grounds disposal container. This message may be displayed when the machine is switched on and the quantity of water in the coffee boiler is insufficient. WARNING: HOT WATER WILL BE ISSUED FROM THE DELIVERY SPOUT DURING THE FOLLOWING OPERATION. Press the Coffee circuit wash key. The following message will be displayed: The machine will automatically refill the boiler. The message will remain until the operation is complete. This message is displayed when the machine requires a periodic service. Contact Kenco Customer Service. 27 Simple Checks Before Calling A Service Technician The Cimbali M52 Fully Automatic machine together with its associated milk cooler and cup warmer is designed and manufactured to give excellent service. However, faults may occur. Some faults may be remedied quickly by the operator without the need to call a Service Technician. The following is a list of faults that may occur, and the remedial action required. Upon completion of the remedial action operate the machine several times to ensure that the fault does not re-occur. If this condition arises within a short period call a Service Technician. Press the coffee dispenser key, the group will perform a cycle. If the cycle effected proves unsuccessful and the message is repeated, contact Kenco Customer Service informing them of the type of message and the associated code ( x x). Perform a wash cycle of the coffee circuit as indicated in "Daily Cleaning". If the message continues to be displayed, contact Kenco Customer Service informing them of the type of message and the associated code ( x x). Switch off the machine and check the water mains tap. If it is closed, open the tap and switch on the machine. If the message continues to be displayed, contact Kenco Customer Service informing them of the type of message and the associated code ( x x). The display of this message does not jeopardize the correct functioning of this machine. Check the power voltage. 28 Health and Safety at Work and Electricity at Work Regulations 1989 The above regulations state that all electrical equipment should be regularly checked for safety. It is recommended that the machine should be regularly checked by the person, or people, responsible for daily maintenance and use, by switching off and disconnecting the plug and checking the general condition of the machine, paying particular attention to the mains electrical lead and plug. Formal Checks Similar checks to those above should be carried out in a more formal and systematic manner by a competent person appointed by the duty holder (employer). The period between checks should be decided by the duty holder and will vary considerably depending on conditions of use and the local environment. These tests should be expanded to include the following tests, using a suitable electrical appliance tester used in accordance with the manufacturer s instructions: For guidance: We recommend that the machine is tested at least once a year, but more regularly if local conditions demand. 1. Earth Bond Test: A current of 25 amps from an a.c. source, having a no-load voltage not exceeding 12 volts, is passed between the earth terminal or contact and accessible metal parts, the resistance must not be greater than 0.1 ohms, excluding the mains lead volt d.c. Insulation Test: The resistance must not be less than 2M ohms. Should either test fail, please contact our Service Department. Do not reconnect the machine. Note: Flash testing at 1250 volts is not recommended on this equipment because: (a) The equipment is fitted with electrical filtration devices and/or electronic components. (b) It is not necessary to flash test to ensure safety - the earth bond and insulation tests are sufficient. (c) Repeated flash testing can damage electrical insulation. 29 Mains Electrical Plug The 3-pin plugs at the end of the Milk Cooler and Cup Warmer flexible mains electrical power supply cords are NOT WATERPROOF. Therefore, they must be kept dry. These machines are equipped with plugs which are moulded to the power supply cords and fitted with cartridge fuses. Should there be a need to replace a fuse, an ASTA approved BS amp cartridge fuse should be used. If the fuse cover is detached, it must be refitted.
