Designated Emphasis in International and Community Nutrition Degree Requirements Revised: April 11, 2014 Approved by Graduate Council: August 14, 2014 The Program in International and Community Nutrition (PICN) of the University of California, Davis was established in 1987 to coordinate research and training activities concerning human nutrition problems of low-income countries, and of ethnic minorities and disadvantaged groups in the United States. In 1994, the Program became an Organized Research Unit (ORU) under the Office of Research. The Program administers a Designated Emphasis (DE) in International and Community Nutrition open to graduate students in many programs across campus overseen by an Executive Committee of participating faculty members. A. Admissions Criteria Prospective students of the DE in International and Community Nutrition must be admitted into one of the existing graduate groups at UC Davis, after which they may enroll in the DE. Although students may enroll in the DE anytime before they have Advanced to Candidacy, it is strongly encouraged that they enroll in the DE during their first year to ensure that they will meet all DE requirements. The graduate programs that currently participate in the Designated Emphasis in International and Community Nutrition are: Graduate Group in Nutritional Biology (GGNB); Graduate Group in Human Development (GGHD); Graduate Group in Epidemiology (GGE); Department of Agricultural and Resource Economics (DARE); Department of Anthropology (DAn); Students from other doctoral programs may also become eligible for the DE following consultation with the Chair of the DE in International and Community Nutrition and approval of its Executive Committee. Their admittance is at the discretion of the Executive Committee. B. Curriculum DE in International and Community Nutrition students will be expected to fulfill the usual course requirements for the Ph.D. degree of the program to which they are accepted, and will also be required to complete a set of core courses directly related to international and community nutrition. The structured curriculum that has been developed for the DE in International and Community Nutrition comprises a combination of existing and specially developed courses in nutrition and in related population sciences and social sciences, as well as a weekly seminar series. There is particular importance placed on populations of lower income countries and on disadvantaged sub-groups within more affluent countries. Implicit in this definition is the recognition that these populations are especially vulnerable to undernutrition and diseases caused
by nutritional deficiencies. Moreover, nutritional status in these settings is often conditioned by a variety of environmental factors, including high rates of infection and, possibly, exposure to environmental contaminants. Because of the complex interplay of socio-cultural and biological factors that influence the nutritional status of disadvantaged populations, the DE actively encourages knowledge of population sciences, social sciences, and biological sciences that provide a foundation in nutritional sciences. Furthermore, in an effort to emphasize the importance of human functional indicators in the assessment of nutritional adequacy, the DE devotes special attention to the behavioral and developmental outcomes affected by nutrition. Faculty members from the Departments of Nutrition, Pediatrics, Agricultural and Resource Economics, and Anthropology currently participate in the Program. Each student enrolled in the DE in International and Community Nutrition should master, at a minimum, material from each of three major fields of knowledge: Nutrition science Epidemiology and biostatistics Social and behavioral sciences, including economics, anthropology, and psychology Additionally, all students must participate in an interdisciplinary PICN seminar series designed to review current research and issues of importance to community nutrition programs relevant to International and Community Nutrition. Because the core requirements for the DE in International and Community Nutrition are already incorporated to varying extents within the requirements for the individual doctoral degrees, the additional requirements for the DE vary somewhat according to the specific doctoral program, as detailed in Appendix B. Aside from the PICN seminar series, courses from these approved lists must be taken for a letter grade to be accepted in fulfillment of course requirements for the emphasis. If the student has taken an equivalent course(s) at another institution, certain courses may be waived. To request a waiver, the student must submit a letter of request, along with a copy of the substituting course syllabus and evidence of the grade received in the course to the Chair of the DE, who forwards the request to the PICN Executive Committee for a vote. While the Executive Committee will accept some course substitutions, all students will be required to take a minimum of 12 units of coursework in the DE and participate in 4 quarters of the PICN seminar, as described below. The required courses have been selected to provide training in the application of nutrition and other biological and social sciences to the identification and solution of nutrition problems of high risk human populations. These courses cover the diagnosis and quantification of the major nutrition problems, the multifactorial etiologies of these problems, and the range of possible interventions available to resolve them. In addition to the primary disciplinary knowledge and skills provided by the student's primary graduate program, the DE in International and Community Nutrition offers training in the application of this expertise and an appreciation of the importance of interdisciplinary collaboration for understanding these problems and developing appropriate, feasible, and culturally sensitive solutions. The Executive Committee of the Program in International and Community Nutrition is responsible for 1) periodic review of the curriculum of the Designated Emphasis, 2) assignment of
faculty members to qualifying examination and dissertation committees, and 3) coordination with the graduate committees of the participating doctoral programs and for reviewing requests for exceptions or substitutions. Students should consult with the Chair of the DE in International and Community Nutrition regarding specific curriculum questions. Total Required Units: 8-20, Depending on Graduate Program 1. International Nutrition Courses (13 units) Required for all Graduate Programs: Nutrition 112 (Nutritional Assessment) (3 units) Nutrition 219A and B (International Nutrition) (3 units each) Nutrition 258 (Field Research Methods in International Nutrition) (3 units) Nutrition 291 (Seminar in International and Community Nutrition) (4 quarters of enrollment, 1 unit each) *Additional basic nutrition courses (NUT111AV and NUT111B, 5 units) are recommended for students participating in the GGE, DARE, DAn, and GGHD. 2. Epidemiology (8 units)** Required for students from GGNB, GGHD, and DAn: EPI 205A (Introductory Epidemiology) (4 units) EPI 206 (Epidemiologic study design) (4 units) 3. Statistics (8 to 12 units) Required for students from GGNB, GGHD, and DAn: A variety of options are available for students to fulfill the statistics requirement: Medical Statistics MPM***402 (5) AND MPM 403 (3) Note: MPM 404 (4) is also highly recommended. OR STA 100 (4) or STA 102 (4); AND STA 106 (4) AND STA 108 (4) ** For students from DARE and GGE, similar quantitative methods courses are required for their core PhD requirements and therefore constitute no additional coursework in epidemiology or biostatistics is required. *** MPM Preventative Veterinary Medicine 4. Elective courses: (3-4 units) Required for all Graduate Programs: To meet the requirement for training in Social and Behavioral Sciences, students must take one of the following courses: NUT 120AN (Nutritional Anthropology) (4) NUT 120BN (Nutritional Geography) (4) AAS 100 (Survey of Ethnicity in the United States) (4) AAS 298B (Critical Topics in Africa) (4) ANT 101 (Ecology, Nature and Society) (4)
ANT 126A (Anthropology of Development) (4) ANT 126B (Women and Development) (4) ANT 144 (Contemporary Societies & Cultures of Latin America) (4) AMS 255 (Food in American Culture) (4) SPH 222 (Social and Behavioral Aspects of Public Health)(3) NUT 298 (Community Based Participatory Research Methods) (4) NUT 298 (The Economics of Human Health and Nutrition) 1 (3) 3. Exceptions and Substitutions On occasion, students may request exceptions or substitutions to the above requirements. Requests must be submitted in writing to the Executive Committee of the Designated Emphasis. In general, the Executive Committee will approve requests either if 1) the substitution represents a similar or higher level course in the same domain (e.g. a more advanced statistical or epidemiological methods series) or 2) the student presents evidence in the form of a course syllabus and transcript of satisfactory completion of a similar course taken at another institution. C. Qualifying Examination Committee The Qualifying Examination for the student s primary graduate program will also assess the student's level of knowledge in the area of the DE after all formal course requirements have been satisfied. At least one faculty member from the PICN will participate in the qualifying examination. In the event that a student passes the Ph.D. qualifying exam, but receives a "not pass" for the DE, the Executive Committee of the DE will define a plan for remediation. The plan may include, but is not limited to, re-examination by the DE Executive Committee, coursework, or preparation of a paper. If the student is re-examined, the outcome is limited to "pass" or "fail". If the student receives a "fail", the student is disqualified from the DE. If the student receives a pass for the DE but a not pass for the qualifying exam, the plan for remediation will occur in accordance with the primary graduate program guidelines and in discussion with the Qualifying Examination Committee Chair D. Dissertation Requirements The dissertation topic must be relevant to International and Community Nutrition, as defined above. The student's Dissertation Committee shall be selected in accordance with the regulations of the Ph.D. program, but must include at least one member of the PICN. The student's major professor (chair of the dissertation committee) will generally be a faculty member of the PICN. In all cases, at least one member of the dissertation committee must also be a member of the PICN. 1 Note: For students in DARE, the students are strongly encouraged not to take The Economics of Human Health and Nutrition because of the substantial overlap with their other primary graduate degree requirements.
E. Degree Conferral Process The DE will be awarded solely in conjunction with the Ph.D. in one of the affiliated Ph.D. programs. Successful completion of the requirements for the Designated Emphasis in International and Community Nutrition will be recognized on the student s diploma at the time of awarding the doctoral degree. For example, students of the Graduate Group in Nutritional Biology will receive a Ph.D. in Nutritional Biology with emphasis in International and Community Nutrition. F. Student Advising Working with the graduate advisers in the affiliated PhD programs, the Chair of the DE in International and Community Nutrition oversees students academic progress towards fulfilling the DE requirements. Students should communicate with the adviser quarterly to consult about their selection of courses. The PICN member on the Dissertation Committee helps students develop dissertation topics that examine an issue related to the designated emphasis. The Chair of the DE in International and Community Nutrition confirms for Graduate Studies and the student s PhD program that all DE requirements have been met prior to graduation. G. Impact on Time to Degree The impact of the requirements for the Designated Emphasis on the normative time taken for completion of the doctoral degree will vary according to the respective doctoral program and the individual student's previous training. As shown in Appendix C, the additional requirements for the DE range from 8 to 20 credits, thereby generally increasing total normative time by less than two academic quarters. In some cases, elective course requirements for the primary graduate group may be fulfilled by courses that are also required by the DE. If applicable, this may result in a reduced impact on normative time.
