1 Spring 2016 The University of Vermont Department of Nutrition and Food Sciences Tuesdays & Thursdays, 11:40 12:55pm Rowell 118 Professor: Farryl Bertmann, PhD, RDN, CD Office: 253 MLS Carrigan Wing Office Hours: Fridays 9:30am 12:00pm Teaching Assistant: Gabby Headrick, BS NFS 262: Community Nutrition Office: MLS Carrigan Wing Office Hours: By appointment Overview Students preparing for careers in nutrition and dietetics are expected to gain competency for professional practice in a wide range of disciplines and be able to effectively translate nutrition sciences into plain language for people who want to change their eating behaviors and energy expenditure to improve their health. This course will expand and refine competencies in the area of U.S. public health nutrition policies, programs and practice with emphasis on community nutrition program planning including needs assessment, intervention development and evaluation. Goals This course will increase and refine the student s preprofessional experience in preventing disease and improving the health, nutrition, and well-being of individuals and groups within communities. Materials Required: Iclicker Plus Student Remote Recommended but not required: Boyle MA, Holben DH. Community Nutrition in Action: An entrepreneurial approach. 6 th ed. Belmont, CA: Wadsworth Cengage Learning Milestones Program Planning due February 9 th Legislative Letters due February 25 th Epidemiology Assignment due March 21 th Full Report due April 3 rd Community Needs Assessment for peer- review due April 28 th Community Needs Assessment Final Report due May 9th Learning Objectives By the end of this course, students will be able to: 1) Develop and explore ethical decision making in preventive nutrition, 2) Describe nutrition policy initiatives, 3) Discuss the role of government in public health nutrition, 4) Calculate basic epidemiologic analyses, 5) Differentiate between the various nutrition-assistance programs, 6) Choose the most appropriate health behavior theory for an intervention, 7) Explain media s influences on nutrition, 8) Gain a deeper understanding of Vermont communities by developing a Community Needs Assessment, 9) Summarize program design, implementation, and evaluation, and 10) Increase their professional and technical writing skills in the area of community nutrition.

2 Evaluation The course grade is based on 9 components; weekly round- up assessments; BlackBoard reflection, in- class engagement; program planning group activity; legislative letters, epidemiology assignment; the debate; two iterations of a community needs assessment report. In-Class Engagement Every lecture (except the first week of classes) you will have the opportunity to earn 2 points for engagement. You earn these points by actively using your registered Iclicker. Dr. Farryl will ask 2-5 Iclicker questions throughout the lecture and during the debates, two of these Iclicker questions will randomly count towards In-Class Engagement points. It is your responsibility to use your Iclicker, ensure the Iclicker is working every lecture, check your battery regularly, and remain engaged and present during the lecture. You may NOT use an Iclicker registered to another student; any contest of your participation points will be denied. Dr. Farryl has built in 4 free In-Class Engagement points; DO NOT ASK FOR MORE!

3 No Late Assignments or Assessments Weekly round- up assessments, BB reflections and the epidemiology assignment are due by noon Eastern Time on the following Monday of the assigned week. No make- ups for in- class engagement. The Program Planning Group Activity and Legislative Letters are due at the end of class on the due date listed. The debate is due at the beginning of class on the date assigned. The Community Needs Assessment Full Report is due by mid- night Eastern Time on the due date listed. No excuses please, no late assignments except when Life Happens Each student has a One-time extension for up to 3 calendar days. This extension can only be used on the following assignments: Program Planning Activity, Legislative Letters, the Epidemiology Assignment and The Community Needs Assessment Full Report (NOT THE FINAL REPORT). Students can only use this ONCE the whole semester. No excuse necessary; write in all capital letters LIFE HAPPENS in the assignment subject line and send an request before the deadline! For the Epidemiology Assignment and The Community Needs Assessment Full Report submit a blank assignment on BlackBoard before the due date as this is imperative for rubric grading. the finished assignment to both Dr. Farryl and Gabby Headrick. If the student does not complete and the assignment within 3 calendar days, the grade will automatically become a zero. Dire Emergencies These emergencies must be documented and are subject to both my approval and the CALS Dean s approval. In such emergencies, the student should contact me within twenty-four hours of the scheduled assessment/due date, unless it is physically impossible for her or him to do so, in which case the student should be prepared to document that impossibility. The Community Needs Assessment Final Report will not be accepted late. Classroom Expectations We expect you to come to class on time, stay for the whole class, refrain from side conversations, and be courteous to Dr. Farryl, the TA and your fellow students. Silence your phones or any other form of technology before class. Texting, using Facebook and surfing the Internet during class is not conducive to learning. If this type of behavior becomes disruptive, the TA or Dr. Farryl will ask you to leave class for that lecture period. You may think you can multi-task during class; you can t. If you know you will be tempted to engage in these distracting activities during class, we suggest keeping your computer closed and using a notebook and pen or pencil to take notes. An outline of class lectures will be posted on the course website at the beginning of class. The notes will help you follow along in class but they are not complete. You must be in class to get the full material. If you miss lectures, you are responsible for finding out what you missed from a fellow student. The TA and Dr. Farryl do not provide class notes.

4 Other Important Information Contacting Dr. Farryl My preferred mode of communication outside of class is a face-to-face meeting or . If you would like to sit down with me, I offer office hours every Friday from 9:30am-12:00pm. Supporting your success is my priority; do not hesitate to schedule a meeting through . I harvest my messages daily but depending on the ebb and flow of the semester, it could take up to 48 hours. Student Learning Accommodations In keeping with University policy, any student with a documented disability interested in accommodations should contact ACCESS, the office of Disability Services on campus. ACCESS works with students to create reasonable and appropriate accommodations via an accommodation letter to their professors as early as possible each semester. Any assignment negotiations must take place BEFORE the assignment due date. Contact ACCESS: A170 Living/Learning Center; ; access@uvm.edu; UVM s policy on disability certification and student support: Athletic-Academic Conflicts Students participating in inter-collegiate athletics should plan their schedules with special care, recognizing the primary importance of all of their University academic responsibilities. Each semester, members of UVM varsity and junior varsity teams are responsible for documenting in writing any conflicts between their planned athletic schedule and the class schedule to their instructors by the end of the second full week of classes. Students and instructors should then discuss potential conflicts between course requirements and intercollegiate competitions. When an unavoidable conflict exists, the student and instructor should seek a resolution that permits the student to address the course requirement and participate in the athletic competition. The instructor has final authority on this matter. Religious Holidays Students have the right to practice the religion of their choice. Each semester students should submit, in writing to their instructors, by the end of the second full week of class, their documented religious holiday schedule for the semester. Faculty must permit students who miss work for the purpose of religious observance to make up this work. Academic Integrity The policy addresses plagiarism, fabrication, collusion, and cheating. 5 FERPA Rights Disclosure The purpose of this policy is to communicate the rights of students regarding access to, and privacy of their student educational records as provided for in the Family Educational Rights and Privacy Act (FERPA) of UVM Writing Center The University provides a Writing Center in 105 Bailey/Howe Library. The center can help make writing less stressful by providing students with a tutor and writing resources.
