Add the broth and let come to a boil over high heat.

Pour some of the maple cream on top of the berries and then some of the pudding on top of the cream. Repeat until all of the cream and pudding is used up. Place the remaining berries on top of the parfait and serve. Add apples. Spoon the batter 2/3 full into the prepared muffin tins. Bake for minutes, until a toothpick inserted in the center comes out clean. Mexican Cornbread 1 package Wellness Forum Health Cornbread Mix 1 tablespoon minced jalapeno pepper 1/2 cup minced onions 1 tablespoon chili powder 1 cup frozen corn 1 and 1/2 cups soymilk 3 tablespoons minced green pepper 1/4 cup unsweetened applesauce Spray a 9 x 13 casserole pan or use a non-stick pan. In a medium skillet, saute onions, corn, green pepper and jalapeno pepper until tender, about 4-5 minutes. Drain excess liquid. Add chili powder and stir to combine. Place cornbread mix in a bowl and combine with soymilk, applesauce and onion mixture. Spoon the batter into the prepared pan. 6 Taco Corn Pie 1 large onion, diced small 4 cloves garlic, minced 1 package frozen corn 1 15-ounce can black beans, drained and rinsed 1 cup tomato puree 1 package Wellness Forum Health Taco Taco Mix, prepared according to package instructions 1 cup sliced black olives 1/2 teaspoon sea salt 1 Wellness Forum Health Corn Bread Mix Preheat oven to 350 degrees prepare the cornbread mix according to package instructions but do not bake it. Saute the onion in a large sauce pan for 7 to 8 minutes, until the onions are tender and start to brown. Add water 1 to 2 tablespoons at a time to keep the onions from sticking to the pan. Add the garlic and cook another minute. Stir in corn, black beans, tomato sauce, olives, prepared Taco Taco, and salt. Bring to a boil and let cook 2 minutes. Pour into a 9 x 13 casserole pan. Pour the prepared cornbread batter over the taco mixture. Bake for 40 minutes until top is golden brown and a toothpick inserted in the cornbread comes out clean.

7 Wellness Forum Health Couscous Vegetable Pilaf Couscous Pilaf Stuffed Baked Zucchini 1 package Wellness Forum Health Couscous Vegetable Pilaf prepared according to package instructions 2 cups sliced almonds 3 large zucchini sliced in half lengthwise salt to taste 1 28 ounce jar tomato sauce Scoop out the flesh of the zucchini halves. season the zucchini with salt and pepper. Set aside. Stir the almonds into the prepared pilaf. Fill each zucchini half with some of the pilaf. Place on a baking sheet and bake for minutes until the zucchini is tender. Serve with the tomato sauce. Couscous Burgers 1 package Wellness Forum Health Couscous Vegetable Pilaf 1 and 1/4 cup water 1/4 cup Bragg Liquid Aminos 1/2 cup chopped onions 1 package silken tofu, pureed in a food processor 1/2 cup whole wheat bread crumbs In a saucepan, combine water, Bragg s and Couscous mixture. Bring to a boil, cover and remove from heat. Let stand for 5 minutes or until liquid is absorbed. Sauté onions for 8 minutes until they are lightly browned. Add water 1 to 2 tablespoons at a time to keep the onions from sticking to the pan. Combine couscous mixture, tofu, onions and bread crumbs in a large bowl. Form into burgers and place on a non-stick baking sheet or one covered with parchment paper. Bake for 10 minutes. Turn burgers and bake for another 10 minutes. Serve on whole grain buns with all of the usual trimmings. Couscous Stuffed Peppers 6 green bell peppers 1 Wellness Forum Health Couscous Pilaf prepared according to package instructions 1 Wellness Forum Health Sausage Mix, prepared according to package instructions 2 15-ounce jars tomato sauce Preheat oven to 375 degrees. Cut the tops from the green peppers and discard the seeds and ribs. Steam peppers, cut side down, on a rack in a pot with one inch of boiling water, covered for 10 minutes. While the peppers steam, combine the Couscous Pilaf, Sausage and 1/2 jar of tomato sauce. Arrange the peppers, cut side up, in a non-stick baking dish just large enough to hold them. Sprinkle with salt and pepper and fill with the couscous mixture. Pour remaining tomato sauce over peppers. Bake for 20 minutes.

8 Wellness Forum Health Curried Lentils and Rice Curried Lentil, Rice, Squash and Apple Soup 1 package Wellness Forum Health Curried Lentils and Rice 1 large butternut squash, peeled and cut into 1 inch cubes 2 granny smith apples, peeled and cut into 1/2 inch cubes chopped cilantro for garnish Prepare the lentils and rice mix according to package instructions using 7 cups of water instead of six. When the mix comes to a boil add the squash and apples and let cook for 45 minutes, until the lentils are tender. Serve with the chopped cilantro. Lentil Rice Croquettes with Curried Tomato Sauce 1 package Wellness Forum Health Curried Lentils and Rice 2 tablespoons EnerG Egg Replacer whisked with 4 ounces water then set aside 3/4 cup diced carrots 3/4 cup diced celery black pepper and sea salt to taste 3 cups whole wheat bread crumbs 1 15-ounce can tomato sauce Place the lentils and rice in a medium pot with carrots and celery (set aside spice packet). Add water to cover by three inches and bring to a boil. Cover and cook on med-low heat for minutes until tender. Drain off the excess liquid. Puree 1/2 the mixture in a food processor. Add the lentils to a bowl with the egg replacer, salt and pepper and 1/2 of the bread crumbs. Stir to combine well. Let the mixture cool to room temperature. Using a small ice cream scoop, shape the lentil mixture into balls and roll in the remaining bread crumbs. Place balls on non-stick baking sheet. Bake at 350 degrees for 20 min. turn and bake for another 15 min. While the croquettes are baking, place the tomato sauce in a sauce pan. Heat over medium heat. Add some of the curry spice packet to taste. Heat 5-7 minutes until warm through. Serve croquettes with the tomato sauce. Curried Lentils and Rice Casseroles All of the following suggestions use Wellness Forum Health Curried Lentils and Rice as a base. Prepare the Curried Lentisl and Rice according to package instructions adding the variation of choice when the water comes to a boil. Variation #1: Add 1 pound extra firm tofu, cubed, when the spice mixture is added to the lentils and rice. The tofu will absorb the flavor of the spice packet. Taste for salt and add more if needed Variation #2: Add chopped carrots, boiled new potatoes and stewed tomatoes to the mix. Taste for salt and add more if needed Variation #3: Add spinach, zucchini and asparagus to the mix. Taste for salt and add more if needed

Combine crust ingredients and pat into a lightly sprayed pie pan. Filling: 1 12 ounce package extra firm silken tofu 1 Tablespoon Sucanat 2 teaspoons vanilla 1 cup chopped pitted dates 1/2 cup maple syrup 1 cup dried cranberries, 1/4 teaspoon cinnamon chopped Puree tofu, vanilla, maple syrup, cinnamon and Sucanat. Stir in dates and cranberries. Pour into pie crust and bake for min. Cool and serve. Chocolate Brownies 1 12-ounce package extra firm silken tofu 1 Wellness Forum Health Chocolate Pudding Mix 2 teaspoons vanilla 1 cup Wellness Forum Health Gluten-Free QuickMix 1/2 cup vegan chocolate chips 1/2 cup walnuts, chopped Puree the tofu, chocolate pudding mix and vanilla. Blend in the QuickMix Stir in chocolate chips and walnuts. Fold into a lightly sprayed 8 x 8 pan and bake for 40 minutes, or until a toothpick inserted in the middle comes out clean. Crepes 1 cup Wellness Forum Health Gluten-Free QuickMix 1 and 3/4 cup water Combine water and QuickMix being careful not to over-mix. Batter should be thin. If it is not, add another 1/4 cup water to the batter. Heat a small non-stick skillet over medium heat. Pour 4 tablespoons of the batter into the pan and cook 1 and 1/2-2 minutes Turn and cook the other side for 1 minute. Combine applesauce mix, granola and applesauce in a large bowl. Fold into pan. Bake minutes until a toothpick inserted in the middle comes out clean.

10 Granola Berry Parfaits 2 cups Wellness Forum Health Granola Cereal 1 recipe Maple Cream Filling (Follows) 1 recipe Macerated Strawberries (Follows) Prepare the Maple Cream and the Macerated Strawberries. Place 1/4 cup of granola in each of 4 parfait glasses. Top with a dollop of maple cream. Follow with another 1/4 cup granola and more of the maple cream. Top off with a large spoonful of the macerated strawberries. Maple Cream Filling 1 cup silken tofu 1/2 teaspoon cinnamon 1/2 teaspoon vanilla extract 1/4 cup maple syrup Blend together all ingredients in a food processor until smooth. Refrigerate. Macerated Strawberries 2 pints fresh strawberries, washed, trimmed and sliced 1/2 cup sugar -- more or less to taste In a medium bowl, combine the strawberries with the sugar and let sit until the berries release their juices. Wellness Forum Health Ground Meat Mix Tempeh Skillet 1 package Wellness Forum Health Ground Meat Mix, prepared according to package instructions 1 16-ounce jar salsa 1 15-ounce can red kidney beans 1 cup uncooked quick-cooking rice 3/4 cup water 3 Tablespoons chopped green peppers 1 cup shredded soy cheddar cheese In a large skillet, place the prepared ground meat. Top with salsa, undrained beans, uncooked rice, water and green peppers. Cover and simmer stirring occasionally for 20 minutes. Top with cheese, cover and heat until cheese melts. Almond Tempeh Spread 1 package Wellness Forum Health Ground Meat Mix 1 cup raw almonds 2/3 cup sliced green olives 4 Tablespoons dairy free sour cream 5 Tablespoons vegan Mayonnaise 2 Tablespoons chopped fresh basil salt and pepper to taste Prepare ground meat according to package instructions. Set aside until cool. Toast the almonds in a dry skillet or bake at 350 degrees for 10 minutes. Chop almonds coarsely. Mix with ground meat and remaining ingredients. If mixture is not moist enough, add more of the vegan mayonnaise.

11 Tempeh Salad This really does taste just like tuna salad!! 1 package Wellness Forum Health Ground Meat Mix, prepared according to package instructions and set aside to cool 3 stalks celery diced small 1 small yellow onion, diced small 1 cup vegan mayonnaise 1/2 cup sweet pickle relish Combine all ingredients in a bowl. Refrigerate until cool.

12 Wellness Forum Health Herbed Polenta Mix Polenta with Mushroom Ragu 1 Wellness Forum Health Herbed Polenta Mix, prepared according to package instructions 2 cups onion, diced 2 cups diced red pepper 16 ounces sliced mushrooms 2 cloves garlic, minced 1 28-ounce can crushed tomatoes 1 bay leaf 1/4 cup chopped basil salt and pepper to taste In a large saucepan, saute the onion, red pepper and mushrooms for 7 to 8 minutes until the onions start to brown. Add water 1 to 2 tablespoons at a time to keep the vegetables from sticking to the pan. Add crushed tomatoes, bay leaf, salt and pepper, and stir well to combine. Cover, reduce the heat to low and simmer for minutes or until the stew has thickened. Add the basil and simmer an additional 5 minutes. Serve over warm polenta. Baked Polenta Casserole with Mushroom Sauce Ingredients: 1 Wellness Forum Health Herbed Polenta Mix 3 cups water 2 cups soy milk 1 small yellow onion, chopped 3 cloves garlic, minced 16 ounces mushrooms, sliced 1 teaspoon dried thyme 1 cup soy milk 2 cups shredded soy mozzarella sea salt and pepper to taste In a large pot, combine soy milk and water and bring to a rapid boil. Whisk in polenta mix and continue whisking until the mixture thickens to the consistency of rice pudding. Remove from heat. Using a large knife or spatula, spread the polenta mixture in a 9 x 13 casserole pan, spreading it to the thickness of about 1/2 inch. Allow it to cool and harden, about 20 minutes. Cut into squares. Saute the onion and garlic in 3 Tablespoons water until tender. Add the mushrooms and thyme and saute for another 5-6 minutes. Stir in 1 cup soy milk and allow the mixture to barely reach a simmer. Spray another 9 x 13 casserole dish. Place 1/2 the polenta squares in the prepared dish. Spread half the sauce in a layer over the squares, then sprinkle with half the cheese. Place another layer of squares over the cheese. Cover with the remaining sauce and cheese. Cover and bake for about 20 minutes. Let sit for 10 minutes before serving.

13 Wellness Forum Health Instant Soup Mix Spinach-Rice Soup 8 cups water 1 Wellness Forum Health Instant Soup Mix (4 serving size) 1 cup wild rice 1 package frozen spinach sea salt and black pepper to taste Bring the water to a boil in a large pot. Add soup mix and rice, and bring the mixture back to a boil Reduce the heat to medium and cook for 20 minutes. Add the spinach, cover, and simmer for 15 minutes, stirring frequently. Season with salt and black pepper and cook another 5 minutes. Scalloped Potatoes 1 package Wellness Forum Health Instant Soup Mix (4 serving size) 1 package Wellness Forum Health Not Cheese Sauce 4 large baking potatoes 1 teaspoon dried thyme Bake potatoes in a 350 degree oven for 50 minutes or until al dente. Prepare soup mix using 2 cups water instead of 4 and prepare cheese mix according to package instructions. Combine the cheese sauce and the instant soup mix in a large bowl. Set aside. Slice the potatoes thinly. Place a layer of potatoes in the bottom of a 9 x 13 inch baking dish. Pour some of the prepared sauce over the potatoes. Repeat this layering until all the sauce and potatoes are used up. Bake in a 350 degree oven for minutes until the top starts to brown. Potato Leek and Corn Chowder 1 Wellness Forum Health Instant Soup Mix (4 serving size) 2 large leeks, sliced (white parts only) 1/2 teaspoon dried thyme leaves 1 10-ounce package frozen corn 2 large baked potatoes, peeled and diced 4 cups water In a large pot cook the leeks in 4 tablespoons water until tender, about 8 minutes. Add the instant soup mix, 6 cups water, the thyme, corn and potatoes. Bring to a boil. Lower the heat and let simmer for minutes. Serve hot.
