2 1 THE 34-CREDIT MASTER S PROGRAM IN NUTRITION AND DIETETICS WITH A CONCENTRATION IN FOODS AND NUTRITION (HOND-FNU) INTRODUCTION The Nutrition and Dietetics master s degree program with a concentration in Foods and Nutrition is for those who have credentials in health professions (RD, RN, MD, DDS, CSW, or RPh), and are interested in advanced academic training in this field but who do not intend to practice nutrition and dietetics. OTHER PROGRAM OPTIONS The material in these and the following sections applies only to the master's degree concentration in Foods and Nutrition (HOND-FNU). This program does not prepare students to be Registered Dietitians, or to otherwise practice the profession of nutrition and dietetics. If you wish to practice as a nutritionist, it is strongly recommended that you apply to the program in Clinical Nutrition (HOND-CNU). For information about Clinical Nutrition, which does lead to the R.D. credential, request the handout for HOND-CNU (40 credits). For information about NYU's clinical dietetics training programs which are housed within the Clinical Nutrition master's program, request the handouts on the NYU Internship and the Bronx VAMC/NYU Dietetic Internship/Master's Program. Students who already are dietitians or R.D.-eligible at the time of matriculation, and who would like advanced clinical dietetics training, should request the handout for HOND-CNU (34-credits). For additional information, call the Department to make an appointment with a program advisor. ADMISSIONS Applicants must have at least a bachelor's degree from an accredited institution. For specific questions on admissions, please call the Steinhardt Graduate Admissions Office at or visit The Bulletin contains detailed information for students with U.S. or international undergraduate credentials on tuition and living costs, non-matriculated status, and financial aid. The deadlines for application to the M.S. program are November 1 for the spring semester and February 1 for the fall semester. Note, however, that deadlines for application to Dietetic Internships differ and you must refer to the NYU Dietetic Internship handout for additional information about deadlines. In addition to all general application requirements, applicants to master s degree programs in nutrition (HOND) who have non-u.s. credentials must present a course-by-course evaluation of their international credentials. A number of agencies can provide this service; however, NYU Steinhardt recommends World Education Services (WES). Greater detail on the evaluation services and costs may be found at

3 2 FOODS & NUTRITION (HOND-FNU) PROGRAM GOALS The goals of this program are to train students to: 1. Educate individuals and the public on food choices that will optimize health and prevent disease. 2. Apply nutrition principles to health promotion and the prevention of diet-related disease conditions. 3. Monitor trends and issues in the discipline of nutrition, and translate this information into curriculum and training programs. 4. Apply research principles and methods to the examination of current problems in nutrition and health. PREREQUISITES: FOODS & NUTRITION (HOND-FNU) Master's students in Foods and Nutrition (HOND-FNU) must present evidence of competency in all undergraduate courses listed below through prior coursework as determined by a HOND program advisor. If prerequisite coursework is required, these credits must be taken in addition to those required for the M.S. degree. Students who need to fulfill prerequisites do not need to complete them before enrolling in the graduate program. Instead, this Department enrolls students in the Foods and Nutrition master's program to permit registration in undergraduate prerequisite courses. The Prerequisite Sequence Map on the next page should help in planning course sequencing. Please note that any courses that are required as part of NYU s Graduate Didactic Program in Dietetics (DPD see HOND-CNU 40 credit program) can not be taken for graduate credit. Prerequisites include the following NYU courses (or their equivalents taken elsewhere with the prior approval of a HOND program advisor). At least two chemistry courses, with their respective laboratory sessions, must be taken. Exemption examinations are available to qualified students for E Introduction to Foods & Food Science and E Nutrition & Health, depending on eligibility. CURRICULUM This is a 34-credit curriculum for students with bachelor's degrees, and professional credentials in health fields (RD, RN, MD, DDS, CSW, or RPh.) at matriculation who seek advanced academic training in foods and nutrition. [Note: Students who wish to become registered dietitians or who seek advanced clinical dietetics training should enroll in the master's program in Nutrition & Dietetics with a concentration in Clinical Nutrition (HOND-CNU)]. Prerequisites: Students must take or present evidence of competency (through equivalent courses) in General Chemistry, Organic Chemistry, Biochemistry, Human Anatomy & Physiology, Food Microbiology, Nutrition & Health, Nutrition & The Life Cycle, Diet Assessment & Planning, Introduction to Foods & Food Science, and any other prerequisites that may be required for elective courses (see list on page 2). At least two chemistry courses must have been taken with a laboratory. Note: 1. No master's level E33 courses may be taken pass/fail. 2. No courses that are part of the Didactic Program in Dietetics (DPD) may count towards the graduate degree. Research Methods E is a co-requisite for all graduate level courses, except for the Advanced Nutrition Research courses, for which it is a pre-requisite. Please consult with your academic advisor for additional information about course sequence. We especially recommend counseling and statistics courses, but we also encourage students to take one or more courses within an area of interest.
