1 Syllabus ALH 1000 Introduction to Nutrition Fall 2012 Expected Learning Outcomes Upon completion of the course the student will be able to: 1. Understand scientific principles of nutrition across the lifespan. 2. Become acquainted with current scientific findings in the field of nutrition. 3. Explain how nutrition impacts certain disease conditions. 4. Understand how nutrition is related to issues regarding hunger, the global environment, and consumer concerns. Instructor: Christine Foster APN, FNP-BC, MSN, RN Office: B 311-A Office Hours: Mondays - 8 am - 11 am; Wednesdays - 11 am - 2 pm Office Phone: Course Pre-requisite: None - This course is recommended for nursing students, allied health majors, education majors, and pre-professionals. Organization of Course This 3-credit-hours course uses a combination of classroom interaction with active learning processes, multimedia use, and online learning activities. The course will run for 16 weeks. The course organization is as follows: Reading assignments Pre-quizzes done in class alternating with quizzes over same material the next week; Mid-term and Final exams Four group projects over the semester to include library research for annotated bibliographies and outside classroom options Online discussion assignments weekly Class activities including group debates, group presentations, videos, class games, sharing of nutritious recipes for extra credit Required Materials Text: Whitney, E., DeBruyne, L.K., Pinna, K., & Rolfes, S.R. (2011). Nutrition for Illinois Valley Community College. Mason, Ohio: Cengage Learning. This text is available in the college bookstore. The Diet Analysis software is included. Lessons Weekly Discussion Assignments The weekly discussion assignments will be posted each week in Blackboard on Sunday prior to class, and each one will be due the following Tuesday after class on Wednesday the week before by 6:00 pm. Therefore, students will have nine days to complete the assignment. Once the deadline has passed the assignment will no longer be available. If students miss an assignment

2 they will not be able to go back to complete it. Students must post in the Discussion Board area an Initial post using the Thread as the answer to the discussion assignment. Citations to references are encouraged and APA format is desired. For students who do not know how to submit an assignment in the Discussion Board they can get help from the Help Desk to set up an appointment for this instruction. Students who do not know how to use APA format may use the resources found in the IVCC Resources through the library of this course or through NoodleBib. Students must then post a response post to at least ONE other student's posting for the assignment. Both the initial post and the response post must be completed by 6:00 pm Tuesdays after class on the previous Wednesdays. Each discussion assignment is worth 10 points or 160 points over the semester. Group Work Students will be randomly assigned to groups at the beginning of the semester. They will be expected to work within the group on four different projects over the semester. These projects involve such assignments including but not limited to: writing an annotated bibliography and presenting in class, interviewing a professional related to the science of nutrition and presenting in class, attending community lectures or outpatient classes on dietary counseling for diabetes and presenting in class, performing a community assessment on nutrition in school cafeterias, etc. The students are allowed to choose their project with approval from the instructor. Each project will be worth 25 points or 100 points over the semester. Pre-quizzes/Quizzes Students will take a pre-quiz over the reading material at the beginning of class and may take the pre-quiz with a study buddy. These pre-quizzes are not graded. The following week the students will again take the same quiz on their own. The quizzes will be graded and are worth 20 points each or 160 points over the semester. The last 8 weeks of the semester, this was revised so that the students take the quizzes in Blackboard. The pre-quizzes are still reviewed in class. Method of Evaluation Students will be evaluated on the basis of total points accumulated from the following: Weekly discussion assignments will be worth 10 points each, for a total of 160 points Group projects will be worth 25 points each, for a total of 100 points. Please refer to the rubric for grading criteria under "Rubrics". Attendance will be taken. Students may be subject to withdrawal after three unexcused absences. If an absence is anticipated, please try to notify the instructor in advance of class. Quizzes will be given in class every other week for 20 points each, for a total of 160 points. Any student caught cheating on a quiz or exam will automatically receive a score of zero for the quiz or exam and may be subject to further disciplinary action at the discretion of the instructor according to the IVCC Student code of Conduct.

3 Submitting a nutritious recipe will add 5 points extra credit; also if the college offers an activity related to nutrition, e.g., "The Edible Car Contest" students will be offered extra credit as deemed by the instructor for all participants. Total possible points = 420 points (without extra credit) Grading Criteria: 90% and over = A (>378 points) 80% and over = B (>336 points) 70% and over = C (>294 points) 60% and over = D (>252 points) <60% = F For students pursuing a career as a health care professional, a "C" letter grade or better must be earned in order to satisfy most program requirements. Student Initiated Withdrawals: Students have the ability to initiate a withdrawal from classes through WebAdvisor. IVCC has the right to rescind a withdrawal in cases of academic dishonesty or at the instructor's discretion. All fields must be completed accurately in order to process the withdrawal. Entering the student ID number serves as the student's electronic signature. Students will receive an upon the receipt of this withdrawal. Students are encouraged to check their schedule on WebAdvisor to be sure their withdrawal was processed. If still on the roster 2 business days after processing the withdrawal request, please contact the Records Office at Inaccurate or incomplete information will result in a failure to complete the withdrawal and the student will be notified via of the need to re-submit the form. Approved withdrawals will be process through the 75% point of the semester. No student withdrawals are allowed past that date (week 12 of a 16-week semester). NOTE: WITHDRAWALS are different from DROPS. For students who drop classes before the tenth day of a regular 16-week Fall or Spring semester, a full refund less the registration fee will be generated. For drops

5 taking place during the summer semester or for classes of varied lengths, the refund period varies according to the length of the class. Tentative Semester Schedule Week 1: August 22 - Read chapters 1 & 2 (Overview & Digestion) prior to class. Print out pre-quiz found in "Pre-quizzes" tab and bring to class - will take with a "Study Buddy". Syllabus will be reviewed in class. Group assignments will take place with group function activity in class, and a "Getting to Know You" activity. Discussion assignment will be due in Blackboard (BB) prior to next class. Week 2: August 29 - Read chapters 3 & 4 (Carbohydrates & Lipids) and take pre-quiz with Study Buddy. Then take 1st quiz in class over chapters 1-4. Watch video, "Forks Over Knives" and complete video questions in class. Break into groups and debate butter vs. margarine? Discussion assignment will be due in BB prior to next class. Week 3: September 5 - Read chapter 5 (Protein) and take pre-quiz with Study Buddy. Debate "How much protein - vegan vs. animal?" in class in groups. Half of Groups to give presentations Discussion assignment will be due in BB prior to next class. Week 4: September 12 - Read chapters 6 & 7 (Energy Balance & Wt. Management) and take pre-quiz with Study Buddy. Take quiz over chapters 5-7. Learn how to do Diet Analysis in class prior to online assignment in BB prior to next class. Watch video, "The Weight of the Nation" and complete video questions in class. Week 5: September 19 - Read chapters 8 & 9 (Vitamins & Minerals) and take pre-quiz with Study Buddy. Group discussion on micronutrients for men & women. Rest of Groups to give presentations. Discussion assignment will be due in BB prior to next class. Week 6: September 26 - Read chapters 10 & 11 (Pregnancy & Childhood) and take prequiz with Study Buddy. Quiz over chapters 8-11 in class. Groups to prepare a school lunch menu in class. Half of groups to give presentation in class. Discussion assignment will be due in BB prior to next class. Week 7: October 3 - Read chapters 12 & 13 (Later Adulthood & Nutrition Care and Assessment) and take pre-quiz with Study Buddy. Rest of Groups to give presentation in class. Discussion assignment will be due in BB prior to next class. Week 8: October 10 - Mid-term exam covering chapters Read chapters 14 & 15 (Nutrition Intervention & Diet-Drug Interactions). Take pre-quiz with Study Buddy; quiz over ch Discussion assignment will be due in BB prior to next class. Week 9: October 17 - Read chapter 16 (Metabolic & Respiratory Stress). Take pre-quiz with Study Buddy. Half of Groups to present. Discussion assignment will be due in BB prior to next class.

Discussion assignment will be due in BB prior to next class. Week 11: October 31 - Halloween! May come in costume if desired! Read chapter 19 (Liver Disorders). Take pre-quiz with Study Buddy. Group debates on pros & cons of alcohol in diet. Rest of Group presentations. Discussion assignment will be due in BB prior to next class. Week 12: November 7 - Read chapter 20 (Diabetes) Take pre-quiz with Study Buddy. Quiz over chapters Speaker planned (Diabetic Educator). Groups to work on carb counting projects in class. Discussion assignment will be due in BB prior to next class. Week 13: November 14 - Read chapter 21 (Heart & Blood Vessels). Take pre-quiz with Study Buddy. Half of Groups to give presentations. Jeopardy game. Discussion assignment will be due in BB prior to next class. Week 14: November 28 (THANKSGIVING VACATION November 21) - Read chapter 22 (Renal). Take prequiz with Study Buddy. Quiz over chapters 21 & 22. Rest of Groups to give presentations. Discussion assignment will be due in BB prior to next class. Week 15: December 5 - Read chapter 23 (Cancer & HIV). Pre-quiz with Study Buddy. Power Point. Group discussions on cancer-prevention diets. Discussion assignment will be due in BB prior to next class.
