We stand behind our products. Up until recently, in-home direct visits were the only way Stainless Steel Waterless cookware was marketed. The prices had to reflect the high overhead of this kind of method. The stainless steel cookware offered in department stores is of inferior quality by comparison. For example, the retail cookware lids did not fit tightly enough to contain the steam and cook waterless, the pots are not stackable, even for storage, also most of the retail cookware pots were (at most) 3-ply bottom and 1-ply sides, plus many other examples. With the advent of the World-Wide-Web, it allows all of the features and presentations to be made electronically, and makes remote or mail-order marketing of waterless cookware feasible. We have been ahead of the curve compared to the other companies, and we have passed on the reduced overhead cost to our customers. Most of the other cookware companies are still operating under the same old model. LIFETIME WARRANTY INFORMATION Limited Lifetime Warranty (A copy of the warranty is packed inside each set.) If this product fails within the lifetime of the original purchaser, it will be repaired or replaced free. This cookware is guaranteed to be free from defects in materials and workmanship. Return defective piece and it will either be repaired or replaced with the same or an equivalent product and returned to you within 30 days. Handles and knobs are excluded from this warranty. This warranty gives you specific legal rights and you may also have other rights, which vary from state to state. This warranty does not cover damage caused by misuse, accidents, or alterations to this product. Warranty is void and the product will be returned to you at your expense if it shows mistreatment in any form. The warranty is limited to repair or replacement of the product. We are not responsible for incidental or consequential damage. Some states do not allow the exclusion or limitation of incidental or consequential damage, so this exclusion may apply to you. If a product listed in this catalog is defective, it can be returned in the original packaging for a full refund. Also, if upon inspection, you are not satisfied with the cookware in any way, you may return it for a full refund, if it is in the original package, and it has not been used. 3 EHC201 - SteamControl TM 17pc Surgical Stainless Steel 7-ply "Waterless" Cookware Set Each piece is constructed of extra heavy surgical stainless steel and guaranteed to last a lifetime. The 7-ply construction spreads the heat quickly and evenly. The pans have a 6.5mm-thick heating surface, and have been designed with induction stoves in mind. The pans have AISI 430 stainless steel in the bottom ply for faster heating with induction stoves. The steam control valve makes "waterless" cooking easy and more healthy because it eliminates the need for grease or oil in cooking. 15 How to cook with "waterless" cookware for healthier foods Cooking With EHC Steam Control TM Cookware Makes Cooking As Easy As 1, 2, 3,... 1) Start cooking on medium heat 2) Listen for the whistle 3) Close the valve and turn the heat down to low or simmer to finis h cooking. The Basic Rules Are Simple Always use the right pan. Select the pan the food will most nearly fill, as air pockets created by "too large for the food quantity" pans will destroy the vitamins, dry your foods and possibly burn. Rinse prepared fruits and vegetables Rinsing in cold water and then draining is important for 2 reasons: removing harmful chemicals and allowing enough water to cling to the food combine with natural juices and cook the food in its own steam. This is waterless, nutritional cooking. Until you get used to this new method, you may want to add several tablespoons of water. Control the heat Always control the heat throughout the cooking process. If you have heat that is too high, it evaporates the steam and your food burns. With waterless cookware, the control is never on higher than MEDIUM heat. Get a vapor seal Start the cooking process on medium heat until the steam control valve whistles in the open position. Then turn the heat down to low or simmer and close the valve. After you do this the lid will form an air-tight heat seal. Watery type food such as apples and cabbage take about three minutes. More solid food such as potatoes and carrots take about five minutes for the lid to seal after turning the heat to low and closing the steam control valve. Don t peek! Resist that urge to peek! When the cover is removed during the cooking period, heat and steam are allowed to escape. This lengthens the cooking time and dries out the food. Eastern Home Products Catalog Page 15

16 You Can Stack Cook With Our Cookware The picture below illustrates how you might cook a roast of chicken with potatoes and carrots in the bottom and a vegetable in the middle pan and another vegetable in the top pan. When stack cooking, remember to always start cooking each individual pan on a burner until you hear the steam valve whistle, then close the valve and stack to finish cooking.
