1 University of Florida Department of Tourism, Recreation and Sport Management LEI 3360: Hospitality Management (Section 7027) Fall 2012 Instructor: Becky Liu Class Hours: Tue 8:30 am 9:20 am Phone: Thur 8:30 am 10:25 am FLG 210 Office: FLG 206E Office Hours: Tue am am Thur am am Course Description This course is designed to introduce students to timely and complex issues within the hospitality and tourism industry from a variety of disciplines or intellectual domains. The learning process will be facilitated through class lectures, videos, guest lectures, in- class discussions, and completion of assignments and exams. Course Objectives Upon completion of this course, students will be able to: Define the fundamental concepts of the hospitality and tourism disciplines Demonstrate an understanding of the size, scope, and inter- relatedness of the tourism and hospitality industries. Describe kinds of operations, organizations, and management practices in the industry. Describe issues and trends that impact or drive the industry. Demonstrate an understanding of the key operational functions of lodging, restaurants and managed services in the hospitality industry. Demonstrate an understanding of clubs, theme parks, and gaming industry. Describe the development of the meetings, conventions and exposition industry. Demonstrate an understanding of the challenges faced by the event industry. Practice communication, team work, interpersonal and critical thinking skills needed to be successful as a manager in the hospitality sector of the tourism industry. Required Texts Walker, John R. (2007). Introduction to Hospitality Management, 5 th ed. Upper Saddle River. New Jersey: Prentice Hall. (ISBN: ) Additional readings will be assigned during the semester. 1
2 Class participation Students are expected to be active and engaged participants throughout the term, be it during questions & answers period during lectures, during in- class case study presentations or during guest lectures. Case Study Eight selected case studies will be used throughout the semester to capture the realities of the industry. The case studies are designed to encourage students to play an active role in the learning process, develop their critical thinking skills, and to be able to present their ideas in a professional fashion. Two of the case studies will be completed during the class through group discussion. The answer sheet should be submitted at the end of the class. For other six cases, students will submit a typed, (typed single spaced, 12 point, Times New Roman, one inch margins, spell- checked) one to two page paper which includes: 1) A summary of the case, 2) A discussion of the basic problem(s) and 3) your recommendation supported by your analysis of the case data and facts. The cases will be discussed in detail on Thursdays and each student is expected to contribute to class dialogue. The case studies will be worth 160 points (20 points per case). Late assignments will not be accepted. Group Project All students will be split into groups of 5 or 6 people in order to complete this assignment. The student group will be responsible for leading one 30- minute presentation on one topic that they find of interest. A list of potential topics will be provided by the instructor. Every topic may be taken by one group only. The discussion leaders are expected to summarize the gist of different sources (e.g. text book, industry magazine, face- to- face interview, etc) from a tourism/hospitality topic you find interesting and relevant to industry issues and challenges. Every group is required to bring to the discussion materials and/or experiences received outside of the textbook. The discussion leaders are expected to come up with three discussion questions for the class to participate in during their presentation session. These questions should and must be designed to generate and facilitate discussions in class. The questions should be relevant and thought provoking and will be used to judge the quality of your discussion leading. After making a presentation every team member is responsible for writing a 2-3- page reflection paper (individually) describing the contribution of this project to the learning in class. The presentation will be worth of 100 points and the reflection paper will be worth of 50 points. And the whole assignment will be worth of 150 points. Exams Examination will; cover all materials from lectures, guest lectures, readings and case studies through the course. Format to be determined. Make-up examinations will not be given. 2

Students are expected to attend the entire class period. Students are responsible for all assigned readings that are scheduled for that class period. Students are encouraged and expected to make positive contributions to class discussions. Homework assignments and projects are to be handed in on the due dates during class. If an extension is needed it should be requested prior to the beginning of the class, and the grade for the assignment will be deducted. Students may not exempt the final exam.
