Role Title: Supervisor Chef Classification Code: WHA 6 LHN/ HN/ SAAS/ DHA: Central Adelaide Local Health Network (LHN) Site/Directorate RAH Division: Operational Services Department/Section / Unit/ Ward: Nutrition & Food Services Role reports to: Chief Food Services Manager Role Created/ Reviewed Date: ROLE CONTEXT ROLE DESCRIPTION Primary Objective(s) of role: The WHA 6 Supervisor Chef contributes to the provision of a high quality, efficient Food Service through the coordination of the Production section, overseeing handling and presentation of food, participation in menu development, food safety, occupational health & safety and quality programs and also by applying trade skills. Direct Reports: The Supervisor Chef is responsible to the Production and Logistics manager and coordinates activities through other noted Production staff including but not limited to cooks, catering attendants, kitchen hands. The Supervisor Chef liaises with other section supervisors, team leaders, managers, the food service dietitian and the other Cooks and ancillary workers The Supervisor chef follows instruction from the Quality, Food Safety and systems co-ordinator in regards to quality and food safety matters. Key Relationships/ Interactions: Internal The Supervisor Chef is responsible to the Chief Food Services Manager and coordinates Production staff (including ancillary staff) and associated activities. Ensure food safety and quality standards are maintained. Contribute to the training of Apprentice Chefs through the supervision and monitoring of their work and providing assistance to help them meet the required competencies. Major Responsibilities Ensure jobs are performed using principles of standard recipes and methods of production and maintaining a liaison with the Executive Chef regarding timely and appropriate quantities required. Ensure goods received are in accordance with the stated orders and specifications and that all ingredients are stored and handled in an appropriate manner. Assist with the ordering, security and rotation of stock. Oversee the handling and presentation of food at all stages of the service. Provide day to day leadership and direction to the production staff. (including ancillary staff i.e cleaners-catering attendants working in production and packing area) Contribute to the proper maintenance of facilities and equipment on a day to day basis, reporting potential problems and issues and following up to ensure problems rectified within acceptable time frames. Contribute to training and staff development in the production area to ensure all staff are capable of carrying out designated work allocated to them. Operation of an effective Food Safety program based on HACCP principles. Monitoring of food quality at all stages of production from raw ingredients to the finished product and the completion of any associated records or validation/verification requirements. Contribute to continuous quality improvement in food production and presentation. Participate in menu review and development including the formation and testing of standard recipes. Undertake as required, any or all of the duties for a Health Ancillary Worker on a lower level. Undertake training and relieve in any position of the same level within the Nutrition and Food Service Department. Assist with staff training orientation, training needs assessment and performance appraisals for Catering assistants and lower level Cooks. Participate in ongoing departmental Food Safety, Quality Assurance programmes and departmental reviews as arranged by the Chief Food Services Manager or delegate. Ensure that staff and other persons in their work areas are safe from risks to health and safety. Carry out responsibilities as detailed in organisational occupational health, safety and injury management (OHS&IM) policies and procedures.
