4 2015 Southwest Showdown Barbecue Competition Event Schedule (Event Layout Maps will be provided) Friday, March 6 5:30 p.m. Main Parking Lot opens for cooking. Teams may arrive, setup, and begin cooking at their convenience. Main Parking Lot Voluntary Compline Service at 9:00 pm in Christ Chapel Saturday, March 7 8:30 a.m. Mandatory Team Leaders Meeting Main Parking Lot 8:45 a.m. Organizers Walk Through and Blessing of the BBQ Pits Main Parking Lot 10:30 p.m. Festival Begins! Live Band! Activities for Kids! Cooking Pits in the Main Parking Lot Activities & Music on the Seminary of the Southwest Mott 12:00 p.m. Judging for Ribs Judges Table 12:30 p.m. Judging for Brisket Judges Table 12:45 p.m. BBQ Festival Continues! Live Band! Side Dishes Provided! Beer Tent Come and sample the teams BBQ and vote for a People s Choice winner! Seminary of the Southwest Mott 1:00 p.m. Results Announced

6 2015 Southwest Showdown Barbecue Competition Official Rules and Regulations 1. The entry categories are: 1) Beef Brisket, 2) Pork Ribs (St. Louis Style or full Spare Rib only. Baby Back Ribs, Country Ribs, and Beef Ribs will be eaten, but not judged). We encourage you to consider the origin of the meat you choose to cook. Although you will not be awarded extra points, please consider using ethically raised and slaughtered animals. The cost is more, but the benefits for all God s creatures are innumerable. 2. Entries will be judged according to tenderness and taste. No points will be awarded for appearance, although attention to appearance is encouraged. For judging, a to go container (provided by the organizing students) of six distinguishable pieces of meat must be brought to the judging area (see event schedule & map) by the appointed time. Judging for ribs will be 12:00pm and judging for brisket will be 12:30pm. The meat should not be sauced or altered in any way after it is cut, and although entrants may provide a sauce on the side, the sauce will not be considered in judging. 3. Gas and electric are not permitted for sustained cooking, but may be used to light coals, etc. 4. Teams should be prepared to provide portions of their barbecue for guests at the party immediately following judging, during which guests will vote for a People s Choice winner in each category. 5. All meat must be provided by teams and kept according to health code standards. No supplies for cooking (grills and smokers, tables, outdoor shelters in case of inclement weather, etc.) will be provided for teams each team must bring their own. In addition, teams must provide their own first aid. All teams must provide their own canopy (Per Texas Health Department). 6. All entrants must be present onsite (501 East 32 nd St., 78705) and setup by 8:30am on Saturday, March 7. The parking lot in which the cooking will take place will be open for setup as early as 5:30pm on Friday, March 6. Entrants can begin cooking as soon as they have setup. 7. All teams should bring their own water. Water and tea will be provided between the hours of 8:00am and 2:00pm only. Restrooms will be available throughout the allotted cooking time. Seminary policy states that only beer and wine are allowed on campus. Consumption of alcohol should be done responsibly. 8. Fires must be put out, equipment removed, and the cooking area must be thoroughly cleaned before teams depart. 9. All team members and persons within team cooking boundaries must sign a waiver (attached). 10. The student planning team for this event reserves the right to augment rules and regulations as necessary. 11. Remember, this event is for charity. 9 !!!! 2015 Southwest Showdown Barbecue Competition Waiver of Liability I, the undersigned Participant, assume all risks associated with participating in this event, all such risks being known and appreciated by me. Having read this waiver and knowing these facts, and in consideration of your accepting my entry to participate in the 2015 Southwest Showdown Barbecue Competition (herein after the Event ) to be held on March 7, 2015 in Austin, Texas, I, intending to be legally bound, do hereby for myself, my heirs, my executors and administrators agree as follows: 1. I do waive, and forever release Episcopal Diocese of Texas and Seminary of the Southwest and their trustees, executive officers, employees, and their heirs and successors, of any and all rights and claims for any damages and liabilities of any kind arising out of my participation in the Event against all persons, entities and agencies involved with promoting and holding the Event, including but not limited to, The Episcopal Seminary of the Southwest, the Episcopal Diocese of Texas, the individual members of the group of organizing students, all sponsors, volunteers and vendors of the event, their agents, successors, representatives and assigns even though that liability may arise out of negligence or carelessness on the part of the persons named in this waiver. 2. I assume the risk of all bodily injuries, including death, resulting there from, and personal injuries to me and damage to and loss of my property, including loss of use thereof and any other indirect or consequential damages, resulting directly or indirectly, wholly or in part, from my participation in the Event and while traveling to and from the Event. 3. I hereby agree, for myself and/or for a minor under the age of eighteen for whom I am signing, to indemnify, defend, and hold the entities named above harmless from and against any and all claims, liabilities, losses and damages, costs, expenses (including attorney s fees) judgments and penalties arising out of any of my, and or said minors, acts or omissions to act. 4. I understand that the Event reserves the right to use any and all participant s names and/or likeness with regard to promotional and/or advertising materials. 5.
