1 CULINARY ART SHORT PROGRAM Welcome to the most interesting and rewarding Italian Culinary Arts Short Study Abroad programs offered to university and college students. Marco Polo specializes in blending classroom lesson, with kitchen experience and culinary in-field tours to create expertise, knowledge and memories for the students. Similar to our semester program offers to Universities, the Marco Polo Culinary Italian Short Study Abroad provides the students with 15 full days of immersion in Southern and Northern Italian culture and cuisine. Our program not only creates a deeper knowledge of Italian cuisine and an impressive facet for the résumé, but also an international experience you can use, and will never forget. Students will experience local culture, learn and prepare distinct dishes, visit producers and learn ancient techniques while staying in three different areas of Italy. The diversity of this program, unlike any other, allow students a much more complete knowledge of Italian living and food than could be achieved from staying in a single location. 2 MARCO POLO INSTITUTE CULINARY SHORT PROGRAM OF SELECTED REGIONS OF ITALY Northern and Southern Italian Mediterranean Cuisines (26 hours cooking class) Course Description: Students will learn to prepare, taste, and evaluate traditional, Southern Mediterranean (Apulia region) and Northern Italian (Emilia-Romagna region) regional dishes. A strong emphasis will be placed on ingredients, flavours profiles, preparations, and techniques representative of the cuisines of Italy and its regions. Field trip into the Italian traditions (32 hours) Southern and Northern Italian Vineyard and wine producers Apulia Olive Oil : the tradition and technique to grove and harvest the olive - visit to olive oil producers Parmigiano Reggiano The prince of cheeses. Its nutritional content makes it a wholesome food-- highly digestible and versatile. Prosciutto di Parma In Parma and elsewhere in Italy, a typical serving of Prosciutto di Parma consists of three or four slices draped artfully on a plate with bread and perhaps a glass of dry Malvasia, the slightly sparkling white wine of the region.
