2 PREVENTIVE MAINTENANCE Sandwich Unit: Proper Operation Turn on at least 45 minutes before loading Load only pre-chilled food F Move quickly from walk-in to sandwich unit Do not exceed the chill line on the pans Stir cold product at least once per hour Remove food, turn off unit at night Maintenance Condenser should be cleaned every 3 months Unplug condensing unit Remove 4 screws from panel (if applicable) Remove panel Clean condenser with vacuum or soft brush making sure not to bend fins Reattach panel On newer units panel can be removed without tools Remove four screws from louvered panel with straight head screwdriver. Clean condenser with vacuum. or soft brush. Thermostat Adjustment Setting of 1 Setting of 4 ½ Left 0 F - Right 20 F
3 Refrigerated Back Bar: (RUF 48) Proper Operation Load only pre-chilled food Keep food covered Keep door openings to a minimum Maintenance UNPLUG UNIT BEFORE SERVICING Quarterly Filter To change filter, pull the filter out from the lower left front corner of the unit through an access hole in the kick plate. A filter may be used twice. If only half of the filter has dirt on the surface, you may rotate the filter to use the other half. However, if both sides have been used then replace with a new standard 24 x10 x1 furnace filter. Condenser The unit must be pulled away from the wall to clean the condenser. The condenser is located on the bottom, right hand side of the unit. Remove condenser panel by lifting up. Clean the condenser with a vacuum or soft brush be very careful not to bend fins, and then replace cover. CAUTION: Cover must be in place for proper operation of unit. Condensate Drain Check the condensate drain tube for obstructions and clean as necessary. The condensate drain is the clear tube located on the back of the unit. Door Gasket Inspect the door gasket for proper sealing with the doorframe, replace as necessary. Pull filter from left side of unit. Replace with standard 24 x 10 x 1 furnace filter. Remove cover from condenser. Condensate Drain

5 PREVENTIVE MAINTENANCE Proofer/Oven Preventative Maintenance Weekly Wipe down the interior and exterior of the proofer oven with warm water and mild detergent using a soft cloth. Ensure all soap is rinsed from the oven and proofer surfaces and water pan to avoid flavor transfer to the bread. Open the proofer door and run the proofer with the heat on for at least 30 minutes to dry it out. Twice Monthly Unplug poofer, wait 10 minutes, remove the four screws from the bottom panel in the proofer cabinet, then remove the panel from the bottom of the proofer. Wipe up any excess water that has accumulated in the bottom. Replace panel and tighten screws. Monthly Check door handle screws for tightness. Quarterly Check the door gasket seal on the oven and proofer for leaks. See section on Door Adjustments and Gasket Maintenance in your oven manual for help. Check calibration of thermostats. See section on Oven and Proofer Temperature Check in your oven manual for help. Proofer and Oven Door Handle One of the Preventative Maintenance tasks on the Duke Proofer Oven that must be performed on a monthly basis is checking the door handle screws for tightness. For customers that must periodically tighten the Oven and/or Proofer door handle screws, we recommend replacing them with new door handle screws that include a Nylok Nytemp nylon patch. This high temperature screw lock material will help maintain the tightness of the handle to the door. 6 Door Gasket Leak Adjustments: The doors should be checked for leaks every three months. The adjustment can be made by following the instructions below. If the door gasket is damaged, or compressed permanently, it should be replaced. Call Duke Manufacturing Co. at to order a new gasket before making adjustments. 1. With the door closed, remove the hinge covers with a screwdriver and loosen the six screws that hold the hinges to the door. See FIG 1. Adjust the door position by moving the door frame in or out to seal any gaps between the gasket and the oven front. See FIG 2. OVEN FRONT DOOR GASKET FIGURE 2 IMPORTANT!!! Be careful not to compress the gasket too much, it will cause the door to bind up on the hinge side. 2. When the door is positioned, tighten the hinge screws 3. Repeat the same on the Door Handle Side. 4. TO CHECK FOR GAPS To check the adjustment, close the door with a dollar bill between the gasket and front of the oven. You should feel resistance when you try to pull the dollar bill out with the door closed. Do this check in several places and readjust the door if necessary.
7 OVEN AND PROOFER TEMPERATURE CHECK If the oven or proofer temperature calibration seems to be wrong, it can be checked before a service call is made. It is important to follow the correct procedure to get an accurate reading. If the calibration is off it is recommended that you first call Duke Manufacturing Co. and talk to the service department before you schedule a service call. Calling Duke first can save you time and money by eliminating other problems before a service call is made. The most important concern with temperature measurement is the accuracy of the thermometer and the location in the oven cavity. Duke recommends an electronic temperature meter with a wire thermocouple. 1. Place the thermocouple at the geometric center of the oven cavity. It can be fastened to the center of the middle wire shelf. 2. Start the oven and set the temperature control for 350 follow the oven to pre-heat for at least 45 minutes. 3. While watching the heat light on the control panel, note the maximum and minimum temperatures through several cycles. 4. The average temperature of several cycles is the calibration temperature. It is normal for this temperature to have a variance of +/- 10 F. 5. The same steps can be used to check the proofer temperature. The temperature control should be set for 105 F and the normal variance is +/- 5 F. 6. Loosen the small allen set screw on the side of the knob. Adjust knob to the calibration temperature reading and tighten setscrew. Use the same procedure for the Proofer.
