BRIEF BIO: Dr. Angel F. Méndez Montoya, holds a B.A. in dance, an M.A. in philosophy, M.A in theology, and M.Div., and a ph.d. in philosophical theology from the University of Virginia. He wrote his dissertation at Cambridge University (UK) as a scholar in residence, and his work was published in 2009 by Wiley-Blackwell, Oxford, UK, under the title, The Theology of Food: Eating and the Eucharist.
