2 The Scholarship, Grant & Internship for Professional Development Donor Program The Culinary Trust gives culinary professionals the tools and opportunities to understand and act on critical issues in the world of food. We fulfill this mission through educational programs, grants for hunger alleviation, culinary history preservation and, most notably, scholarships, internships and grants for students and professionals. As the philanthropic partner of the International Association of Culinary Professionals, co-founded by the late Julia Child in 1984, The Culinary Trust has awarded nearly $1,500,000 through our scholarship program, assisting more than 500 talented individuals from all over the world in their pursuit of culinary knowledge and education. Receiving the scholarship was a blessing and provided me so much encouragement. I began the program thinking that I was going to be exceptional because of my love of food and cooking, but I struggled... With determination, drive and persistence, my final meal prepared at L Academie de Cuisine was a winner.my biggest take away from the entire experience was it does not matter how one begins, what matters most is how one finishes. Box 5485 Portland, OR Program Requirements and Information: Applicants must be at least 18 years of age and have a high school diploma or the equivalent. There is no maximum age limit. Candidates who have been students in the last five years must have a Grade Point Average (GPA) of 3.0 or international equivalent and provide documentation. Applicants should meet the admission requirements of each school, including language proficiency. However prior admission is not required in most instances. Scholarships, grants and internships must be fulfilled for start dates between July 1, 2013 and June 30, 2014 unless otherwise specified. The deadline to apply is March 1, 2013 (online or postmarked mail), and winners will be announced by May 15, The Culinary Trust will make awards in each of three categories. CATEGORY I: Scholarships for Culinary and Continuing Education Degree and certificate culinary school programs Specialized programs for wine, management and culinary education CATEGORY II: Grants for Independent Study Suited for experienced culinary professionals Requires proposed travel, research and writing CATEGORY III: Internships for Professional Development Internships require 1 year prior professional experience or relevant equivalent education experience May or may not have stipends --- Linda Guerrine, 2012 Recipient Individuals may apply to different categories and for more than one award within a category. However, candidates must submit a separate application and fee for each award. The following scholarships, grants and internships are only available from our participating schools and organizations. Scholarships for culinary AND Continuing education Cook Street 180 Culinary Arts Scholarship One $5,000 tuition credit scholarship for a new or enrolled student for the Cook Street 180 Culinary Arts Program in Denver, Colorado. The successful applicant will be eligible to attend either the June 3, September 20, 2013 session, or the September 3, December 20, 2013 session. Dublin Cookery School Certificate Cookery Course One $5000 USD tuition-credit scholarship for a new student entering the full time Three Month Certificate Cookery Course. This is an intensive full-time twelve week course leading to a certificate on completion. This unique opportunity is designed to be of interest to those considering working in the food industry professionally in a variety of roles. The school-based instructors are joined by a host of guest chefs, and the format is an exciting mix of cooking with support at hand and culinary challenges, including running pop-up restaurant nights. Scholarship may only be awarded to a new student prior to their enrollment at the Institute of Culinary Education. Applicant must meet The ICE s general admissions requirements. This is a continuing education/professional development course offered during one 1-3 day seminar for a restaurant or specialty business. A minimum of two years foodservice/industry related work is required. The Institute of Culinary Education is located in New York. For more information about the school visit For more information on general admissions requirements please contact The ICE s Admissions Department at (212) The Institute of Culinary Education 2-3 Day Course for Pastry & Baking Professionals Scholarship One full tuition scholarship for a pastry & baking professional to conduct continuing education in a non-professional 2-3 day session at the Center for Advanced Pastry Studies - CAPS@ ICE at The Institute of Culinary Education. CAPS will offer classes taught by visiting pastry chefs & artists on such topics as: Advanced Airbrushing, Plated Desserts, Entremets and Mignardises, Prize-Winning Breakfast Pastries, Chocolate Showpieces, and more. To qualify for CAPS classes, students must have documented professional experience in the pastry and baking field and/or have received professional training at an accredited culinary school. A minimum of two years foodservice/industry related work is required. The typical course runs three days and is limited to 14 students. The Institute of Culinary Education is located in New York. This continuing education course is taught in six (6) two-hour classes with a varietal approach, and is limited to weekday evenings only. A minimum of two years foodservice/ industry related work is required. Applicants must be 21 years of age or older. The Institute of Culinary Education is located in New York. The International Culinary Center Scholarship for the italian culinary experience in New york and italy One $5000 tuition-credit scholarship for a new student or career professional toward the Italian Culinary Experience program. The Italian Culinary Experience program is taught at The International Culinary Center in NY and at Alma, La Scuola Internazionale di Cucina Italiana in Colorno, Italy and includes a 9-week internship in Italy. Scholarship valid for one year from date of award. The program can be completed in 9 months. Scholarships for culinary AND Continuing education Le Cordon Bleu Australia Advanced Diploma of Hospitality Culinary Arts (Cuisine or Patisserie) One $8400 AUD tuition-credit scholarship for a new student enrolled in the Advanced Diploma of Hospitality Program. (Please note, this is a two-year certificate program.) Students must meet entry criteria, which includes: completing Australian Year 11 or equivalent high school; must have IELTS 5.5 General or equivalent; and must be at least 18 years old. Scholarship is for partial tuition only and does not include other fees associated with commencing or continuing this program. Scholarship does not cover application fee, activity fee, uniform/equipment, airfare, accommodations or living expenses. Le Cordon Bleu London Culinary Arts Institute is located in London, England. Le Cordon Bleu Australia Master of Gastronomical Tourism One $5000 AUD tuition-credit scholarship for a new student enrolled in the Master of Gastronomical Tourism Program. (Please note, this is a two-year ONLINE degree program.) Students must meet entry criteria, including a Bachelors degree and IELTS 6.0 Academic (no band below 5.5). Applications from individuals will also be considered on relevant expertise and specialist experience; students accepted on this basis will initially be admitted for the graduate certificate. This scholarship is targeted toward professionals with experience in all activities related to gastronomy. The Hautes Etudes du Goût s commitment is to provide students with: a deeper knowledge and a global vision of the complex world of gastronomy and the arts of the table; to present the latest studies on taste, gastronomy and the arts of the table; to emphasize the range of disciplinary understanding linked to taste; and to introduce an innovative perspective that will positively influence a student s professional aspirations within the current, global context of gastronomy and the opportunities this growing field now represents. Innovative courses are taught; the program is instructed in French and English translation is provided. This is a 2-week program in France, with one week in Paris and one week in Reims. The scholarship covers tuition only. Le Cordon Bleu Paris is located in Paris, France; for more information about the program visit Date of eligibility: October 2013 Le Cordon Bleu Kobe SCHOLARSHIP One 665,000 JPY tuition-credit scholarship for a new or currently enrolled student in the Initiation Cuisine - Introduction to Classic French Cooking Certificate course. The course provides hands-on techniques and recipes of French traditional dishes for the beginner or an experienced student seeking to refine their skills. Classes will be taught in Japanese and a minimal N3 level of the Japanese language exam is required. Scholarship is for tuition only and excludes uniform/toolkit and administrative fees. Only graduates of Basic Cuisine at any Le Cordon Bleu International are eligible to apply. The Intermediate Cuisine Certificate provides In-depth study of French classic and French regional cuisines, including: Product origins and influences on regional cuisine, perfecting professional kitchen skills, advanced technical, cuts and presentation, and taste analysis.this scholarship covers tuition only. This program is instructed in French and English translation is provided. INDEPENDENT STUDY (A minimum of two years food service/industry related work experience required) The Julia Child Fund at The Boston Foundation Independent Study Scholarship One $5,000 cash scholarship for independent study in France. This scholarship is available for a career professional to do research, writing and teaching related to French food, wine and culinary disciplines. Scholarship valid for travel and research conducted between July 1, 2013 and June 30, No extensions will be granted. All applicants are required to include a three-page project proposal, an itemized budget detailing the use of this award and a tentative travel schedule with dates and locations, and provide a current resumé to qualify for this scholarship. A two-page statement pertaining tothe internship is required for all applicants) City Harvest Nutrition Education Intern, New York, NY City Harvest, is seeking culinary professionals who are interested in gaining experience leading the cooking component of our Nutrition Education programs. The nutrition education programming at City Harvest provides tools to low-income individuals and families to foster healthier cooking, shopping and eating habits through improved confidence, skills and knowledge. The culinary intern will help facilitate one or more of the following three programs on a weekly basis: Nutrition Education Courses: City Harvest implements nutrition education courses with the assistance of volunteer chefs, nutritionists, and class managers that focus on healthy cooking techniques, nutrition information, and physical activity at a wide variety of partnering agencies including food pantries, soup kitchens, schools, senior centers, and other community based organizations. Cooking Demonstrations: Cooking demonstrations are 2 hours long and highlight healthy recipes that feature fruits and/or vegetables. They aim to increase community residents awareness of healthy foods in their neighborhoods and to provide residents with the confidence needed to prepare those foods. Shopping Matters Workshop: 2-hour tour of partnering supermarket where approximately participants learn how to shop for healthy foods on a budget through comparing unit prices; reading nutrition labels; and selecting affordable fruits, vegetables and whole grains. Eligibility and Qualifications: -Attend trainings at City Harvest offices -Willingness to travel throughout all five boroughs via public transportation -Comfortable speaking in front of an audience or eager to practice -Comfortable working with diverse cultures and volunteers from a variety of backgrounds -Strong communication and interpersonal skills, both in-person and via various media -Flexible and able to implement creative solutions Specifics: The internship opportunity lasts 6 weeks and is valid from June 30, 2013-July 1, The stipend is $600 for a 6-week part time period. The John Besh Foundation Culinary Philanthropy Internship, New Orleans, LA Chef John Besh invites you to New Orleans, Louisiana to spend a week with The John Besh Foundation to learn the ins and outs of how to start and run a foundation. In particular, your experience here will focus on Chefs Move! The John Besh and Bride Mayor Scholarship to The International Culinary Center in New York City. The ideal timing of the internship coincides with community outreach, vetting of Chef s Move! applications and may involve interviewing people and helping to make decisions about who should receive the annual scholarship. The 5-day program will include time in John Besh s corporate office working with Emery Whalen, Executive Director of The John Besh Foundation, and dinner at one of his restaurants. A two-page statement pertaining tothe internship is required for all applicants) The Mozzarella Company - Experience the Art of Cheesemaking Firsthand, Dallas, TX Cheesemaker Paula Lambert invites you to Dallas, Texas to spend a week learning how to make cheese in her artisanal cheese factory, the Mozzarella Company. Now in its 31st year, the Mozzarella Company is known for the exceptional hand-crafted cheeses that it produces from farm-fresh cow s milk and goat s milk. Founder/CEO Paula Lambert and her staff of 18 make 28 different cheeses, which are sold online, to grocery and specialty stores, and to top chefs across the country. Eligibility: This opportunity is suitable for professionals with a culinary degree and at least one year of work experience. It is particularly suited to anyone professionally interested in specialty food production and especially artisanal cheese. Specifics: The 5-day program will involve receiving milk, pasteurization, making cheese, working in the cheese factory with experienced cheese makers, packaging cheese, shipping cheese, as well as inventorying cheese. Additional experiences might include working in the office, delivering cheese, and/or assisting at a cheese and wine or beer pairing class, depending on the Mozzarella Company schedule the week of the internship. Also included is lodging in Paula Lambert s guest house located three miles from Mozzarella Company, in the Uptown neighborhood of Dallas. Internship will begin on a mutually agreeable date within 12 months of the award. Purple Asparagus Non-profit management and food literacy internship, Chicago, IL Purple Asparagus is a non-profit that educates children, families, and the community about eating that s good for the body and the planet. Purple Asparagus flagship program, Delicious,Nutritious Adventures, brings healthy foods to life for kids in elementary school classrooms all over Chicagoland. During Delicious Nutritious Adventures, students taste new foods and learn where they come from, why they benefit their bodies, and how to make simple and healthy meals using them. Role: Intern would be involved in all aspects of Purple Asparagus operations including assisting in teaching cooking/nutrition education classes in Chicago Public Schools; curriculum development; donor solicitation; outreach; and coordination of programs. Eligibility: All applicants must either have a college or culinary degree or be currently enrolled in a collegiate or culinary program. All applicants must have a love of good food and experience working with children is preferred. Should have the ability to both work independently and well with others. Specifics: Valid dates are September 2013 through January 2014, serving up to 120 hours. The recipient will receive a $1000 stipend. A two-page statement pertaining tothe internship is required for all applicants) Hands-On Culinary Media Internship with SeeFood Media, New York, NY SeeFood Media is a comprehensive food media company with a downtown Manhattan kitchen studio and a James Beard Award-winning culinary video production and photography team. We are pleased to offer an exclusive one-month full time educational internship in conjunction with The Culinary Trust. Our philosophy on interns is that of mutual benefit; the candidate will be expected to learn quickly and perform a variety of skilled tasks in a professional manner, and in turn our team will provide a solid opportunity to observe and participate in all facets of the production lifecycle. We seek a highly intelligent, self-directed and client-focused candidate who isn t afraid to get their hands dirty and help out wherever necessary. At our core, we are a hospitality business that happens to operate five (soon to be eight!) highly specialized kitchen sets, which are specifically designed for video productions. From here, we provide value added services such as production management, food & prop styling, technical consulting, crews, and equipment rentals. Responsibilities will run the gamut from administrative tasks to marketing, facility management, client services, prop styling, and assisting on shoots. Candidate must live within an hour of the Lower East Side for the duration of the internship; during productions call times can be as early as 6am, and days can occasionally extend past 9pm. Typical days are M-F 10am-7pm. Candidate must have a Bachelor s degree and a demonstrated commitment to enter the business of culinary media. Technical aptitude of FCP 7, Premiere, AfterEffects, Illustrator, FileMaker Pro, C300 operation, or understanding of lighting are highly desired but not mandatory, as are food / prop styling experience, the ability to write smart copy, and a highly developed visual aesthetic. This internship will take place over 4 consecutive weeks, at 40 hours per week. A $1000 stipend will be paid to the successful applicant. Must be eligible for legal employment in the United States. Final candidates are subject to an interview with SeeFood Media staff. Must be intellectually curious, able to lift 30 pounds unassisted, highly organized, love dogs, and eat everything (well, except dogs). For more information about SeeFood Media, visit Spoons Across America Student Research Assistant Internship / Practicum, New York, NY Spoons Across America is a 501 (c) (3) nonprofit with a strong history of implementing high-quality, hands-on experiential standards-based food literacy programs within the classroom. The organization influences children, teachers and families to make healthy food choices. Spoons is founded on the belief that understanding and practicing traditions of the table, connections from farm to table, and the art of cooking matter daily as a part of physical and emotional well-being. The more skills, knowledge and appreciation children develop for how food weaves its way through daily life, the more they will act as future stewards of the land and its bounty. Spoons Across America is seeking a Student Research Assistant / Intern to participate in the on-going design, execution, analysis, evaluation and/or dissemination of Spoons programmatic outcomes. Spoons is dedicated to providing interns with educational and professional experience, significant responsibility that expands with experience, and a congenial team atmosphere. Skills/Qualifications: high personal motivation, self-management and detail orientation; strong spoken and written communications skills; motivation to engage in a wide range of intellectual and physical work (from in-class observation/activity to data collection and analysis); collaboration with staff and volunteers who embrace and advance our mission. Eligibility: Current enrollment in a graduate degree program with a focus on community-based research and experience in research, policy or practice in food / nutrition interests of elementary / middle school aged-children. Cooking experience a plus. Specifics: The applicant is subject to an interview with Spoons in New York City. The internship / practicum will be valid from August 2013-December 2013, serving up to 120 hours. The stipend is $1,000. Internship with course credit is considered a plus and Spoons will conform with course expectations.

A two-page statement pertaining tothe internship is required for all applicants) Sustainable Food Center, Austin, TX Sustainable Food Center cultivates a healthy community by strengthening the local food system and improving access to nutritious, affordable food. We envision a food secure community where all children and adults grow, share and prepare healthy, local food. The Happy Kitchen/La Cocina Alegre (THK) is Sustainable Food Center s cooking and nutrition education program. It provides resources and tools for dietary lifestyle change through innovative, science-based, cost-effective solutions. The Program aligns with national health objectives and is based on widely agreed upon nutrition principals that a diet high in whole grains, fruits and vegetables and low in saturated fat and sodium greatly reduces the risk of diet-related diseases such as cancer, heart disease, hypertension and diabetes. THK places emphasis on local, seasonal and culturally appropriate foods. It integrates food systems concepts into its curriculum, such as shopping at farmers markets and growing one s own food. Role: The intern will be responsible for recipe refinement and development, according to the Program s needs and philosophy. Eligibility: All applicants must either have a college degree or a culinary degree or must be currently enrolled in a collegiate or culinary program. There is strong preference for a candidate with experience in the following: recipe testing, food systems, and cooking with farm to table ingredients. Specifics: The internship can take place between July 1, 2013 December 15, 2013 for a total of 100 hours spanning 4 to 8 weeks (this can be determined by applicant and Sustainable Food Center). The recipient will receive a $750 stipend. The successful applicant is subject to a telephone interview with Sustainable Food Center staff. Wellness in The Schools Cooking in NYC Public Schools Internship, New York, NY Wellness in the Schools inspires healthy eating, environmental awareness and fitness as a way of life for kids in New York City s public schools. Through meaningful public/private partnerships with school leadership, teachers, chefs, coaches, parents and kids, Wellness in the Schools creates hands-on programs such as Cook for Kids, Green for Kids and Coach for Kids. These programs provide healthy foods, healthy environments and opportunities for regular play to help kids learn and grow. Wellness in the Schools is offering a unique learning opportunity for a culinary professional to work alongside a WITS chef in a New York City Public School one weekday morning from 9am to 1pm for four months for a total of 64 hours. The program will include training and overview of WITS programs, and through hands-on participation in a NYC Public School cafeteria, will give the successful applicant the opportunity to learn the ins and outs of the School Food program and how fresh ingredients and cooking skills can combine to improve the nation s largest hunger relief program. Eligibility: Two opportunities are available. All applicants must have cooking experience and food safety knowledge. Local regulations require a negative TB test and fingerprinting, WITS will pay for fingerprinting fees only for the successful applicant. Specifics: The successful applicant is subject to a telephone interview with WITS and together the applicant and WITS will select the school and day of the week.
