1 Mission Kids Mexican Cookbook

2 Serves: 4 Chicken Nugget Tacos 4 x 6 White Corn Mission Tortillas, heated (Option to serve with Corn or Flour Tortillas) Lime dressing: 2 tbsp mayonnaise 1 tsp lime juice freshly ground pepper and salt, to taste Lettuce Slaw: 2 cups finely shredded Iceberg lettuce leaves ¼ cup grated carrot ½ red capsicum, finely sliced ¼ cup fresh coriander leaves 2 tbsp lime dressing or Coleslaw Dressing 8 chicken nuggets, oven cooked as per packet instruction Method 1. Combine dressing ingredients and season to taste. 2. Prepare lettuce slaw by combining ingredients in a bowl with the lime dressing. 3. Heat tortillas using instructions on pack. 4. Arrange lettuce slaw along the centre of 4 Mission Corn Tortillas. Top each with 2 cooked chicken nuggets and sprinkle with a few extra coriander leaves. 5. Fold filled tortillas in half and serve immediately.

3 Serves: 4 Kid s Mexican Quesadillas For a delicious change, add a little shredded chicken to the filling and finish with a drizzle of sweet chilli sauce. 4 Mission Tortillas 150g cream cheese, at room temperature ½ red capsicum, deseeded and finely sliced 2 spring onions, finely sliced ¼ cup fresh coriander leaves To serve: 2 tbsp Mission Mild Salsa ½ avocado, chopped (optional) 4 wedges lime (optional) Method 1. Divide the cream cheese evenly between the 4 tortillas. Spread over half the tortilla, top with strips of capsicum, spring onion and coriander leaves. Fold tortillas in half to encase the filling. 2. Heat a sandwich press, large frying pan or grill plate over medium heat and spray with olive oil. Toast quesadillas for 2 minutes each side or until crisp and golden. Cut into wedges and serve immediately with Mission Salsa, chopped avocado and a wedge of lime.

4 Serves: 2 Kids Baked Bean Nachos These nachos can also be made in the microwave if the kids are making them. Simply melt the cheese over the chips for 2 minutes then spoon over the baked beans and return for a further 1 minute. They will still need to be careful not to burn themselves as the plate will be warm from the microwave oven. 2 large handfuls Mission Deli Style Tortilla Triangles 160g grated Mexican cheese blend To serve: 130g can Baked Beans, warmed 1 tbsp light sour cream 1 tbsp guacamole dip 1 tbsp Mission Mild Salsa Method 1. Prepare nachos; place a sprinkle of grated cheese on the base of 2 small ovenproof dishes. Arrange a handful of the Mission Tortilla Triangles on top of the cheese in a single layer and top with remaining cheese. 2. Cook in a preheated oven of 180 C for 5 minutes until cheese is melted and lightly golden. 3. Remove from oven and divide the warmed baked beans over the 2 plates of nachos. Finish each with a dollop of sour cream, guacamole and Mission Mild Salsa and serve immediately.

5 Serves: 4 Mexican Fish Finger Burrito Fish Fingers are loved by kids young and old, and make a quick and easy meal which is sure to please even the fussiest of eaters. 2 x Mission Burrito Tortillas 4 butter lettuce leaves 4 x Fish Fingers, oven cooked as per packet instruction ½ small vine-ripened tomato, chopped 1 tbsp grated tasty cheese 1 tbsp Mission Mild Salsa 1 tbsp light sour cream Method 1. Arrange 2 lettuce leaves along the centre of each Mission Tortilla. Top each with 2 cooked fish fingers, chopped tomato, grated cheese, Mission Salsa, and a dollop of sour cream. 2. Roll tortilla to secure filling leaving one end open to expose the filling. Serve immediately.

6 Serves: 2 Kid s Rolled Mexican Pizza These pizzas can be adapted to suit even the fussiest eaters. Feel free to substitute your child s favourite toppings, but don t be tempted to over fill the pizza as it is difficult to roll if there is too much filling. 2 Mission Tortillas 4 tbsp Mission Mild Salsa 125g can sweetcorn kernels, drained 6 ham, thinly sliced 8 cherry tomatoes, cut into quarters 100g Mexican cheese grated fresh coriander leaves, to serve (optional) Method 1. Place Mission Tortillas onto a paper lined baking tray. Spread tortillas with Mission Salsa and sprinkle with half the cheese. Top with sweetcorn, tomato and sliced ham, then sprinkle with remaining cheese. 2. Cook in a preheated oven of 180ºC for 8-10 minutes or until cheese is melted and lightly golden. Sprinkle with coriander leaves and roll pizza whilst hot into a roll or fold in half. Serve hot.

7 Serves: 2 Ice-cream Tacos Method For a special treat try spreading a little Nutella over half of the tortilla before sprinkling with fruit and topping with ice- cream. 2 Mission Tortillas, 1 banana, peeled and sliced 4 large strawberries, hulled and quartered 8 raspberries 4 scoops vanilla ice-cream 2 tbsp chocolate topping 1. Pan-fry the tortillas until warmed and slightly toasted. 2. Divide fruit between the tortillas placing it along the centre of the Mission Tortillas. Top each with 2 scoops of ice-cream and drizzle with chocolate topping. To eat, fold filled Mission tortilla in half and serve immediately.
