1 FOOD & NUTRITION PROJECT 2 RECIPES MULTICULTURAL FOODS Here are the ingredient lists for some of the recipes you will make in Project 2. To comply with health and safety regulations and making sure you are safe please bring an apron and something to tie back long hair in every practical lesson. Remember to name your apron! PIZZA BASE 225g Strong plain flour 1 teaspoon salt 1 teaspoon sugar 10p for fresh yeast PIZZA TOPPING MOIST LAYER Choose ONE of the following layers: 3 tablespoons Tomato puree and 3 tablespoons Tomato ketchup. Plus: 5ml Mixed herbs or Mustard OR 3 tablespoons of ONE of the following: Chopped canned tomatoes Pre-made Pasta sauce Baked beans Spaghetti hoops FRUIT AND VEGETABLE LAYER Choose a maximum of three items: 1 Pepper 3 Spring Onions 1 Tomato 1 Courgette 4 Mushrooms 1 tablespoon Sweetcorn 2 Pineapple rings Half an Onion 6 Olives 1 clove Garlic 1 Tablespoon Fresh Herbs (basil, oregano, parsley) MEAT LAYER 75g. of one or two combined of the following: Cooked ham Pepperoni sausage Chorizo Cooked chicken Bacon Salami Tuna Anchovies Baking Tray or Pizza tray Foil TOPPINGS 75g. of one of the following cheeses: Mozzarella Cheddar Edam Red Leicester Stilton Optional: 5ml Herbs Black pepper
2 BLUEBERRY MUFFINS 280g plain flour 1 tablespoon baking powder Pinch of salt 115g soft brown sugar 1 frozen blueberries 2 eggs 250ml milk 6 tablespoons oil 1 teaspoon vanilla essence Grated rind of 1 lemon 12 paper muffin cases Container to take muffins home CHICKEN FAJITAS Quantity Ingredients 2 Chicken breasts 1 Lime 1 Onion 2 Peppers (red, green or yellow) 30ml Oil 6 Fajitas Wraps 20p for herbs and spices Container to take fajitas home in.
3 CEREAL BAR TOPPING 75g 125g 25g 2.5ml Butter or hard margarine clear honey or golden syrup Sugar e.g. caster, light soft brown sugar porridge oats dried fruit e.g. raisins, sultanas, currants or glace cherries, chopped or banana chips or apricots, chopped or tropical fruit mix, chopped Nuts e.g. walnuts, pecan, almonds etc. Seeds e.g. sesame, sunflower, pumpkin seeds or chocolate chips or desiccated coconut Flavouring e.g ground cinnamon, ground ginger, mixed spice, vanilla essence, almond essence orange, lemon or lime zest 25p foil dish SAMOSAS 1 packet filo pastry 4 tablespoons oil 1 cheese (e.g. Feta, Cheddar, goats, blue cheese or Red Leicester) 2 teaspoons fresh herbs (e.g. coriander, basil or parsley) 75g peas, or 1 carrot diced and partly cooked or grated, or 1 tomato, or spring onions, or 25g mushrooms, or beansprouts or 25g olives ½ red onion 1 small green chilli ½ teaspoon ground cumin, or ½ teaspoon curry powder, or ¼ teaspoon chilli powder or 1 teaspoon mixed herbs Container with lid
4 VEGETABLE CURRY Quantity Ingredients 1 Onion 1 Potato or sweet potato or aubergine 1 Carrot 1 Green pepper or 2 sticks of celery 2 tablespoons Oil 1 tablespoon Frozen peas or sweetcorn 2-3 teaspoons 400g 250ml Curry powder Can chopped tomatoes Water 1 Stock cube 1 tablespoon Tomato puree 1 tablespoon Mango chutney 1 tablespoon Lemon juice You will also need an apron and container to take the curry home in. CHEESE SCONES 200g self raising flour 1 teaspoon salt 1 teaspoon dry mustard block margarine 75g grated cheese 1 egg 125ml milk Container to take scones home in
5 DUTCH APPLE CAKE Please bring in the following: 100g self raising flour 1 teaspoon baking powder 100g caster sugar 100g soft margarine 2 eggs 1 eating apple 1 teaspoon ground cinnamon 2 teaspoons demerara sugar 30p for two small foil dishes LAYERED DESSERT Please make your choices below and bring in the following Your dessert will have 4 layers, choose one option for each layer. Layer 3: Crunchy (choose 1 of the following) 100g biscuits e.g. ginger, digestive, hobnobs etc. 40g cereal e.g. muesli, coco pops etc Layer 4: Decorative Finish (choose 1 of the following) 142ml carton double cream 2 strawberries, 1 kiwi 25g nuts 4 glace cherries 25g plain, milk or white chocolate.
