NHTV Breda University of Applied Sciences Academy of Hotel Management Exchange Programme Spring Semester 2016 Address: Academy of Hotel Management Sibeliuslaan CA Breda Contact person: Helene Rops: Antoon Ceuleers: 1
Introduction Dear prospective exchange student Thank you for considering the NHTV Breda International Hotel Management as a possible exchange destination. Brace yourself for an entirely new and exciting experience at a top rated programme in hotel management (according to a national authoritative student survey, October 2014). The NHTV Academy of Hotel Management was founded in 2001 offering its students an entirely English taught programme leading to an internationally recognized BBA (Bachelor of Business Administration) in Hotel Management. Ever since its inception, the Academy of hotel management has rapidly grown into one of the leading Dutch institutes in its kind, thanks to its state-of-the-art-premises (including a student run kitchen and restaurant and multiple meeting & student facilities), dynamic staff and motivated students. What characterizes the Academy most, however, is its innovative curriculum and alternative way of coaching (not teaching) students to become self-responsible, resultoriented, communicative and innovative young professionals. It goes without saying that this can only be achieved in close co-operation with the real-life hotel industry. We kindly invite you to experience this new way of studying for one semester yourself! NHTV location: Sibeliuslaan 2

3. Course Descriptions 1. Accounting ( 3 ECTS) Accounting in general can be defined as a series of processes and techniques used to identify, measure and communicate economic information which users find helpful in making decisions. Financial accounting, with its emphasis on the accounts (profit and loss, balance sheet and statement of cash flows) focuses on the needs of external users, and is backward looking, or historic, in nature. Managerial accounting, on the other hand is intended to help managers in all areas of the organisation, rather than the finance department - make decisions with a view to improving future results. It is therefore focused on the internal users and more forward looking. The break even level of output, allocation of overhead costs to the appropriate department, cost control, budgeting, and pricing decisions are all part of managerial accounting. 2. Marketing ( 4 ECTS) Marketing in this semester zooms in on services marketing. Central to the course is the development of customer relationships through service quality. As customer satisfaction heavily depends on expectations on forehand, the price of the service, and in-service experiences and encounters, service managers need to engage in complex service design, service management and adopt a pricing strategy that takes the dynamics of the demand and supply into consideration. The course feeds into the capstone project which focusses on optimal revenue management. The project will require students to formulate a decision making process that optimizes pricing based on internal and external data. 3. Operations Management (4 ECTS) Operations Management as a course within the module Managing Business Performance, focusing on the activities related to the input and the processes providing services to guests The focus within this course is on understanding and applying knowledge needed to integrate all processes of operations while creating value along the supply chain. 4. Management Information Systems (4 ECTS) The idea behind this MIS module is to explore various different ways in which information technology relates to organizational objectives and goals in an organizational context, given the increasing inter-relationship between these two in today s global world. The course provides an Introduction of fundamental MIS concepts, using integrated framework for Decision Making and Analyzing Information Systems. The course is comprised of different types of Information Systems available for Business use in Decision Making and Business Processes, covering Competitive Advantage, Executive Information Systems, Decision Support Systems, Expert Systems and Supply 4
Chain Management etc. While coverage is provided to Information Systems for Functional Areas like Marketing, Operations, Manufacturing, Human Resource, Financial Information and Accounting, the focus is maintained on Hotel Business and current Technological trends. 5. Integrated Project: Revenue Management (6 ECTS) Content For an existing hotel in a business location, a new pricing strategy has to be developed. By completing a number of sub-assignments, students will gradually work towards completing the assignment by creating a new rate structure and rate/demand calendar for the subject hotel. The final deliverable will be the presentation of the rate structure and rate calendar for the upcoming year, explaining and highlighting the considerations made, as well as justify the data used to inform the decision-making process. The rate structure should incorporate all the different viewpoints and interests of the departments involved (revenue management, sales, marketing, operations, general manager), as well as accommodate for the different revenue streams in the organization. Link to the courses in the module: Accounting: targets, budget, CVP analysis. Operations: decision-making flow(chart), quality. Marketing: online reputation, targeting, reviews, loyalty & qualified business. Management information: database cleaning & structuring, queries, Excel skills (?) 6. Management development Programme (4 ECTS) The MDP program focuses primarily on your personal development, professional skills as well as your professional behavior. The activities that are part of the Management Development Program all have a clear link with the core knowledge courses, and will be offered by means of training days, workshops, training courses, self-study and lectures. Throughout the Management Development Program, you will create your own Portfolio in the MDP course on N@tschool. This document is characterized by a dynamic and evolving content that will be, together with your results, the point of departure in your meetings with your Coach. Your coach will monitor your progress and development during your academic experience, and will help you to get the best out of yourself! The activities in the MDP course are focussed on steering you towards becoming a self responsible professional. In the first year the main focus of our MDP program involves personal development and getting acquainted with and find your way in the educational system. You are expected to invest a considerable amount of study hours and to adopt a selfsteering and result-oriented attitude. The study coach plays a key role in this course. 5
7. Management and Leadership Skills (2 ECTS) The importance of event management lies in the opportunity for students to show their entrepreneurial skills by organizing and executing an event. The content of the course focuses on applying the basics of event management, with special emphasis on the crucial role of marketing and budgeting. Profit which results from events will be transferred to corporate social responsible charity causes. Within the context of a project team, students focus on understanding theories and models related to Event Management and how to apply them in a practical situation. In addition, students will apply their hospitality and communication related skills, that they practiced in year 1, in a real-life situation. 8. Dutch Culture and Society (3 ECTS) The Dutch Culture and society course is designed to introduce international exchange students to the Dutch culture and society. The course consists of a number of lectures regarding Dutch Geography, Sociology, History of art, History and Economics. Furthermore, a number of excursions are organized to some landmark Dutch destinations. 6

5. Useful Information Note: a laptop is needed for optimal performance. Dresscode Certain visits / guest lectures / presentations require correct and formal attire. We do not impose uniforms, but Business suit & tie (men) and two piece suits (women) will be required at certain instances Sibelicious The programme boasts its own training facility, called Sibelicious, in which students are given operational duties. The following areas are part of Sibelicious: Reception hall with reception desk Service desk Executive meeting rooms Board room Catering facilities for staff and students Restaurant Kitchen The Smit & Dorlas Coffee Corner Grand Café Food and wine theatre Sibelicious enables first year students to gain experience in taking overall charge of a hospitality business under the guidance of a management team of second year students. This means that students are responsible for generating new business, making price quotations, organising meetings and events, pre production and retrospective costing and after sales. It goes without saying that the institute is ultimately responsible for monitoring the quality of the students performance and for coaching the students who work in Sibelicious. Electronic Learning Environment Personal Portal online All students have received a mail in their webmail containing information about the portal and their login codes. Students who follow individual courses will receive the information personally. Using this portal the students can find their personal study course information from the various NHTV databases. This includes schedules, grades, , news and documents. They will also be able to implement information from outside NHTV by means of RSS feeds and links. Next week a video will be available for employees to have a look at the new portal. 8
Wireless Internet With a laptop, students may study and work anywhere, regardless of their whereabouts. Students may work wireless in and around the premises. In Sibelicious, the classrooms, the study area, assembly hall and even outside the building, the laptop (if equipped with a network card) gives access to the wireless network of the institute. N@tschool Courses and course material will partially be delivered through the internet and will be accessible by way of an electronic learning environment called N@tschool. Education and lectures may, therefore, take place at the academy itself, as well at home or at the placement company, both in the Netherlands and abroad. Studying can take place independent of place and time. Many lectures will be recorded via Presentations2Go, students can gain access via N@tschool. Additional Costs The principle of student exchange implies that students can study one semester at a partner university, while paying tuition fee at the home university. No additional costs will be charged, with the exception of school related activities that are not included in the tuition fee. During the Spring Semester Hotel Management Programme, an extra 150 for those students who will participate in the excursions of the Dutch Culture & Society Course (see above). 9
