2 All aboard! Forster s is just the ticket when it comes to your journey into the Retail, Hospitality & Catering Industry. Not only do we educate learners but we support their changing needs throughout the journey. Learners not only achieve a qualification but a career opportunity, with skills to work within the ever changing sector of Hospitality & Catering or Retail & Customer Service. We work with all learners, particulary with those who have multiple barriers to engage with employment and/or education, to support their learning journey and enable them to be work ready, by having the skills and knowledge to be confident and capable in the work environment. We offer a range of qualifications from Level 1 to Level 3. The Hospitality & Catering courses are delivered in both the classroom and in our training kitchen, and our Retail & Customer Service courses are delivered within the classroom and supported with the Little Blue Community Shop. Our well trained team will work with each learner as an individual, to support them though their learning journey and help them to achieve their potential. 2

They enjoy their courses, attend regularly and make good progress relative to their starting points Good teaching, training and assessment ensure that a large majority of learners complete their qualifications successfully. Learners, many of whom have very low starting points in the use of English and Mathematics, develop good skills in using English and Mathematics in their everyday lives Forster Community College has a strong culture of inclusion, respect and opportunity for all learners. 5 5 Meeting employer needs The Retail, Hospitality & Catering sector is a growth area within the West Yorkshire region, and we understand the need for well trained and reliable staff to meet this increasing demand. The courses detailed within this booklet are all nationally recognised and are developed in conjunction with employers. We offer: Government funded Apprenticeships which offer affordable solutions to sourcing staff, trained to your exacting standards, see page 8 ESF funded Response Project which provides free bespoke staff training at level 2 or 3 We also offer a range of other qualifications and training. 6 6 Real life work experience Hospitality & Catering We launched Forster s Bistro & Deli in Bradford City Park in The profits from this exciting and outstanding restaurant are gifted to the College to support the delivery of our Charitable Objectives. As part of our training, we offer the opportunity to undertake work experience within the restaurant and its pop-up locations, which have included festivals, city events and the College. 7 7 Retail & Customer Service In 2012 we launched our Little Blue Community Shop. The College promotes the choose to reuse philosophy to its customers, visitors and partners. Selling directly to customers from our little shop and on e-bay. We also offer work experience within the shop on our Retail & Customer Service courses where appropriate. As part of our training we offer the opportunity to undertake work experience within the shop. You can purchase items from the onsite shop or our e-bay shop. We gratefully receive all donations. 7
8 8 Apprenticeships & Traineeships Apprenticeships are the UK s flagship work based vocational qualifications for people aged 16 years old and above. Apprenticeship and Traineeship programmes are specifically designed for particular occupational areas and meet nationally approved standards for people wishing to follow a career in that industry. For companies who wish to provide their employees with industry sector skills and a nationally recognised qualification Apprenticeships are the gold standard. At Forster Community College our Apprenticeship and Traineeship programmes include an industry specific National Vocational Qualification (NVQs), an Occupational Technical Certificate and key numerical, communication and computer skills. The NVQs are undertaken at levels 2 and 3 and the whole programme is structured and delivered over a period of months depending upon the level. Forster Community College works closely, in partnership with business leaders to develop a programme which is flexible and accommodates the needs of the company and the employee. 8
9 At Forster s we will: Organise and deliver the qualification ensuring that it conforms to all industry and awarding body standards Take responsibility for the initial assessment and induction of employees onto an Apprenticeship programme Organise registration, programme delivery, course assessment, verification and certification of the qualification. Ensure all elements are delivered by quality assured Tutors and Assessors to support the whole process Tailor our delivery methods to best suit employer and employee needs. A Forster s training programme is available to all employees aiming for excellence in the sectors of Retail, Hospitality & Catering. A young person who successfully completes an Apprenticeship or Traineeship qualification can look forward with confidence to a career with prospects. Companies who offer Apprenticeships provide employment opportunities which will generate economic growth and future prosperity. We will work with applicants to ensure they are highly motivated and committed to develop their skills to meet the business challenges of tomorrow. The UK Government is anxious to increase the skill levels and qualifications of the country s workforce and as such substantial financial help is available to companies who wish to offer Apprenticeships. 13 Level 1 Introduction to Employment in the Hospitality Industry City & Guilds This qualification has been designed for people who have not worked within the Hospitality sector or need a refresh on their knowledge. If you are looking to secure an entry level job, this course will help by giving you the relevant industry knowledge and skills, together with an understanding of the job roles available. Duration: 6 weeks, part time. Course Structure: The purpose of this qualification is to enable you to demonstrate through classroom based assessments, how well you carry out daily work activities and your knowledge of Hospitability related topics. The course covers: Introduction to the Hospitality Industry Food Safety in Catering Health & Safety in the workplace Principles of Customer Service in Hospitality & Catering Introduction to Personal Workplace skills. Assessment This course is portfolio based and includes an exam. Entry Requirements: You will need basic Literacy, Numeracy and ICT skills to undertake this course. 13

If you want to learn the basics of food preparation and cooking then this is the course for you; this course will help by giving you the relevant industry knowledge and skills, together with an understanding of the job roles available. Duration: 16 weeks, part time. Course Structure: The purpose of this qualification is to enable you to demonstrate through classroom based assessments, how well you carry out daily work activities and your knowledge of Hospitality related topics. The course covers: Health & hygiene procedures including Food Safety Working as part of a hospitality team Preparing & cooking a range of simple dishes. 16 Level 2 Diploma in Food Production & Cooking City & Guilds The Food Industry is vast in opportunity when you have the correct skills. This course will take your skills from basic level to enable you to prepare, cook and serve simple dishes. This qualification has been designed for people who are working in a professional kitchen, or have a Level 1 qualification and want to develop your skills to move into further employment options. Duration: 40 weeks, part time. The course covers: Health & hygiene procedures including Food Safety Working as part of a hospitality team Preparing, cooking and finishing a wide range of simple dishes. Assessment: This course is portfolio based which includes knowledge and competence based evidence. Course Structure: The purpose of this qualification is to enable you to demonstrate through classroom based assessments, how well you carry out daily work activities and your knowledge of Hospitality related topics. 18 Level 2 City & Guilds Certificate in Professional Patisserie and Confectionary This qualification is aimed at candidates who wish to gain knowledge and experience working within a professional kitchen, working with basic patisserie and confectionary products. Learners should be employed within this industry to complete the course. Duration: 40 weeks, part time. Course Structure: The purpose of this qualification is to enable you to demonstrate through work based assessments, how well you carry out daily work activities and your knowledge of patisserie and confectionery related topics. The course covers: Investigation into the Catering and Hospitality Industry Food Safety in Catering Health and Safety within Hospitality and Catering Healthier foods, special diets, catering operations, costs and menu planning Production of hot and cold desserts, biscuits, cakes, sponges and fermented dough products Applying workplace skills. Assessments: This course is portfolio based which includes knowledge and competence based evidence, along with a series of externally marked assessments and exams. 18 Entry Requirements: You will need Level 1 Literacy, Numeracy and ICT skills to undertake this course, but there are no formal entry requirements.
19 Level 2 City & Guilds Certificate or Diploma in Proficiency in Food Manufacturing Excellence This qualification is designed for candidates who are working in a food manufacturing or supply chain environment. This qualification offers candidates the opportunity to develop skills and knowledge to establish competency within their work place. Duration: 40 weeks, part time. Course Structure: The purpose of this qualification is to enable you to demonstrate, through work based assessments, how well you carry out daily work activities and your knowledge of food manufacturing procedures and related topics. The course covers: Working with others Tools and techniques Achieving food manufacturing excellence knowledge. Assessment: This course is portfolio based which includes knowledge and competence based evidence. Entry Requirements: You will need Level 1 Literacy, Numeracy and ICT skills to undertake this course, but there are no formal entry requirements. 19
20 Level 3 City & Guilds Diploma in Professional Cookery (Preparation & Cooking) This qualification is suitable if you want to progress your career, already hold a L2 qualification and want to enhance your skills to become a specialist chef. Duration: 50 weeks, part time. Course Structure: The purpose of this qualification is to enable you to demonstrate through classroom and kitchen based assessments, how well you carry out daily work activities and your knowledge of Catering related topics. The course covers a variety of units which include: Health & hygiene procedures including Food Safety Developing working relationships Managing resources Preparing, cooking and finishing a wide range of complex dishes Development of recipes & menus. Assessment: This course is portfolio based which includes knowledge and competency based evidence. Entry Requirements: You will need good Literacy, Numeracy and ICT skills to undertake this course. 20

26 Level 2 City & Guilds Diploma in Retail Knowledge Retail is a vast, diverse industry with establishments ranging from corner shops to multi-national chains, but regardless of size, retailers need skilled and motivated staff. This qualification allows people working in retail to demonstrate their skills and knowledge to a national occupational level. At Level 2 you will need to demonstrate initiative in the handling of non-routine activities as well as the core principles of Customer Service. Duration: 8 weeks, part time. Course Structure: The purpose of this qualification is to enable you to demonstrate through classroom based assessments, how well you carry out daily work activities and your knowledge of retail related topics. The course covers: Customer Service in the Retail Sector The retail selling process How individual and teams contribute to the effectiveness of retail business How a retail business maintains health and safety on its premises. Learners should be working in the retail industry, and been doing do for some time, they should have experience across the sector and have involvement in supervising others or managing resources. Duration: 50 weeks, part time. Course Structure: The purpose of this qualification is to enable you to demonstrate through work based assessments how well you carry out daily work activities and your knowledge of retail related topics. The course covers: Managing staff, staff schedules and the working team Managing and maintaining stock inventories in a retail environment Organise and deliver reliable Customer Service.
