1 25 Freezer Meals Recipes & Grocery Lists Beef Pork Chicken Bread Soup/Pasta Breakfast 1

2 Beef Freezer Meals Meatloaf -1 ½ lb ground beef -1 cup milk -1 TBSP Worchestershire Sauce -1 tsp sage -1 tsp Salt -½ tsp ground mustard -½ tsp black pepper -½ tsp garlic powder -1 egg -½ cup plain bread crumbs -1 diced onion - Combine all ingredients in a large bowl. - Shape into a loaf and wrap in plastic wrap or aluminum foil. - Place into a freezer bag and freeze. - When ready to cook, preheat oven to 350 F OR cook in crock pot for 4-6 hours. - Bake uncovered for an hour. Burgers -2 lbs ground beef -1 diced onion -1 TBSP Worchestershire Sauce -1 tsp salt -1/2 tsp black pepper - Combine all ingredients. - Shape into patties. - Stack the patties separated by wax or parchment paper. - Place the patties into a freezer bag until ready to cook. 2

3 Chili -1 ½ lb ground beef -1 diced onion -1 chopped red bell pepper -1 cup chopped baby bella mushrooms -1 diced yellow squash oz cans diced tomatoes oz can drained black beans -1-5 oz can tomato sauce oz can drained corn -2 cans rotel -1 ½ cups beef stock -2 TBSP Chili Powder -1 TBSP Oregano -1 TBSP Ground Cumin -1 ½ tsp onion powder -1 ¼ tsp salt -1 tsp black pepper -1/2 TBSP cilantro -1/2 c water ¼ c cornmeal - Brown beef and onion in skillet. - Add all ingredients except cornmeal & water to a freezer bag and freeze until ready to eat. - When ready to cook, dump the chili into a crockpot and cook on high 4 hours minutes before the chili is finished, make a paste with the cornmeal & water, add the paste to the chili, and finish cooking. Sloppy Joes -1 lb ground beef -1/2 diced onion -3/4 c ketchup -2 tsp yellow mustard -1/2 tsp garlic powder -1 TBSP light brown sugar -1/4 c water -salt & pepper to taste - Brown the beef & onion in skillet. Mix all other ingredients together and add to the beef. - Place all ingredients into a freezer bag and freeze until ready to eat. - When ready to eat, dump it all in a skillet and cook until heated through OR cook in crock pot on high for 3-4 hours. 3

5 Pork Freezer Meals Pork Roast with Veggies -1 Roast (about 4 pounds) -1 sliced onion -4 chopped carrots -3 cubed potatoes -1 tsp garlic -1 tsp Parsley -1 tsp Oregano -1 tsp Onion Powder -salt & pepper to taste - Make a few small cuts in the roast to allow the flavors from other ingredients to sink in. - Rub the roast with the seasonings. - Place all ingredients into a freezer bag until ready to cook. - When ready to cook, dump the entire bag into the crock pot and cook on high for 4-5 hours. Hawaiian Pork Chops -4 pork chops (boneless or bone-in) -1 fresh pineapple or 1 can chunk pineapple -2 TBSP light brown sugar -2 TBSP soy sauce - Add all ingredients into a freezer bag and freeze until ready to cook. - When ready to cook, dump the whole bag into the crock pot and cook on high 4-5 hours if cooking from frozen, 3-4 hours if thawed. BBQ Ribs -3 lb pork ribs -1/4 cup brown sugar -1/2 onion sliced -1/2 cup apple sauce -2 TBSP garlic -1 ½ cup BBQ sauce - Rub salt & pepper on the ribs. - Add all ingredients to a freezer bag & freezer until ready to cook. - When ready to cook, add to crock pot and cook on low 5-6 hours. - Top with extra BBQ Sauce -salt & pepper to taste 5

6 Ranch Pork Chops -4 pork chops (boneless or bone-in) -1 envelope of dry Ranch mix -2 cans Cream of Chicken soup - Place all ingredients in a freezer bag until ready to cook. - When ready to cook,, thaw and place in crock pot on low for 4-6 hours. Parmesan Honey Pork Loin -4 lb pork loin -2/3 c parmesan cheese (grated) -1/2 cup honey -3 TBSP soy sauce -2 tsp basil -2 tsp oregano -2 TBSP garlic -2 TBSP olive oil -1/2 tsp salt - Add loin and all other infredients to a freezer bag until ready to cook. - When ready to cook, dump into a crock pot and cook on low 5-6 hours. Italian Meatballs -2 ½ lb Italian Sausage -1/2 cup milk -4 eggs 1 ¼ c bread crumbs -1/4 c parmesan cheese -2 tsp salt -1/2 tsp pepper -1/4 tsp garlic powder -2 jars of marinara sauce - Whisk Milk & Eggs together. - Add all ingredients except marinara sauce. - Mix until well combined. - Shape into balls and place on a greased baking sheet. - Broil meatballs for 6-8 minutes to brown them. - Allow to cool and place in a freezer bag with the marinara sauce. Freeze. - When ready to cook, dump into a slow cooker and cook on low for 4-5 hours. 6

8 Chicken Freezer Meals Chicken Enchiladas -4 chicken breasts -1 can black beans -1 can corn -1 can kidney beans -1 can cream of chicken -1/4 tsp black pepper -1 ½ tsp chili powder -1/2 tsp cumin -6-8 flour tortillas -1 can enchilada sauce -2 cups Mexican Cheese - Cube the chicken breasts and cook them through in a skillet. - Place all ingredients except cheese and tortillas in a freezer bag and freeze until ready to cook. - When ready to cook, layer the frozen mix with the tortillas and cheese in the crock pot. - Cook on high 3-4 hours or low 4-6 hours Chicken Fajitas -3-4 chicken breasts -1 green & 1 red bell pepper -1 can Rotel -1 diced yellow onion -3/4 tsp coriander -1 ½ tbsp minced garlic -1 TBSP honey -2 TBSP Lime Juice -2 tsp chili powder -1 tsp paprika -3/4 tsp pepper 1 tsp salt -2 tsp cumin -8 Four tortillas - Put all ingredients except tortillas into a freezer bag and freeze until ready to cook. - When ready to cook, dump the mix into the crock pot and cook on high 3-4 hours or low 6-8 hours. 8

9 Creamy Italian Chicken -4 chicken breasts -1 can cream of chicken -8 oz cream cheese -1 dry pack Italian seasoning - Mix cream cheese, cream of chicken, and seasoning in a bowl. - Place chicken and cream mix into a freezer bag and freeze until ready to cook. - When ready to cook, dump ingredients into a crock pot and cook on low 4-6 hours. Teriyaki Chicken -6 chicken breasts or thighs -1 cup teriyaki sauce -1 cup water -2/3 cup light brown sugar -2 tbsp minced garlic - Place all ingredients into a freezer bag and freeze until ready to cook. - When ready to cook, dump into a crock pot and cook on low 4-6 hours. Honey Garlic Chicken -4 chicken breasts or thighs -2 tbsp minced garlic -1/3 cup honey -1/2 cup ketchup -1/2 cup soy sauce -1/2 tsp oregano -2 tsp parsley -1/2 tbsp sesame seeds (optional) - Palce the chicken in a freezer bag. - Combine all other ingredients except sesame seeds in a bowl and then pour over the chicken. - Freeze until ready to cook. - When ready to cook, dump into a crock pot and cook on low 6-7 hours or high 4-5 hours. - Serve topped with sesame seeds 9

10 White Chicken Chili -4 chicken breasts -4 cups chicken stock -2 cans drained white beans -1 can drained rotel -4 tbsp olive oil -2 tbsp corn starch -4 tsp cumin -4 tsp chili powder -2 tsp salt -2 tsp pepper - Place all ingredients in a freezer bag (or two depending on the serving sizes you want) and freeze until ready to cook. - When ready to cook, dump into a crock pot and cook on low 4-6 hours. Grocery List for Chicken Meals 26 Chicken Breasts (or thighs) 1 can black beans 1 can corn 1 can kidney beans 2 cans cream of chicken 16 flour tortillas 1 can enchilada sauce 2 cups Mexican Cheese 1 green & 1 red bell pepper 2 cans Rotel 1 onion 1-8 oz pack cream cheese 1 pack dry Italian Seasoning 4 cups chicken stock 2 cans white beans Olive oil Corn starch Black pepper Chili powder Cumin Coriander Paprika Salt Honey Lime Juice Teriyaki sauce Light brown sugar Ketchup Soy sauce Oregano Parsley Sesame seeds Minced garlic - 10

11 Bread/Soup/Pasta Corn Bread -1 can whole kernel corn -1 ½ cups flour -1/2 cup sugar -1 TBSP baking powder -1 tsp salt -1/2 cup milk -2 large eggs -1/4 cup softened margarine -1/4 cup honey - Stir dry ingredients together in one bowl. - Use a larger bowl to beat the rest of the ingredients together. - Mix the two bowls together. Pour into a deep pie pan or an 8x8 baking pan (greased). - Preheat oven to 450 and bake for 25 minutes or until the top is golden. - Allow to cool completely. - Wrap in aluminum foil and place in a freezer bag to freeze. - When ready to eat, allow to thaw at room temperature for about 3 hours. White Bread Loaves -1/2 cup hot water -1/2 cup milk -1/4 cup melted butter or vegetable oil -3 cups all purpose or bread flour -2 TBSP sugar or honey 1 ¼ tsp salt -1 ½ tsp instant yeast - Pour all wet ingredients into bread machine. - Place dry ingredients in next. - Set the bread machine on the white bread cycle for a 1 ½ lb loaf and start the kneading cycle. Allow the bread machine to knead, rise, and bake the bread. - Allow the bread to totally cool. - Wrap the loaf (sliced or unsliced) in aluminum foil and place in a freezer bag to freeze. - When ready to eat, thaw at room temperature for about 3 hours. 11

12 Corn Chowder -6-8 diced red potatoes -4 slices bacon -1 diced onion -3 diced carrots -2 diced celery stalks -2 cans whole kernel corn -4 cups chicken broth -2 tbsp minced garlic -1/2 tsp thyme -1/2 tsp oregano -1/2 tsp salt -1/4 tsp pepper -1/2 cup half & half -2 tbsp cornstarch -2 tbsp butter -2 tsp chives - Cook Bacon in skillet. - Add all ingredients except half & half, cornstarch, and butter into a freezer bag and freeze until ready to cook. - When ready to cook, dump into a crock pot and cook onlow 6-8 hours or high 3-4 hours. - During the last 30 minutes of cook time, whisk the half & half and cornstarch together to make a paste. - Add the paste and the butter to the chowder and complete cook time. Baked Ziti -1 lb ziti or penne pasta -1 diced onion -2 jars spaghetti sauce -8 slices of provolone cheese -1 ½ c sour cream -6 oz shredded mozzarella cheese -2 tbsp grated parmesan cheese - Cook pasta according to package directions. - Saute onion in skillet and add to spaghetti sauce. - Layer as follows in a foil oven & freezer safe pan pasta, sauce, cheese slices, sour cream, pasta, shredded cheese, sauce top with parmesan and remaining shredded cheese - Cover the pan with foil and freeze until ready to cook. - When ready to cook, allow the pasta to thaw in the fridge a day in advance. - Preheat oven to 350 and cook for about 30 minutes. If you cook from frozen then you will need to cook for about 2 hours 12

13 Baked Lasagna -2 diced yellow squash -2 diced zuchinni -1 jar pasta sauce -1 container ricotta -2 tsp chives -1/2 tsp oregano -1 egg -1 package oven ready lasagna noodles -16 oz shredded mozzarella -2 tbsp grated parmesan cheese - Mix pasta sauce and water together in one bowl. - Mix ricotta, chives, oregano, and egg in another bowl. - Layer the noodles, sauce, egg/cheese mixture, and shredded cheese in a foil oven & freezer safe pan. - Cover with foil and freeze until ready to cook. - When ready to cook, thaw in fridge for 12 hours. - Preheat oven to 350 and cook for about 1 hour. - If cooking from frozen, allow 2 hours cook time. Grocery List for Bread/Soup/Pasta 3 cans corn 3 eggs 6-8 red potatoes 4 slices of bacon 2 onions 3 carrots 2 celery stalks 4 cups chicken broth 1 pack ziti or penne pasta 1 pack oven ready lasagna noodles 3 jars pasta sauce 8 Slices Provolone Cheese oz Shredded Mozzarella 16 oz Sour cream 2 yellow squash 2 zucchini squash 1 container ricotta Flour Sugar Baking powder Salt Milk Margarine or butter Honey Vegetable oil Instant yeast Minced garlic Thyme Oregano Salt Pepper Half & Half Cornstarch Chives Grated Parmesan Cheese

14 Breakfast Breakfast Burritos -1 lb breakfast sausage or 1 pack bacon -shredded cheddar cheese -5 eggs -Tortillas (I use the burrito size) - Brown the sausage/bacon in a skillet - Drain off the grease and put the meat onto the tortillas. - Scramble the eggs and season with salt & pepper. - Add the eggs on top of the tortilla and meat. - Top with shredded cheese, roll up, and freeze. - When ready to eat you can warm in the microwave and add salsa, cream cheese, or whatever else you like. Sausage & Biscuits -2 lbs breakfast sausage -2 packs of biscuits - Separate the sausage and shape into patties. Cook on skillet for 1 ½-2 minutes on each side. - Cook Biscuits according to package directions. - Place the sausage on the biscuits and freeze until ready to eat. 14

Let sit for 3-5 minutes. - Pour onto griddle or skillet.
