1 Frozen Bread in Meals and Desserts Frozen bread dough can be purchased as a loaf or as dinner rolls. For great bread, simply follow the directions on the package. Plan ahead; it has to have time to rise. I like to set it in the refrigerator the night before to save time. The speed method using a warm oven & hot water works wonderfully if you are in a hurry. IDEAS Use cupcake pans to put your dinner rolls in. Cut the rolls in half or fourth and put in the cupcake pan to make the fancy roll. Braid your bread. Check with your local bakery to see if they will sell you frozen rye, whole wheat, or pumpernickel bread. Braiding 3 varieties of bread makes a beautiful spread. Make it into a circle and put a small vase with flowers for the season. Use your imagination! Be creative! Have fun!! 2 1 frozen bread loaf 2-3 Tablespoons cinnamon 1+ cup sugar CINNAMON ROLLS bread on it. Cover the bread with plastic wrap that also has been sprayed. Allow dough to thaw, but not rise. The dough will be ready to work with when it is a little cooler than room temperature. Once thawed, spread the dough into a rectangle. Sprinkle the entire dough with the cinnamon/sugar mixture. Roll up to form a jelly roll. Cut into 1-1/2 strips and place into a greased 9 x 13 baking dish. Cover with a damp cloth and let rise. 375 degrees F for minutes or until golden brown. Icing: 3 cups powdered sugar 1/2 stick butter melted Hot water: add 2 Tablespoons at a time until icing is creamy. Pour over rolls while hot! 8 ounces cream cheese 2 cups powdered sugar 1 stick butter Cream Cheese Frosting: Mix well and spread on item to be frosted. Effingham County HCE 2 September Major Lesson

3 BRAIDED FRUIT FILLED BREAD 1 loaf of frozen bread dough 1 can pie filling (blueberry, apple, cherry, etc.) bread on it. Cover the bread with plastic wrap that also has been sprayed. Allow dough to thaw, but not rise. The dough will be ready to work with when it is a little cooler than room temperature. Once thawed, spread the dough into a rectangle. Cut the edges of the bread into 1-1/2 inch strips with scissors. Put 1/2 can of the pie filling down the middle of the dough. Begin at the top and braid the sides together pulling the dough and tucking it in. Let rise. Bake at 375 degrees F for 20 minutes or until golden brown. Top with icing. MONKEY BREAD 1 pkg. (24) frozen dinner rolls or 1 loaf frozen bread 2-3 Tablespoons Cinnamon 1-1/2 cups sugar Let bread thaw but not rise. Cut rolls in half or thirds with scissors. Roll in cinnamon sugar mixture and drop into greased Bundt pan. Let rise. Bake at 375 degree F for 20 minutes or until golden brown. Let cool. Dump from pan and ice. Options: Sprinkle in chopped nuts of your choice as you drop the pieces in the pan. Effingham County HCE 3 September Major Lesson

4 BUBBLE LOAF ROLLS Submitted by: Karen Raber, Effingham County ½ c. chopped pecans 24 frozen rolls ½ c. margarine, melted ¼ t. cinnamon ½ c. brown sugar 1 sm. pkg. butterscotch pudding (not instant) Make these the night before you want to serve them. Stir brown sugar and cinnamon in melted margarine. Sprinkle pecans in greased Bundt pan. Dip each roll in margarine mixture and place on top of pecans. After all rolls have been placed in pan, sprinkle dry pudding mix over top. Cover lightly with a piece of waxed paper and leave on counter overnight. The next morning, bake in 350 oven for 25 to 30 minute. If top becomes too brown, cover lightly with foil. Let set 5 minutes, turn out and serve. SCRAMBLED EGGS AND SAUSAGE BREAKFAST ROLLS 8 eggs beaten 1 bread loaf 1/2 lb. browned/crumbled sausage 1-1/2 cups shredded cheese bread on it. Cover the bread with plastic wrap that also has been sprayed. Allow dough to thaw, but not rise. The dough will be ready to work with when it is a little cooler than room temperature. 5 Brown sausage in medium skillet. Once sausage is cooked, add beaten eggs and scramble. Cook until done. Spread the eggs and sausage evenly onto the dough. Top with cheese. Begin rolling like jelly roll. Cut into 1-1/2 strips and place in cupcake pan. Bake at 375 degrees F for 18 minutes. Serve with milk gravy poured over the top. SAUSAGE STUFFED ROLL By: Susan Hansen 2 (1 pound) loves frozen bread dough 1 pound bulk Italian sausage 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry 4 cups shredded mozzarella cheese 1/4 c. grated parmesan cheese 1 teaspoon dried oregano 1/2 teaspoon garlic powder 2 Tablespoons butter, cubed 1 egg, lightly beaten Thaw bread dough on a greased baking sheet. Let rise until doubled. Meanwhile, in a skillet over medium heat, cook the sausage until no longer pink. Drain and place in bowl. Add spinach, cheese, oregano and garlic powder; set aside. Roll each loaf of bread into a 14 in x 12 in rectangle. Spread sausage mixture lengthwise down the center of each rectangle. Gently press the filling down; dot with butter. Bring edges of dough to the center cover filling; inch to seal. Return to baking sheet, placing seam side down; tuck ends under and form into a crescent shape. Brush with egg. 6 Bake at 350 degrees F for minutes. Let stand before cutting. If desired, cool one loaf on a wire rack; wrap in foil and freeze up to three months. Note: Thaw frozen loaf at room temperature for two hours. Unwrap and place on greased sheet. Bake at 350 for minutes until heated through. CREAM CHEESE AND SAUSAGE BRAID 1 (8 ounce) cream cheese, soften 1 loaf frozen bread 1 pound browned/crumbled sausage bread on it. Cover the bread with plastic wrap that also has been sprayed. Allow dough to thaw, but not rise. The dough will be ready to work with when it is a little cooler than room temperature. Once thawed spread the dough into a rectangle. Cut the edges of the bread into 1-1/2 inch strips with scissors. Mix cream cheese and sausage and spread down middle of dough and braid the sides starting at the top and tucking it in. Let rise. Bake at 375 degrees F for 20 minutes or until golden brown. CHEESE STICKS From: Taste of Home Test Kitchen 1/2 cup grated parmesan cheese 1/4 cups finely chopped cheddar cheese 1/2 teaspoon Italian seasoning 1/2 teaspoon garlic powder 1 (1 pound) loaf frozen bread thawed 1/4 cup butter or stick margarine, melted Effingham County HCE 6 September Major Lesson

7 In shallow bowl, combine the first five ingredients; set aside. Divide dough into 16 pieces; roll each into a six inch rope. Dip ropes in butter, then roll in cheese mixture. Place 2 inches apart on a greased baking sheet. Let rise for 10 minutes. Bake at 400 degrees F for minutes. PIZZA 1 loaf frozen bread dough 1 pizza sauce 2-3 cups shredded cheese (mostly mozzarella) Use whatever topping you like: browned hamburger or sausage, pepperoni, diced onions, mushrooms, peppers, etc. bread on it. Cover the bread with plastic wrap that also has been sprayed. Allow dough to thaw, but not rise. The dough will be ready to work with when it is a little cooler than room temperature. Once thawed, spread the dough into a circle or rectangle. If the dough wants to creep back, dust your hands lightly with flour. You may put the dough in the oven for one minute and then spread it out again. Bake the dough for about 10 minutes. Add pizza sauce, cheese and toppings. Cook 400 degrees F for minutes or bread is golden brown. PIZZA ROLL UPS Follow directions for rectangle pizza. Roll up the dough with the toppings inside like a jelly roll. Cut into 1-1/2 in pieces and place on cooking sheet. Bake as above. Options: Use dinner rolls to make mini pizzas. Kids love to make their own.
