1 F BCTFC - ON FARM FOOD SAFETY PROGRAM FORM C - Employee Personal Hygiene and Food Handling Practices Policy & Training Record Instructions: Review this document while training employees. Document the training activitiy in the space provided (record trainer and trainee's name, date and signature). EMPLOYEE PRACTICES & FOOD SAFETY Employee Illness, Disease and Injury Go see a doctor if you know or suspect to be suffering from a contagious disease or illness transferable to food (ex: Hepatitis A, Salmonella, E. coli O157:H7) or you have minor illness (e.g., bad cold, diarrhea, vomiting). Food safety is everybody's job. As an employee you have a great impact on food safety. Treat and cover open wounds with bandaid and a waterproof covering (e.g., glove) to avoid blood or bodily fluids coming into contact with fruit. Employee Glove Use (if applicable) Employees handling fruit wear gloves Gloves are made of cloth or of materials that are not a source of contamination and can be easily cleaned. Wash and dry hands (or use wipes and sanitizer) before putting gloves on and after removing them. Replace the gloves if ripped or worn out Remove gloves when leaving the farm and wash them daily (if cloth). Wash reuseable gloves the same way you wash your hands (see procedure below). Wash them after putting them back on, when changing tasks that could contaminate the fruit. If made of cloth, gloves are laundered daily. Employee Hand Washing: (All persons that will come into contact with fruit) Wash your hands at the following frequencies: Before beginning work each day on farm, hands are to be washed at an approved and complete handwash station. Before entering production site Before putting on gloves (if used) After every visit to the washroom After a break, meal, drink or smoking After hand to face contact (ex: coughing, sneezing, blowing nose) After applying sunscreen and insect repellent After handling any materials other than the fruit (ex: fuelling equipment, spraying) Autofail: Observation of employee handling fruit after using washroom and not washing hands or improper use of handwash. PRE-MOISTENED WIPES AND HAND SANITIZER IS USED TO WASH HANDS: Hand washing procedure as follows: Use hand wipes to remove soil Place used wipe in garbage bin. AND THEN use one squirt of sanitizing gel and rub on hands until dry WATER, SOAP, PAPER TOWEL AND HAND SANITIZER IS USED TO WASH HANDS: Hand washing procedure as follows: Wet hands, lather with soap for approximately 20 seconds Scrub well (especially fingernails and knuckles) Rinse and dry hands with paper towel, place used towel in garbage bin AND THEN use one squirt of sanitizing gel and rub on hands until dry Employees adhere to the following: Employees know the difference between and know how to handle major and minor food safety deviations Always use toilet facilities and never spit. Store personal effects away from fruit (ex: lunches, drinks, clothing, shoes, smoking materials) and ensure activities such as lunch breaks and smoking are carried out in such a way that fruit is not contaminated. Dispose of waste in designated containers PRODUCTION PRACTICES Employees must inspect fruit during harvest to look for evidence of unusual animal or bird activity (ex: excrement) and discard fruit if it has been contaminated. Employees must harvest into clean food use bins Employees must to use the sides of the ladders not rungs when climbing or when carrying it. SECURITY Employees are aware of their surroundings and the people they come in contact with in and around the production site. Employees inform person responsible for the farm: of unknown visitors. Employees are trained in precautions they need to take when moving between production areas (e.g., : from orchard/vineyard to other agricultural activities carried out in the farm).
