1 Shrimp Quiche 8 green chili peppers 1 plastic bag 4 cups water 1 1/2 pounds shrimp 1 lemon, sliced 1/2 cup onion, chopped 1/4 cup butter 2 tablespoons butter 2 tablespoons white wine 1 tablespoon sherry 1 teaspoon chicken bouillon granules 1 garlic clove, crushed 1/8 teaspoon thyme 1/8 teaspoon marjoram 3 large eggs 2 cups shredded Muenster cheese 1 cup tomato, chopped 2 tablespoons mayonnaise 2 tablespoons sour cream 1. Place 8 green chili peppers on a baking sheet and broil for 5 to 6 minutes, turning often, until blistered on all sides. Place in a plastic bag, seal securely, and wrap in a towel for 30 minutes. Remove, peel, and remove the seeds. 2. Bring 4 cups water to a boil. Add peeled, cleaned shrimp and sliced lemon. Return to a boil, reduce the heat, and simmer for 1 minute; drain and discard the lemon. 3. In a large skillet saute until tender, chopped onion in butter. Stir in the chopped chilies and cook 3 to 5 minutes. Add butter, white wine, sherry, chicken bouillon, garlic, thyme, and marjoram. 4. Chop the shrimp. To the onion mixture, add the chopped shrimp, eggs, shredded muenster cheese, chopped tomato, mayonnaise, and sour cream; mix well. 5. Pour into a 9-inch unbaked pie shell. 6. Bake at 350 F (175 C) for 1 hour, or until the center is set. 7. Makes 8 servings.

2 Broccoli & Swiss Cheese Quiche 1 lb. broccoli 1 med. yellow onion, peeled & sliced 2 tbsp. butter 1 Quiche Crust (recipe follows) 4 eggs, beaten 3/4 c. cream 1 1/4 c. milk Salt & pepper to taste 1. Clean the broccoli and cut into flowerets. 2. Saute the onion and broccoli in butter until tender but not soft. Place the vegetables in the bottom of the quiche crust. 3. Mix the eggs, cream, milk, salt and pepper. Fill the shell and top with the Swiss cheese. 4. Bake at 375 degrees for 30 to 40 minutes or until a knife inserted in the center of the quiche comes out dry. Cool for 10 minutes before cutting. Can be served at room temperature. 5. If you are using a larger French quiche pan, then use a bit more of the dough. Roll out between two sheets of waxed paper. Place the pastry in the quiche pan or pie plate and prick the bottom with a kitchen fork. Line the inside with waxed paper or aluminum foil. Put two cups of dry beans into the pie crust and bake at 400 degrees for 12 minutes. Save the beans for the next pie crust you make. The shell is now ready for filling and baking. Makes 2 (9 inch) pie crusts or 1 larger crust.

3 Mushroom Quiche 1 box Pepperidge Farm seasoned croutons 1 c. water 6 oz. sliced Swiss cheese 1 lb. Italian sausage (removed from casing) 1 minced onion 1 med. size pepper, chopped 4 oz. can sliced mushrooms, drained 1 c. grated Mozzarella cheese 4 eggs, beaten 2/3 c. evaporated skim milk or light cream 1. Spread croutons in 13 x 9 inch pan. 2. Pour on water. Let sit 5 minutes. Top with Swiss cheese. Brown and crumble the sausage with the onion and pepper. 3. Drain well. Spread over cheese. Top with mushrooms and grated Mozzarella. 4. Beat eggs with milk or cream. Pour over Mozzarella. 5. Bake 30 minutes at 350 degrees or until set. Serves 6 or more.

4 Spinach Quiche 1 pkg (8 oz.) cream cheese, softened 4 eggs 1 cup pet evaporated milk 1/4 to 1/2 tsp. ground red pepper 1 pkg (10 oz.) frozen, chopped spinach, thawed and thoroughly drained 1/2 cup diced ham and/or chopped onion 1 prepared deep-dish pie crust, frozen 1. In a medium bowl, beat cream cheese with electric mixer until creamy. Beat in eggs, evaporated milk and red pepper. 2. Squeeze spinach between paper towels until almost dry. Stir spinach and ham or onion into egg mixture. 3. Pour into frozen pie crust. Sprinkle with salt and pepper to taste. 4. Bake in a preheated 350 degree F. oven on a preheated baking sheet for 55 to 65 minutes, or until a knife inserted in center comes out clean. 5. Makes 6 servings. Variation: Top quiche with tomatoes for added color.

5 Three-Pepper Quiche 1 green pepper -- cut in strips 1 sweet red pepper -- cut in strips 1 sweet yellow pepper -- cut in strips 1 9-inch pie shell -- unbaked 1 tablespoon margarine 4 eggs 1/2 cup liquid non-dairy creamer 1/2 cup water 1/2 teaspoon basil 1/8 teaspoon cayenne pepper 1. In a large skillet, sauté pepper strips in margarine until soft but not limp. 2. In a bowl, combine eggs, creamer, water, basil, and cayenne. Spoon peppers into unbaked pie shell. 3. Pour egg mixture over peppers. 4. Bake at 375 F for minutes until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving servings

6 Quiche lorraine 8 slices bacon, crisply cooked, crumbled (1/2 cup) 1 cup shredded Swiss cheese (4 oz) 1/3 cup finely chopped onion 4 large eggs 2 cups whipping cream or half-and-half 1/4 teaspoon salt 1/4 teaspoon pepper 1/8 teaspoon ground red pepper (cayenne) 1. Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling. 2. Heat oven to 425 F. With floured rolling pin, roll pastry into round 2 inches larger than upside-down 9-inch quiche dish or glass pie plate. Fold pastry into fourths; place in quiche dish. Unfold and ease into dish, pressing firmly against bottom and side. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute as desired. 3. Carefully line pastry with a double thickness of foil, gently pressing foil to bottom and side of pastry. Let foil extend over edge to prevent excessive browning. Bake 10 minutes. Carefully remove foil and bake 2 to 4 minutes longer or until pastry just begins to brown and has become set. If crust bubbles, gently push bubbles down with back of spoon. 4. Reduce oven temperature to 325 F. Sprinkle bacon, cheese and onion in pie crust. In medium bowl, beat eggs slightly; beat in remaining filling ingredients. Pour into quiche dish. 5. Bake 45 to 50 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

7 Quiche provençale For 2 quiches, 8 all bran pie shell 2 zuccini 4 tomatos 1 onion 3 eggs 20 cl of liquid cream 10 cl of milk 100 g of swiss cheese Olive oil Salt, pepper, thyme 1. Wash the vegetables. Slice the zucchini, remove pips(seeds) from the tomatoes and slice them. 2. Heat the oven at 180C. Sauté the peeled and sliced onion in olive oil (about 1 tablespoon). Add the vegetables and salt, pepper and thyme. Let sauté about 5 to 10 minutes. 3. Mix the eggs, the milk and the liquid cream and add the Swiss cheese, salt and pepper. 4. Pour into the 2 all brans 8 unbaked pie shell, the vegetables. Place them nicely with a fork and poor the eggs preparing with the cheese. BAKE TIME About 40 minutes at 180 C or 360 F. trick Before baking, add on top sliced zucchini and tomatoes to make a nice decoration. After cooking, distemper with olive oil for a better preservative time ( 5 days in a refrigerated counter).

8 Ham and cheese quiche 6 guests One broken dough One mid-sized container fresh cream One large onion, minced Smoked ham 1 egg Grated cheese - Add to personal taste Some butter Salt, pepper, nutmeg 1. Place the pie base in the mold. Do not precook. 2. Sauté the onions and the ham and add the spices. 3. Mix the sautéed onions and ham with the cheese, egg and cream. Place everything on the broken dough. 4. Cook for about 30 minutes.
