1 Crispy Coconut Chicken Serves: 2 2 Chicken Breasts 100ml Coconut Milk 75g Coconut Flour 2 tbsp Desiccated Coconut, unsweetened 1 tbsp Thai 7 Spice Salt & Pepper 1 tbsp Coconut Oil, melted 1. Preheat oven to 190c (170 fan), 375f, Gas Mark 5. Using a little coconut oil grease a baking sheet. 2. Cut chicken breasts in half & soak in coconut milk for 20-30mins. 3. In a bowl mix the flour with spices, coconut & seasoning. Dip Chicken into the flour to coat. Lay each breast on baking sheet, drizzle with a little oil & cook in oven for about 30 mins. Serve with mixed green salad. 31.5g 27.5g 28.5g 492.5kcal

2 Slow Cooker Chicken Curry 750g skinless Chicken Breast, cut into chunks 1 Onion, sliced 2 Garlic Cloves, crushed 1 Red Pepper, diced 1 large Potato, diced 2 Carrots, sliced 1 Chilli, sliced 1 tsp Coconut Oil 1 stalk Lemongrass, sliced 550ml Light Coconut Milk 2 Kaffir Lime Leaves 2 tbsp Curry Powder 1 tsp Ground Turmeric 2 tsp Ground Cumin 1 tsp Hot Paprika small pinch Cinnamon 250ml Water 1. Using non-stick frying pan gently stir-fry onion & garlic until golden brown & soft. 2. Place all the ingredients in slow cooker, give a good stir & cook on LOW for 9 hours. 40.8g 25.2g 11.7g 370kcal

3 Pork Vindaloo 550g Pork Fillet, cut into chunks 2 dried Chillies 1 small Onion, chopped 5 Whole Cloves 1 small Cinnamon Stick 1 tsp Cumin Seeds 2cm Root Ginger, peeled & grated 4 Garlic Cloves, chopped 1 tsp Taramind Paste 2 tbsp White Wine Vinegar 4 fresh Chillies, chopped 2 tbsp Coconut Oil 300ml Beef Stock 225g Tin Tomatoes 2 tbsp fresh Coriander, chopped 1. Soak the dried chillies in hot water for an hour. Drain & chop the chillies. 2. Place onion in small saucepan & cover with some water. Bring to boil, reduce to simmer, cover & cook for 15 mins. 3. Grind cloves, cinnamon stick & cumin seeds in pestle & mortar until fine. Place with other spices, paste, onion, all the chillies in a food processor & blend until smooth. 4. Heat oil in large saucepan, add pork & brown. Add curry paste & stir until pork coated. Pour in stock & tomatoes. Bring to boil. Transfer to slow cooker. 5. Cook on AUTO for 2 hours. Then switch to LOW & cook for 6-8 hours. 30g 4g 10g 226kcal

4 Beans with Spicy Sausage 800g Spicy Sausages, chopped 1 Onion, chopped 3 Garlic Cloves, crushed 1 Red Pepper, chopped 400g tin Kidney Beans, drained & rinsed 2 x 400g tins Chopped Tomatoes 50g frozen Sweetcorn 1 tbsp Olive Oil ½ tsp Ground Cumin 1 tsp Chilli Flakes 2 tsp Smoked Paprika 1 tbsp dried Oregano 1. Cook sausages in large saucepan in batches until browned all over. Set aside. 2. Heat oil in same large saucepan & add the onion, garlic & pepper, stirring until onion softens. Next add cumin, paprika, chilli & oregano. Cook, stirring, for about 2 mins. 3. Add beans & tomatoes. Bring to boil & simmer uncovered for 20 mins. 4. Return sausages to the pan along with the frozen sweetcorn. Simmer, covered for about 10 mins. Serve with steamed green vegetables. 42.3g 30.5g 19.7g 469kcal

Heat oil in large saucepan. Cook chicken in batches until browned. Set aside. 2. In pan cook onion, garlic, chilli & cumin, stirring, until onion softens. 3. Return chicken to pan. Add tomato, stock & oregano. bring to boil, then reduce to simmer. Cover & cook for 30 mins. 4. Add beans & peppers, simmer uncovered for 20 mins. 37.7g 22.7g 3.5g 274kcal

6 Trinidadian Beef 1kg Braising Beef 1 Onion, chopped 2 Garlic Cloves, chopped 3 Garlic Cloves, crushed 3 Red Chillies, chopped 300ml Beef Stock 1 tbsp fresh Thyme Leaves handful of fresh Coriander, chopped 2 tbsp fresh Parsley, chopped 4 tbsp Coconut Oil 2 tbsp Coriander Seeds ½ tsp Fennel Seeds ½ tsp Black Mustard Seeds ½ tsp Fenugreek Seeds ½ tsp Ground Ginger 1 tbsp Peppercorns 1 tbsp Hot Curry Powder 1. Dry fry the seeds & peppercorns in a non-stick frying pan for bout 1 minute. Crush in a pestle & mortar. 2. Blend, or food process, the onion, chopped garlic, coriander, thyme, chopped chilli, ginger, parsley & 1 tbsp of coconut oil. Tranfer curry paste to a bowl. Add the beef. Cover the beef in the paste. Put into fridge for 30 mins. 3. Heat remaining oil in large saucepan. Add the crushed garlic & curry powder. Stir & cook for 1 minute. Add the beef, stir over a medium heat for 10 mins. Add the stock, crushed spice mix, simmer covered for 1 hour. 4. Uncover & simmer for another hour. 5. Serve with vegetables. 55.2g 5.7g 19.7g 422kcal
