1 Human Nutrition and Diet Therapy HUN 2202 Online Sections Fall 2010 Course Information and Syllabus Course Guidelines and Policies Course Description HUN 2202 Human Nutrition and Diet Therapy Prerequisites: BSC 1010C with a grade of C or better or Principles of Nutrition HUN A course which focuses on the scientific principles of normal nutrition including specific nutrients, digestion, absorption, metabolism, and nutritional requirements of different age groups as well as a special focus on the application of nutrition principles to physical health. Emphasis is placed on the health care team approach to disease prevention and health restoration as well as care for persons in health care practice through Medical Nutrition Therapy. Please be aware that this is a demanding and rigorous course. The first 3 units are especially demanding. College level reading and writing skills are absolutely necessary to succeed. Students must be self-motivated and self-disciplined, possess good time management skills, and have the necessary computer skills and equipment to complete the course assignments. The best strategy is to start the course promptly and meet all the assignment deadlines from the very beginning of the semester. This class is conducted online. You must already possess good study and organizational skills and be skilled in saving, attaching, and sending documents as well as working with and the Internet. You must be willing to carefully read what is on the course site and complete and submit all assignments on time. This course is not an at your own pace course. Your professor may return on the weekend if her schedule permits. Unless otherwise indicated assignments will be graded and your grade will be posted within 7 days after the final due time for the assignments. Required Textbook (available at the Seminole State Bookstore) Understanding Normal and Clinical Nutrition, 8th edition Rolfes, Pinna, & Whitney, (Wadsworth Publishing) You will need your text from the very beginning of the course. You will not need to purchase the Diet Analysis software that some bookstores might have available. 1

2 Course Time Commitments This course begins with the required online orientation for ALL students. You will complete the orientation on your personal computer. The directions are available when you login to the course. Click on the MODULES from the menu bar on the left. Select Start Here and print and CAREFULLY read all directions for the course. This is an online course. All class activities are online. You will not be attending a weekly face-toface class but will be actively participating within the course website. Failure to sign on to the course and complete the orientation assignments the first week WILL result in being dropped from the course. Please keep in mind that it is your responsibility to make sure that you have the ability to connect to the Internet and access the course. Computer difficulties are not an excuse for failing to sign on to the course and/or turn in the assignment work on time. Your professor cannot help you with your computer problems. You must contact the distance learning office if you have software problems. There are computers available in the Seminole State Library for your use if you have problems with your own computer. Having an appropriate computer with word processing software that you can use to attach documents is required and will provide evidence of your commitment to the course. Note: If you have MAC computer, you will need to download either Internet Explorer or Mozilla Firefox in order to be able to support Sakai. If you don t, you may find that you are unable to complete and submit assignments. If you have computer problems, please view the How to Use Sakai. You may need help with Software Downloads, Technical Requirements, and Browser Setup Information. There are special considerations if you have a MAC computer. Please contact the distance learning office if you have questions. Navigation Information You will navigate throughout the course using the menu bar on the left-hand side of the course page. You should work through each of these tabs so that you will know what is on the website and can access it easily. 1. SYLLABUS Click on the SYLLABUS menu bar. You should print a copy of this item and put it where you can access it easily. The Syllabus will guide you through the various requirements of the course. Refer to it often for specifics about assignments, quizzes, examinations, and other components of the course. Every attempt has been made to make this document as accurate and complete as possible. You should be thoroughly familiar with the Syllabus and use it as a guide. Print a copy of the Syllabus for quick and easy access. Most student questions are already answered in the syllabus. 2. CALENDAR Tab Click on this tab and you will see a calendar that will list the assignments and due dates for the term. 2

3 3. MODULES Tab The MODULES tab has all the units and all the assignments for the course. Every assignment except for the quizzes and exams are available at the very beginning of the term. Click on the MODULES tab and select the Unit area in which you want to work. You will find several kinds of assignments listed there: A. Weekly Unit Reading Assignment and Specific Learning Outcomes. Read the assigned chapters and write out the answers to the Learning Outcomes questions. Do not submit your answers to your professor. They are for your use to guide your study for the course. Also, at the end of each chapter there are study and practice questions that will help you prepare for your exams. Did you know that your textbook has a companion online site with lecture slides, crossword puzzles, videos, animations, and practice quizzes? Go to this site &disciplinenumber=18 and see. Select the appropriate chapter and learn. Save under your Favorites. B. Topic Papers. There are 2 assigned Topic Papers. They are due in units D & G. Open the assignment and carefully follow the directions. These assignments will be submitted in the Assignment Drop Box for that specific assignment. Check the How to Submit Your Work under the Start Here module. Topic papers will be accepted late but there is a 1 point per day penalty (including weekends). There will be a required participation in a Forum for the topic paper please see the directions for the assignments. C. Other Assignments. There are three other types of assignments: Personal Nutrition Studies, Clinical Projects, and the Project on Adherence to a Diabetic Diet. These assignments are located in the unit week they are due under the ASSIGNMENTS tab. Check the Assignment Schedule for these assignments and their due dates. Assignments will be submitted through the course Assignment Dropbox for that specific assignment. When you open the assignment, you will find the directions for what you are to do. For information on how to submit assignments using the assignment drop box, go to the MODULES tab, select Start Here and then select How to Submit Your Work. Assignments will be accepted late but there is a 1 point per day penalty (including weekends). D. Quizzes. Required scheduled quizzes are taken on-line and must be completed during their week of availability. Study the weekly Reading Assignments, Specific Learning Outcomes, and your study notes and then go to the Quiz for that week and open it. Complete and submit the quiz by the due date. You will have 1½ minutes per question. The quizzes are timed and will lock after the due date/time. You may refer to your text while taking these quizzes, however do not depend on the text to look up every answer you will not have time. After they are graded (usually Mondays/Tuesdays) you will be able to return to the quiz and review your answers. Quizzes can be used to study for the midterm and the final exams. The quizzes are due on Sundays at 11:00 pm. Quizzes consist of multiple choice questions based on the weekly reading assignments. You may take the quiz only once make sure you are ready to take it when you open it. You may see your grade for quizzes in the Gradebook tab. In order to review your quizzes after they are released (usually on Monday/Tuesday) go back to the individual quiz click on your submission. 3

4 Communication Information Announcements You are responsible for reading all announcements posted by your professor in the announcements area of Sakai. Check announcements each time you login being sure to read all announcements posted since the last time you logged in. Policy: Except for Weekends and holidays, your professor will respond to s within 24 hours. After the first week, please send s to your professor to communicate only those personal issues you do not wish others to read or that you think need personal attention; otherwise use the forum is an area designated for course questions. When you post a question on the discussion board, I can answer it and others can see the answer and learn, too. Assignment submission policy: All quizzes are submitted automatically through the course software. All other assignments (Clinical Applications, Personal Nutrition Studies, Topic Papers, and Diet Adherence Project) are submitted in the specific assignment dropbox for that assignment. Do not submit assignments through . Homework submitted through will not be graded. Assignments must be submitted using either Microsoft WORD (.doc,.docx) or Rich Text Format (.rtf). It must be done this way. Do not use Word Perfect, Microsoft Works, or OpenOffice, etc. SUBMITTING YOUR WORK Submit your work by saving it as a rich text file (.rtf) or a Microsoft WORD (.doc or.docx) file and attaching it to the assignment dropbox for this assignment. Do not copy and paste it into the assignment area. It must be ATTACHED. Incorrectly submitted assignments will not be graded and if you resubmit correctly there will be a penalty for any days late for the assignment. Once you submit an assignment you should be able to go back in to your submission and see what you have submitted and the attachment if you do not see it then it was not done correctly. If you cannot see it then neither can your professor. Saving and submitting your files: 1. If your computer has Microsoft WORD as its word processing software, you only need to follow your computer s directions. 2. If you do not have WORD, you must submit your files using rich text files. How to create rich text files (.rtf) using your own word processing program: 1. All word processing programs can create and read rich text (.rtf) files. Even if the professor does NOT use the same word processor or version as you do, the professor will be able to read a rich text file (.rtf). 2. Begin by opening whichever word processing program you use. (Open Office, WordPerfect, etc.) 4

5 3. Type and save the essay. (If you already did that, then find and open the file.) 4. With the file open: a. Click File b. Then select Save As and a box will open. Enter the file name. Your file name should reflect your assignment. For example if you are doing Personal Nutrition Study 1. That should be your title. You could even include your name in the file name. c. The next line down has Save as type. Next select rich text file (.rtf) from the choices of various files types (choices are usually found in a drop down menu at the bottom of the box) d. Finally save the file as a rich text file. Your file name then will have.rtf at the end of your file name. 5. Rich text files always have the.rtf suffix after the file name. You will know if you successfully saved your file in rich text format by checking the complete file name to see if the suffix is.rtf. (MSWORD files are referred to as documents and use.doc suffix. Other word processing programs use still other suffixes.) How Your Grade Will be Determined Grades will be calculated with input from four distinct course requirement areas: Unit Quizzes For each of the Content Units there will be a quiz. The quizzes are posted until Sunday of each week under the weekly unit under the Tests & Quizzes tab. When you are ready to take the quiz, click on the quiz for the week. The quizzes are timed and once you open the quiz, you will have 1½ minutes per question to complete and submit the quiz. Do not click on the quiz to open it until you are ready to take the quiz. The quizzes are available for 1 week. There is a specific due date and time for each quiz. You may submit a quiz only one time. The quizzes are all due on the specified Sunday at 11:00 p.m. You may complete the quizzes earlier in that week. I encourage you to NOT wait until Sunday to complete the quizzes. Computer problems do happen and they always seem to happen when you are running late. The due date and time for each quiz is posted on your Assignment Schedule and you will have until that date and time to complete and submit the answers for the quiz. The quiz is graded at the end of the availability period. You may review your results and you may use the quizzes to study for the midterm and final exams. Go to the How to Use Sakai Tutorial to learn how to review your quizzes. You may not print the quizzes. Each quiz will be locked at the end of its specified posting. If you have extreme circumstances that prevent you from completing a quiz on time, you must contact your professor immediately. I will unlock one (and only one) quiz for late request and it will be available for one week only past the original due date. There will be a 25% point penalty for the late quiz. Your professor knows that stuff happens and this provision for one late quiz accommodates that life circumstance. 5

6 Topic Papers You will have 2 assigned Topic papers. They are scheduled throughout the term and are available from the beginning of the term. They will be located in the unit of the week that they are due (Units D and G). Follow the directions for each of them carefully. These assignments are submitted using the Assignment Drop box. You should not send them to your professor using . These assignments are to be placed where all students can read them. You will then discuss them with your classmates in a forum. These assignments are worth 20 points each. Topic papers will be accepted late but there is a 1 point per day penalty (including weekends). 5 points will be deducted if you do not participate in the forum. Points are earned for the Topic papers as follows. 20 Excellent work including Discussion Forum Participation Good work Satisfactory work Less than 10 poor work Follow all the directions for the topic papers. Just meeting the minimum requirement does not guarantee full credit for your work. Points are taken off for each day a paper is late and for each requirement not met. That includes if you submitted the paper incorrectly, in the wrong format, or neglected to attach the document to your submission. If you do not receive an A or B, your professor will explain why. You may not correct your errors and resubmit. Other Assignments Other Assignments include 4 Personal Nutrition Studies (10 points each, due in Units B, E and H), 3 Clinical Applications (15, 15, and 25 points, due in Units C, I, and K) and Project on Adherence on the Diabetic Diet (20 points, due in Unit F). The scheduled due date for each of the assignments is included in the Assignment Schedule. To find the assignments, get your printed Assignment Schedule and find the specific assignment. Under the ASSIGNMENTS tab, select the Unit for the week in which the assignment is due. Carefully follow the directions. All of the Other Assignments are available at the beginning of the course under the specific week they are due. You may complete the assignments early. The grading for these assignments is similar to that listed above with the Topic Papers. Just meeting the minimum requirement does not guarantee full points. Points are taken off for each day a paper is late and for each requirement not met, including submitting in the wrong format. If you do not receive an A or B, your professor will explain why. You may not correct your errors and resubmit. Late assignments (not including quizzes or exams) will be accepted with a one point penalty for each calendar day they are late including weekends up to 10 days. All assignments will be sent to your professor through the course and submitted through the specific assignment dropbox.. For example, Personal Nutrition Study 1 is due in Module B you will see the assignment and Assignment Dropbox under the Assignments tab.. Click on that and follow the directions. For information on how to submit assignments using the assignment dropbox, go to the MODULES tab, select Start Here and then select How to Submit Your Work. You MUST be able to save and attach documents for the assignments in this course. You must submit assignment in rich text format (.rtf) or Microsoft WORD (.doc,.docx). Assignments not submitted in the correct format will not be graded until they are properly submitted. I cannot open other formats. Failure to submit in the correct format initially may result in point reductions because the properly submitted assignment was submitted after the due date. 6

7 Examinations There are two examinations required for this online course. Each exam is worth 100 points points each = 200 points. The exams are based on the previous quizzes and additional questions. The questions are generated from a quiz pool so you will see new questions on the midterm and final. Students will complete these exams online using Sakai software during the days that are specified on the Assignment Schedule. In these exam situations, once you have opened the exam you must finish it in one sitting and will have 120 minutes to complete and submit the exam. Be absolutely sure that your computer is reliable. If you are unsure of your computer, you must find a computer that is reliable. The exams are based on the material and questions found in the previous quizzes. There will be new questions as well please prepare for the exams. Also, please make sure that you have removed all the distractions from your testing area. This means the child crawling around on the floor, the dog that needs to be walked, the laundry that needs to be moved to the dryer, the cell phone (and house phone). Be focused on the exam and the exam only. Grading Summary (Total 630 Points) Topic Papers (2) Orientation Quiz Unit Quizzes (12) Examinations (2) Personal Nutrition Study (4) Clinical Applications (3) Project on Diabetic Diet 40 possible points 5 possible points 270 possible points 200 possible points 40 possible points 55 possible points 20 possible points A = (90%) B = (80%) C = (70%) D = (60%) There are no extra credit assignments or points. In this class POINTS COUNT all assignments are required and your grade depends on them. If you want to ensure the best possible grade - complete all assignments and submit them on time. Withdrawal Policy To avoid being dropped from the class, you must login during the first week of class and complete the orientation assignments. Students may withdraw from the course up to the published college withdrawal date October 25, After that time, neither you nor your professor will be able withdraw you from the class. If you fail to withdraw you by October 25th, you will receive the grade you have earned. Academic Integrity You are expected to maintain the highest standards of academic honesty and integrity in this and all courses as a student at Seminole Community College. If you fail to maintain these standards as a student in this class I will pursue the fullest implementation of academic discipline for your offense. 8 Course Objectives On completion of this course, you should be able to: Identify the forces that influence an individual's eating pattern and demonstrate knowledge of the dietary goals and guidelines set for Americans by listing these guidelines and specifying ways to implement them into the planning of healthful diets. Describe the process of digestion, absorption, and metabolism. This is to include identifying the parts of the digestive system, describing the mechanical and enzymatic activities involved in digestion, and discussing the hormonal regulation of the digestive functions Analyze the nutritional adequacy of daily food intake using the Food Guide Pyramid, calculating the daily intake of specific nutrients, and comparing them to an established standard. Identify alternative diet plans and explain how they are different from the Food Guide Pyramid Discuss the structure, classifications, function, and dietary sources of carbohydrates and identify abnormalities of carbohydrate digestion, absorption, and metabolism Describe the chemical structures, classifications, properties, and functions of lipids, and describe how the body digests, transports and metabolizes them Describe the chemical structures, synthesis, and functions of amino acids and proteins, and identify the protein needs of the body and alternate methods of meeting these needs Relate energy balance to weight control by reviewing the nature, forms, and measurement of energy; by identifying the factors that determine the energy needs of the body Compare the individual and collective functions of water-soluble and fat-soluble vitamins and analyze the body's requirements, sources, deficiency diseases and symptoms, and potential toxicity. Describe the functions, requirements, sources, deficiency symptoms and potential toxicity of essential minerals List the specific nutrient needs of pregnancy, lactation, infancy, childhood, adolescence, adult life, and the later years Identify the effects of illness on nutritional status Develop nutrition assessment and care plans Identify the specialized nutrition support products and modalities Demonstrate knowledge of the following dietary/nutritional modifications; diets modified in constancy and texture, diets modified in calories, diets modified in carbohydrates, diets modified in fat, diets modified in protein, diets modified in minerals, Develop plans for nutrition care in; gastric disease, liver and pancreatic disease, cardiovascular disease, disease of the kidney, surgery, trauma, or burns, cancer metabolic stress. 8
