5 Activities The Ligabue Cruise Division is specialized in every aspect of hospitality management and affiliated services for seagoing and river cruise ships. The Division supplies products and services to major international companies and at present manages 11 ships and supplies 3 million meals a year. Our shore side staff of 8 dedicated customer-oriented cruise experts include operation managers, corporate chefs and pastry corporate chefs. All have long experience gained on board of some of the most prestigious cruise ships. Our fully-trained on-board employees - many have been with us for several years - are of various nationalities and are ship experienced. 5

8 The Organisation To provide impeccable service, Ligabue has adopted an internal code of excellence. To pursue this objective our management team is organised in 5 main areas: Operations Excellent cuisine Human resources Total Quality Assurance and Food Safety (HACCP/USPH) Purchasing and Logistics 8

9 Operations Our operation managers are experts individually responsible for the various aspects of cruise catering: Overall ship management Service Quality Standards Research Product supply Liaison with the culinary division Human Resources Supply chain Liaison and co-ordination with ship owners and/or customer administration Training programs Port services Fuelling 9

10 Excellent cuisine The Culinary Area is run by a corporate chef and a corporate pastry chef. Both are award-wining celebrity chefs who have built up considerable expertise through working in internationally renowned restaurants and on board various kinds of ships. They are responsible for the following activities: creating menus monitoring on-board production, food quality and presentation standards organising and implementing kitchen staff training supervising chefs, pastry chefs, bakers, etc. selecting products establishing product standards with suppliers. 10

12 Human Resources People always come first at Ligabue both the end customers and our staff. In the Cruise Division the human resources are carefully and sensitively managed by an experienced team with various tasks: selecting the best person for every job profile and specific position in the various services recruiting in various countries to hire the most suitable top professionals in the industry, either directly on the market or in collaboration with leading professional hotel schools implementing specific recruiting policies and continuous education and training programmes for all staff organising various specific training programs, and dealing with careers advancements, promotions, bonuses and benefit systems preparing and organising all travelling, visas, permits and other formalities for our crews. 12

14 Total Quality Assurance & Food Safety The Quality Assurance Department has the vital mission of dealing with various aspects of quality and safety standards. This means assuring that all the specific operational standards are followed and that the food safety programmes (HACCP and USPH) are strictly applied. Moreover, we comply with all the major internationally required standards, guidelines and operative practices, and our Corporate Quality System Management is ISO 9001:2008 certified. 14

15 Purchasing and Logistics Our procurement and logistics organisation has considerable, wide-ranging experience in procuring and supplying goods wherever our operations are located. We always seek top quality food products and regularly conduct market research to update our supplies or to meet specific customer requirements. Thanks to a worldwide network of port facilities, the Logistics Area is in a position to ensure the best products are delivered on time and in the most efficient and professional way. 15
