2 The story of BILLECART-SALMON Champagne began in the early 19th century, in the village of Mareuil-sur-Aÿ, near Epernay. It was here in 1818, that husband and wife, Nicolas François Billecart and Elisabeth Salmon, both in love with the same terroir decided to found their own Champagne House.

3 Century after century, harvest after harvest, a long story has been written. Give priority to quality, strive for excellence, a motto handed down from generation to generation. Today, the Billecart family has remained loyal to Mareuil-sur-Aÿ with the sixth generation now at the helm of the House, represented by François and Antoine Roland-Billecart under the helpful guidance of their father, Jean Roland-Billecart.

4 A carefully managed art form From the Côte des Blancs to the Reims Montains, not forgetting the right bank of the Marne River, the best vintages are produced. Chardonnay, Pinot Noir and Pinot Meunier ripen on exceptionally rich soil. Conscious of the quality of their champagnes, the House pays particular attention to selecting the best grapes. The House covers around 80 hectares and sources its grapes from 220 hectares, in 40 grands crus of the Champagne region. The BILLECART-SALMON House preserves the best of ancestral traditions, carefully combined with the assets of modern technology. The carefully selected grapes are put through one of the last existing traditional presses in the region. The modern sludge removal process was introduced at the end of the 1950s. Furthermore, the bottles are still housed within the confines of the chalk cellars dating from the 17th and 19th century. In their relentless pursuit of perfection, the House has equipped itself with a chai for barrels producing vintage wines vinified in oak.

5 Distinction and recognition The knowledge accumulated over several generations and which endures today allows the House of BILLECART-SALMON to be rewarded by its peers and by the world of oenology. Champagne of the Millennium In 1999, the Nicolas François Billecart 1959 vintage was voted the Champagne of the Millennium by a committee of experts at a blind tasting session in Stockholm involving 150 vintages from the most illustrious champagne producers. The 1961 vintage came second. Revue du Vin de France The Brut Réserve non vintage and the Brut Rosé non vintage were awarded the title of Best Brut Non-Vintage champagnes by the board of experts for the publication La Revue du Vin de France in December 2010.

7 BRUT RÉSERVE - HARMONY AND BALANCE The Brut Réserve is a round, harmonious and balanced wine. Its blend is made with Pinot Noir, Chardonnay and Pinot Meunier, sourced from the best sites in the Champagne region. A perfect aperitif or accompaniment for all occasions. BRUT ROSÉ - ROMANTIC CHAMPAGNE The production secrets and the vinification method of this cuvée go back to the origins of the House of BILLECART-SALMON. The Brut Rosé is a blend of Chardonnay, Pinot Meunier and Pinot Noir vinified as red wine. For dessert, it will add a sublime touch to red fruit flavours. BLANC DE BLANCS GRAND CRU - DELICACY AND ELEGANCE This Chardonnay cuvée has been elaborated from the grand cru vineyards of the Côte des Blancs. Its great vinosity and a surprisingly fresh finish is particularly appreciated with seafood or grilled fish. EXTRA BRUT RÉSERVE - PURE AND NATURAL A new definition of a refined style, this cuvée is made with Pinot Noir, Pinot Meunier and Chardonnay with no sugar added to the dosage. A tactile and harmonious palate is finished with a delicious minerality. A surprising association with the finest dishes (veal carpaccio, scallops a la plancha and marinated raw fish with citrus fruits).

9 NICOLAS FRANÇOIS BILLECART BALANCE AND RICHNESS This exceptional wine was introduced in 1964 as a tribute to the House s founder. It results from the blending of grands crus, Pinot Noir and Chardonnay. Its vinification, partially in traditional oak casks, underpins the generous character of this fine, elegant and rich wine which enhances the flavour of poultry or white meat. ELISABETH SALMON POWER AND COMPLEXITY Since 1988, this cuvée has been a tribute to the co-founder of the House, Elisabeth Salmon. This cuvée is elaborated from an equal blend of grands crus of Pinot Noir, a part of which is vinified as red wine and Chardonnay and will accompany the most superb dishes. BLANC DE BLANCS VIVACITY AND DELICACY Chardonnay in grand style, a model of balance and a pure product of the Chardonnay vine. It is the result of a blend of the best grands crus sites of the Côte des Blancs. Ideal as an aperitif, this vintage goes well with exceptional fish or seafood. VINTAGE 2006 EXTRA BRUT - INTENSE AND ATTRACTIVE The blend of this Extra Brut cuvée, of which 20% is vinified in oak, has been made with a strong dominance of Grands Crus Pinot Noir and completed by the elegance and minerality of the Chardonnay. This vintage in all its finesse marries well with the best seafood, risottos or finest hams.

11 CLOS SAINT-HILAIRE - RARE AND COMPLEX This new unique Blanc de Noirs cuvée bears the name of the Patron Saint of Mareuil-sur-Aÿ. The one hectare vineyard has always belonged to the family and responds to the most stringent norms; a single, unbroken and enclosed plot with a complete vinification installation in situ. The magic of the soil added to human skills has produced an exceptionally pure wine sourced exclusively from Pinot Noir and vinified in traditional oak casks. This cuvée of extreme excellence will tickle your taste buds especially when accompanied by truffles, foie gras or shellfish. For each vintage, there will be a limited release of between 3,500 to 7,500 bottles. A new revelation CUVÉE BRUT SOUS BOIS - CAPTIVATING AND ORIGINAL The House of BILLECART-SALMON is renewing the spirit and savoir-faire of the original champagnes with this new cuvée, composed of a third of each champenois grape variety. Unique and vinified entirely in oak, this champagne unveils a radiant yellow crystalline appearance with golden reflections. Its intensity, character and honesty enables it to marry beautifully with shellfish or poultry.
