2 Introduction Honey production requires the contribution of many specific skills and hence professional training programs must use appropriate tools to enable the trainees to familiarise with the various production stages while working on small scale production setups. Didacta Italia has enriched its product line-up in the agroalimentary sector with a full line of modular and highly flexible pilot plants for hands-on training in honey making technologies. The training units proposed by Didacta have the following characteristics: derived from industrial plants, they are suitable for the execution of processing cycles that reproduce the actual operating conditions of an industrial setup; they make it possible to apply new production technologies; they can be used on small product quantities; they are supplied with user manuals providing detailed descriptions of exercises that the students can perform. They are available in standard configurations: Honey making line Apiculture line These lines, produced by Didacta Italia, include the various procedures that are carried out to obtain honey in saleable form, for consumption or preservation, while the additional articles that can be produced on these lines, wax and sheets of beeswax, make for an appreciable enhancement of the quality and economic worth of the original product. The apiculture line, in particular, makes it possible to produce honey by working directly in an apiary, enabling the trainees to get to know the various bee keeping techniques and learn how to process and make use of beehive products. The versatility of the proposed structure enables future honey production and distribution operators to learn the job by making use of appropriate systems and tools, which are both complex and extremely innovative. The pilot plants reproduce all the operating conditions or a real production facility. Besides the equipment, Didacta proposes a number of pre- and after-sales services (development of ad hoc projects, advisory services, installation at the customer s premises, training courses ) adding up to a real transfer of know-how and skills that cannot be easily found on the market. 3 FTC15 Honey Processing Line This training unit is equipped with: a) Auxiliary equipment Steam generator (T71D/40/S) and CIP unit (TA34D) for manual, automatic, chemical and physical equipment cleaning. b) Pilot plants Thanks to their modular design, these plants make it possible to process the raw materials and convert them into a range of finished products, either for immediate consumption or for long-term storage. All the items that come into direct contact with foodstuff are made entirely of 304 or 316 AISI stainless steel. c) Accessories and instruments The series that we propose permits the qualitative analysis of the product, while it is being processed and as a finished product; to this end, the operator is provided with indications on how to set the proper functional parameters on the pilot plants and what to do if any changes become necessary. This technological laboratory houses a production line in a minimal configuration having the following operational capacities. 5 FTC15 Honey Processing Line Processing cycle: Plant specially designed for processing: Honey Honey processing stages consist of a sequence of procedures that a beekeeper executes to obtain honey in marketable form. Human intervention begins when the bees have completed their activities, i.e., at the end of the flowering period, when the bees have stored the honey in the beehives and have capped the cells with wax. The plant has been designed so as to ensure that the product remains pure throughout the processing cycle, from the beginning of the line to the bottling station, without undergoing any sort of addition and retaining its original physical-chemical and organoleptic properties, i.e., precisely those characteristics that would be undermined if the technological processes were not performed correctly. The processing stages described below are those used in rational modern beekeeping. The processing stages for the production of marketable honey normally include: Uncapping; Honey extraction; Settling; Dehumidification; Filtering - Ripening; Packaging UNCAPPING Beehives are generally capped, i.e., the cells are closed with wax plugs. These caps have to be removed to allow the honey to flow out. This is done through a mechanical process by means of the appropriate equipment. HONEY EXTRACTION When the cells have been uncapped, the frames are placed in the extractor where the honey is squeezed out thanks to the centrifugal force. SETTLING Once removed from the extractor, the honey is made to settle by having it pass through a filter and a tank with siphons that trap the impurities. The tank is double-walled and electric heating improves the flow of honey so that during this process most of the impurities are removed and the honey that reaches the outlet is almost clean. DEHUMIDIFICATION Dehumidification is achieved by means of a device whereby the honey is continuously exposed to the action of a powerful dehumidifier, resulting in a rapid decrease in relative humidity without using heat to avoid damaging the organoleptic qualities of the product.

6 FILTERING RIPENING The honey is poured into the ripening tanks through filters that collect wax residues, bee fragments and any other impurities that may have ended up in the honey accidentally. The filters come in different mesh sizes and it is common practice to use a couple of filters with different ratings (coarse, fine): the filters consist of nylon bags. In the ripening tank the honey settles and the air surfaces as tiny bubbles forming a layer of foam which is removed at the end of this process. PACKAGING When the honey has become clear through the elimination of the air and before it begins to crystallise, it can be placed in containers for sale or long-term storage. Bottling is by means of a special packaging machine.
