2 Vidal Blanc Ice Wine 2010 Estate Grown Cayuga Lake Rich flavors of Mandarin oranges, dried apricots, honey and lightly layered caramel intertwined with luscious sweetness and a crisp, lively balance in our Vidal Blanc Ice Wine. The grapes for this special wine where picked early in the morning of December 14th 2010 at 13 degrees Fahrenheit. They were carefully pressed while frozen, yielding a small amount of incredibly sweet juice at 45.8% sugar. The juice was fermented slowly at a cool temperature to retain the full complexity of flavors. Enjoy after a meal with a rich dessert or ripe cheese. 3 Brut NV Finger Lakes Our Brut is a rich and elegant accompaniment to any festive occasion. This fine sparkling wine is finished semi-dry. Varietal Composition = Chardonnay & Cayuga Residual Sugar = 1.5% Alcohol = 12%

4 Barrel Reserve Chardonnay 2011 Finger Lakes This wine offers flavors of fresh pear, green apple, and a hint of butterscotch. Toasted French oak balances the fruit and carries through to the finish. This vibrant style makes it a harmonious companion for creamy dishes. 6 Sunrise Hill Farms Dry Gewurztraminer 2011 Cayuga Lake The Sunrise Hill Gewurztraminer grapes are grown in a meticulously maintained vineyard on the west side of Cayuga Lake. The grapes were carefully vinified into this fine wine. This Gewurztraminer has exotic spice and tangerine-like aromas that are followed by a flavorful, crisp finish. This fine wine is well suited with Asian, Cajun, or Latin cuisines. 7 Seyval Blanc 2011 Seyval Blanc is a refreshing flavorful wine. With pleasant fruit flavors that mingle with delicate vanilla from French oak barrel fermentation. 8 Dry Riesling 2011 Finger Lakes Our Dry Riesling exhibits clean peach-like aromas that complement a crisp, lingering finish. This elegantly balanced wine is an ideal accompaniment with seafood, chicken or flavorful Asian cuisines. The Riesling grape variety is finicky and is suitable only in limited grape growing areas of the world. Over the years the Finger Lakes area of NY has proven to have an ideal climate and terroir for this noble variety. 9 White Cabernet Franc 2011 Finger Lakes This pretty wine has flavors reminiscent of raspberries and strawberries. The semi-dry finish makes it suitable with exotic lunches or picnics. 11 Riesling 2011 Finger Lakes This bright flavorful Riesling with lots of fruit has a clean start with a mild sweetness and finishes with a hint of citrus. 12 Estate Grown Cayuga White 2011 Cayuga Lake Cayuga White is a hybrid grape developed by Cornell in 1972 from Seyval Blanc and Schuyler. Cayuga has bold citrus flavors of tangerines and oranges. This semi-dry wine is great for picnics and with grilled vegetables. 14 Vignoles 2011 Estate Grown Cayuga Lake Vignoles is a semi-sweet white wine with bold fruitiness, especially pineapple flavors that brighten your palate. Vignoles makes a great aperitif and goes well with spicy Asian dishes or desserts such as cheesecake. 15 Niagara NV New York Table Wine Knapp s Niagara has intense fruit flavors reminiscent of biting into fresh green grapes and a pleasant semi-sweet finish. 18 Catawba NV New York Table Wine Catawba grapes, first discovered along the banks of the Catawba river in North Carolina in the 18 th century, are a member of the vitis labrusca family of grapes to which concord, Niagara, and Delaware are also members. Knapp s Catawba has a pleasant foxy aroma mixed with floral flavors with a pleasing semi-sweet finish in this old New York style wine. 23 Lemberger 2010 Finger Lakes Knapp s Lemberger is a medium bodied wine with pleasant plum, cherry and herb flavors complemented by an elegant oak dimension. Lemberger is also known as Blaufrankisch and is considered the Pinot Noir of the east. 24 Sangiovese 2009 This Chianti variety is a rare find in the Finger Lakes. Our Sangiovese is rich with red cherry and herbal flavors mingled with a moderate oak. The Sangiovese variety is very unusual outside of its native Italy. The vines themselves have proven to be surprisingly cold hardy, though the crop is often stingy. With careful attention in the vineyard, then judicious cellaring at the winery, a rich red wine with pleasant tannins can be achieved. 25 Cabernet Franc 2010 Finger Lakes Knapp s Cab Franc is a delicious medium bodies red wine with flavors of plum and herb. This wine is an excellent companion to creamy cheeses and chocolate. 26 Merlot 2011 Finger Lakes A ripe Merlot, rich in fruit flavors with supple tannins. The finish has a spice earthiness, followed by a touch of toasty oak. Excellent served with grilled fish or meats, or with a warm vegetable salad. 32 Brandy Hand Crafted & Alambique Distilled Knapp Winery acquired its handmade 100% copper alambique pot still in 1995 from Portugal. At the time Knapp was the only winery on the east coast to operate a pot still for the production of brandy. Having been successful at making high quality hand crafted brandy, several other wineries in the northeast have followed Knapp s lead, but our brandy still sets the benchmark! Knapp s brandy has rich buttery oak aromas complemented by moderate floral flowers. This brandy is delightfully warm with mouthwatering butterscotch flavors. It is 80 proof with no residual sugar.
