16 No-Bake Strawberry Rose-Flavoured Cheesecake PA TRAINER CHEF ALLAN TEOH INGREDIENTS BASE 100g digestive biscuits, finely crushed 80g macadamia nuts, finely chopped 20g cornflakes, finely crushed 150g unsalted butter, melted FILLING 250g cream cheese (80% less fat), at room temperature extra silky tofu caster sugar 100g 120g 3 tbsp plain yogurt 80g strawberry (fresh), pureed 45g strawberry (fresh), leaves removed & cubed 1¼ tbsp rosewater 1 tbsp fresh orange juice ¾ tbsp gelatine 1½ tsp water 1½ tbsp warm water TOPPING 80ml whipping cream Some edible pink colouring METHOD For base: Mix digestive biscuits, nuts and cornflakes with melted butter. Press 1-1½ tbsp mixture into the base of a cup, and freeze until ready to use. For filling: Soak gelatine with 1½ tbsp water and let stand for 20 secs. Add 1½ tbsp warm water and stir until gelatine dissolves. Set aside the mixture. Place tofu in a microwaveable bowl and microwave for 30 secs. Drain the tofu for an hour. Process tofu in a food processor until smooth. Add cream cheese, sugar and beat until creamy. Add yogurt, orange juice, rosewater and gelatine mixture and blend for 3 min. Place strawberry puree into food processor and process for another minute. Put cubed strawberries into crust and spread it out, pour batter into prepared base and chill in the refrigerator for 2-3 hours. For topping: Whisk whipping cream for 1 min until semi-stiff peaks are formed. Add a few drops of pink colouring and continue whisking until stiff peaks formed. Place the whipped cream into a piping bag with a rose-petal nozzle, pipe a rose on top of the set cheesecakes. Garnish with whole strawberries, if desired. 16 SERIES OF COURSES
