1 CHRISTMAS AND NEW YEARS COOKING AND REHEATING INSTRUCTIONS COOKING INSTRUCTIONS Transfer items in plastic containers to oven-safe dishes before reheating them. Starters Brie en croute Keep well chilled before heating. Preheat oven to 375 degrees. Cook for minutes, until the puff pastry is golden brown. Let sit for 5 minutes, serve warm. Entrees Beef Wellington Preheat oven to 400 degrees. Put wellington on parchment lined baking sheet. Bake for minutes or until golden brown. Check internal temperature with a meat thermometer. Continue to bake covered until 145 degrees medium, 155 for medium well and 165 for well when checked with a meat thermometer. Remove it from the oven, let it rest for at least 10 minutes before carving. Salmon en Croute Keep well chilled until ready to go in the oven. Preheat oven to 375 degrees. Put on parchment lined baking sheet. Bake for 45 to 60 minutes until golden brown. Check internal temperature with a seafood thermometer and continue to bake covered until 145 degrees. Remove from the oven, let it rest at least 5 minutes before cutting. Prime Rib Roast Preheat oven to 450 degrees. Put roast on a rack in a heavy roasting pan, uncovered, bone side down. Cook roast for 15 minutes. Reduce the temperature to 325 degrees. Continue to cook until it reaches an internal temperature of at least 145 degrees medium, when checked with a meat thermometer, approximately 2 to 2 ½ hours. Or continue to cook to 155 for medium well and 165 for well. Check temperature with a meat thermometer half an hour before the expected end of the cooking time. Insert the thermometer into the thickest part of the meat not touching fat or bone. Remove roast from the oven, let it rests for at least 10 minutes before carving. Semi-Boneless Leg of Lamb Preheat oven to 400 degrees. Put lamb in a heavy roasting pan, uncovered. Roast for ½ hour, reduce temperature to 350 degrees and continue cooking until it reaches an internal temperature of at least 145 degrees medium, when checked with a meat thermometer. Or continue to cook to 155 for medium well and 165 for well. Check temperature with a meat thermometer half an hour before the expected end of the cooking time. Insert the thermometer into the thickest part of the meat not touching fat or bone. Remove roast from the oven, let it rests for at least 10 minutes before carving.

2 Oven-Ready Turkey Put the turkey in a heavy roasting pan. Preheat the oven to 475 degrees. Remove the seasoned turkey, butter, salt, pepper and stock from the oven-ready turkey box and set aside. Refrigerate the cranberry sauce and gravy. Put the aluminum roasting pan on top of a sheet pan for added stability. Melt the butter and drizzle it over the top of the turkey. Roast the turkey on 475 for 30 minutes, until lightly browned. Baste the turkey and tent the breast with aluminum foil. Reduce the temperature to 375 degrees. Once an hour, baste the turkey by aspirating the liquid on the bottom of the roasting pan with a basting bulb and squirting it over the surface of the turkey along with the stock we provided. Continue to roast the turkey until the internal temperature of the thickest part of the breast and innermost part of the thigh reaches 165 degrees, at this point the juices should run clear and the thigh and leg joint should move loosely. When the turkey is fully cooked, remove it from the roasting pan and let it rest cover it with aluminum foil for minutes before carving. Use the salt and pepper to taste. While the turkey is resting, warm the gravy and remaining dishes. How long will the turkey take to cook? The general rule of thumb is that every pound of turkey requires minutes of cooking. An 8-10 lb turkey typically cooks in 2.75 to 3 hours, a lb turkey in hours, a lb turkey in hours, an lb turkey in hours and a lb turkey in hours. However, individual ovens cook differently. The best way to cook your turkey to perfection is to use a meat thermometer. Check the temperature of the turkey after the shortest cooking time by inserting a meat thermometer into the thickest part of the turkey breast and the thickest part of the thigh. When the temperature reaches 165 degrees in both locations, your turkey is fully cooked. REHEATING INSTRUCTIONS Transfer items in plastic containers to oven-safe, or if microwaving microwave-safe, dishes before reheating them. Soup and gravy Stovetop Put the soup into a pot and, stirring frequently, bring it to a simmer over medium heat until heated. For matzo ball soup, simmer the dumplings in the soup for 7-10 minutes until they are heated through.

3 Transfer soup or gravy to a microwave safe container, cover with a microwave safe plate, heat on high stirring after each minute until warm. Hors D Oeuvres Pigs in blanket, beef wellington, spanakopita, brie en croute, stuffed mushrooms, crab cakes Preheat the oven to 350 degrees. Arrange in single layer on baking sheet. Heat uncovered in the oven for minutes or until warm. Clams oreganata, clams casino Preheat oven to 350 degrees. Arrange in a single layer on baking pan. Heat loosely covered for 15 minutes. Remove cover and heat for 5 minutes more or until warm. Mussels with White Wine Garlic and Plum Tomato (Zuppa di Cozzi), Mussels Americano, Calamari Diavolo aluminum foil, heat in the oven for 20 minutes. Remove foil and heat for 5 minutes more or until warm. Swedish meatballs Oven aluminum foil, heat in the oven for minutes or until warm. Put in microwaveable container. Heat on high for two minutes, stir, continue to heat on high stirring after each minute until warm. Entrees Poached, Grilled or Roasted Salmon Preheat the oven to 325 degrees. Put an eighth of an inch of hot water in the bottom of an oven-safe pan. Then add the fish and cover the pan with aluminum foil. Heat the fish for minutes until warm. Cod Livornese, Lobster Tails Preheat oven to 350 degrees, heat in baking pan un-covered for minutes or until warm.

4 Shrimp Marsala, Flounder Francaise aluminum foil, heat in the oven for 20 minutes. Remove foil and heat for 5 minutes more or until warm. Sliced Herb-Roasted Turkey Preheat the oven to 350 degrees. Put an eighth of an inch of chicken stock in the bottom of an oven-safe roasting pan. Then add the sliced turkey breast and cover the pan tightly with aluminum foil. Heat the turkey for minutes until warm. Glazed Ham Preheat the oven to 350 degrees. Put the ham in an over-safe roasting and cover it loosely (tent it) with aluminum foil. Heat the ham for minutes until warm. Lasagna and Baked Ziti Preheat the oven to 350 degrees. Tent the pasta with aluminum foil, heat for minutes, or until heated through. Sides Mashed Potatoes and Parsnip Turnip Puree Stovetop Put the potatoes or puree into a saucepan over medium-low heat. Stir frequently for 3-5 minutes until heated through. If the potatoes or puree thicken, add warm milk or stock to thin. Put the potatoes or puree into a microwave safe. on high stirring every two minutes until the potatoes or puree are warm. Asparagus, green beans and spinach Stove-top Heat a teaspoon of extra virgin olive oil in a skillet. When the oil is hot add the vegetables and heat on medium-high heat for 3-5 minutes or until heated through. Put the vegetables in a microwave safe container, and heat on 75% power, stirring every minute, until the vegetables are warm. Sweet potatoes, roasted potatoes, root vegetables, butternut squash, brussel sprouts and stuffing Oven Preheat the oven to 350 degrees. Put the vegetables in a single layer on a baking sheet and cover with aluminum foil. Heat in covered for 15 minutes, remove the foil and stir. Bake uncovered for 5 minutes until warm

Wild Rice with Cranberries only Put the wild rice in a microwaveable container and heat on high, stirring every two minutes, until the rice is warm. Dinner Rolls Preheat oven to 350 degrees. Put the rolls on a baking sheet and heat for 5 minutes until warm.
