2 Our Winery Established in Apr 2003 on a pre-existing vineyard located outside the village of St. David s in Niagara-on-the-Lake. The winery opened to the public in May Total case production from 2008 vintage was 8500 cases. up from 1800 in 2003 We plan to expand production in the next few years to no more than 10,000 cases, in order to maintain the focus on premium quality.
3 Our Philosophy Here at Coyote s Run, we are passionate about good wine. Our philosophy is to leverage this passion and produce wines that we can proudly stand behind hand-crafted wines of quality and distinction that are representative of our unique terroir and microclimate. All of our wines are VQA certified, the symbol of quality for some of the finest wines produced in Ontario. All of our wines are hand-crafted in small batches to ensure that the end product is the highest possible quality.
4 Our Winemaker David Sheppard, Winemaker Dave has been making wine for nearly 25 years, first at a small family winery in the Mittelrhein, then onto Inniskillin Wines where he worked under the tutelage of Karl Keiser, one of the founders of the Ontario wine industry. He leans towards the Burgundian and Alsatian-styles of winemaking, with a focus on crafting wines that favor complexity, elegance and balance. Dave also prefers wines that are fruit-driven with soft ripe tannins, yet always showing true varietal character.
5 Our Vineyard Our vineyard is located on a 58.8 acre property, currently with 27.7 acres planted with (all acreage gross): 7.5 acres Chardonnay 7.1 acres Pinot Noir 3.1 acres Cabernet Franc 2.8 acres Cabernet Sauvignon 3.0 acres Merlot 2.2 acres Pinot Gris 2.0 acres Shiraz The location of this property, within the high temperature band that extends along the base of the St. David s Bench, is a tremendous benefit. Within this band, the average temperature is approximately 2-3 C warmer than it is in most of the Niagara peninsula, boosting our ripening potential Typically, the grapes from this property are harvested 1 2 weeks earlier than most of the other vineyards in the area, making all the difference in cooler years
6 Our Unique Terroir The vineyard soil is divided into two distinct sections of limestone clay. The dark brown clay soil (Toledo series), relatively common in the area, is very heavy and infertile Black Paw Vineyard The uncommon red clay soil (Trafalgar series) is slightly less heavy, but fairly stoney Red Paw Vineyard We are endeavoring to plant each grape variety on each type of soil. This gives us the option to do vineyard specific bottlings, or blend for added complexity Currently we have Pinot Noir, Cabernet Franc, and Chardonnay on each soil Draft - Confidential
7 Our Wines Our wines have been well received, and typically have been selling out 6-12 months after release. Currently, we are selling mostly 2007s and the early 2008s We have only a few 2006s (mostly reds, which are always released later). The premium priced Red and Black Paw Vineyard series of wines are extremely popular. Currently have Pinot Noir and Cabernet Franc on the two soils We will have Chardonnay in 2009 and Pinot Gris in 2012 We currently have three wines in the LCBO GL (Unoaked Chardonnay, Cabernet, and Pinot Gris/Blanc), and we usually have 6-10 wines in Vintages throughout the year.
