2 Introduction It is with pleasure that I introduce our 2011 Berkeley Scott salary survey, a unique guide to the salaries within the hospitality and leisure sectors. This salary survey helps clients to work with us to optimise attraction and retention strategies. It includes in-depth analysis of market conditions to help undertake the increasingly difficult task of recruiting great candidates and benchmarking existing employees. With unrivalled local knowledge, Berkeley Scott can deliver a salary survey like no other, serving as an excellent point of reference. The survey is also a good tool for candidates as they look to understand their market worth in an ever changing environment. To collect the data, we have analysed our own database of placed and active candidates and cross referenced with local published vacancies, both online and printed media. We continually monitor the local economy and we use our expertise gained over 27 years to verify the results to produce an accurate snapshot of the industry. The report covers salaries being paid to staff within the hospitality and leisure sectors throughout the first quarter of The figures quoted are basic salaries, and do not include benefit entitlement or bonuses. 3 Hotels General Managers command the highest average salary. London leads with the highest average of 65,000 for this role, with the South East and South West following with an average of 50,000. The Midlands and the North both offer the lowest average pay of 43,000 for this role. The highest noted maximum salary in this section was offered for the position of General Manager, 150,000 in London. This role in London, also offers the widest range of earnings from 35,000 to 150,000. Operations Managers in London are offered the highest average salary of 42,000. The minimum pay for this job in London is 30,000, whereas all other regions have minimum salaries that start in the 20,000s. The highest maximum wage noted for this role is 70,000 and is also located in London. Executive Chef s are well paid, with the average salary the second highest of all the job roles in London and the Midlands and then the third highest average in the South East, South West and the North. London unsurprisingly offers the highest average salary for sixteen of the twenty-one roles. The exceptions being the positions of Leisure Club/Spa Manager ( 25,000), Events & Sales Co-ordinators ( 20,000) and Commis Chef ( 15,000) which have the highest average earnings in the North. The South West offers the lowest minimum pay across the regions for the following roles; HR/Training manager 20,000, Bar Manager 15,000, Leisure Club/Spa Manager 17,000, Duty Manager 14,000 and Commis Chef 11,000. The South West, Midlands and the North share a number of the lowest earnings offered. The lowest minimum salary noted was for a Commis Chef, 11,000 in the South West. The highest maximum for this junior role is 16,000 and offered in London. This role has the smallest difference between minimum and maximum pay across all the regions, with London and the South West offering the largest difference, of just 3,000.

6 Restaurants The role of an Area/Operations Manager have the highest average salaries in London ( 48,000), the South West ( 38,000) and the Midlands ( 40,000). In the North, Executive Chefs have the highest average pay of all the roles in that region at 38,000. This is to be expected of these experienced roles. The highest noted maximum salaries occur in London, where a Area/Operations Manager receives 65,000 and an Executive Chef receives 60,000. Area/Operations Managers in London experience the widest range of salaries from a minimum of 38,000 to a maximum of 65,000, a difference of 27,000. This reflects the wide range of different sized establishments in London. Interestingly overall, London and the Midlands share the highest average salary for four out of the twelve roles featured; HR/Training Manager ( 34,000), Assistant Manager ( 24,000), Executive Chef ( 40,000) and Bar Managers ( 26,000). With London then offering the highest average salary for the following roles: Head Chef ( 36,000), Sous Chef ( 26,000), Commis Chef ( 15,000) and Pastry Chef ( 23,000). The lowest paid position is the apprentice role of Commis Chef, which pays 12,000 as a minimum in the North, the Midlands and the South West, with slightly more in London ( 14,000) and the South East ( 13,000). The salary difference between the most junior Chef (Commis) to most experienced (Executive) is typically over 20,000 in most regions. The lowest average salaries for each role are split across the North, South East and South West regions, with each area offering a mixture of the worst pay for roles. In the North the following roles offer the lowest average salaries across the survey; Area/Operations Manager ( 35,000), General Manager ( 30,000), Pastry Chef ( 16,000) and Supervisor/Head Waiter ( 16,000). With the South East offering the lowest average pay for these roles: Executive Chef ( 30,000), Head Chef( 29,000), and Sous Chef ( 17,000). It is unusual that the Executive Chef role pays so little, in what is generally a more affluent region. The lowest average salary for a HR/Training Manager is 28,500, and it is offered in the South West. It is worth noting that across the survey branded restaurants tended to offer salaries at the lower end of the scale.

9 Contract Catering The highest paid average role in this section is for an Area/Operations Manager in London with a salary of 46,000. The next highest is 40,000 in the South East. The maximum offered for this role is 55,000 in London, which is 15,000 more than the lowest maximum wage noted as 40,000 in the North. The lowest minimum wage offered for this role is 25,000 in the North. London also has the widest range between the lowest noted minimum salary for this role of 33,000 and the highest maximum of 55,000, a span of 22,000. The next highest paid role is Executive Chef, the highest average is 40,000 which is offered in London. The highest maximum for this role is also recorded in London; 45,000. The lowest minimum wage for this role is 28,000 which is offered both in the North and the South West. Unsurprisingly London offers the highest average salary for all the roles in this section. London also offers the highest noted maximum salaries apart from Head Chef, where the South East and the Midlands offer slightly higher maximum salaries of 40,500 compared to 40,000 for London. The North and the South West offer the same lowest average wages for six of the nine roles; Catering Manager ( 24,000), Executive Chef ( 35,000), Head Chef ( 27,000), Sous Chef ( 18,00), Chef De Partie ( 16,000) and Commis Chef ( 15,000). The North offers the lowest average salary for the Area/Operations Manager ( 32,000) and General Manager ( 25,000). And the South West provides the lowest paid average for the role of Chef Manager ( 21,000). The North and the South West also offer the lowest minimum wages for seven out of the nine roles; Chef Manager ( 18,000), Catering Manager ( 20,000), Executive Chef ( 28,000), Head Chef ( 21,000), Sous Chef ( 17,000), Chef De Partie ( 14,000) and Commis Chef ( 14,000). With the North offering the lowest minimum salary for Area/Operations Manager ( 25,000) and the same lowest minimum for General Manager ( 22,000) as the Midlands and the South East. The lowest paid role in this section is for Commis Chef, which offers an average of 16,000 in London and 15,000 in all other regions. The highest paid maximum salary for this position is 18,000 and is provided in the South East, the South West and the North. The next lowest paid role is Chef De Partie, which offers 19,000 on average in London.

12 Pubs The highest average pay for a role in this section of the survey is for an Area Manager/Director in London, 45,000. London also sees the highest maximum paid for this role, 60,000. It also has the largest range between minimum and maximum earnings ( 35,000-60,000), a range of 25,000. The next highest average wage for this role is offered in the Midlands, 43,500. The minimum salary for this role is offered in the South West, the Midlands and the North at 30,000 per year. Unsurprisingly London delivers the highest salaries across all roles and all salary ranges, apart from the average wage for a Pub Manager which is 500 less than the highest average salary of 35,000 which is in the South East. The highest average earnings for a Pub Manager are offered in the South East, 35,000. With London a little behind, with 34,500. The lowest average pub manager salary is in the Midlands at 30,000. The highest maximum salary noted for this role is 45,000 and based in London, with the South East following with 43,000. The lowest minimum pay offered for the Pub Manager role is 23,000 in the South West followed by 24,000 in the South East. The highest average salary for an Assistant Pub Manager across the regions is 21,000 in London. With the South East, offering the next highest average wage of 20,000. The highest maximum salary offered for this role is 27,000 in London. With 8,000 difference between this highest maximum salary and the lowest maximum recorded pay, which is 19,000 and is recorded in the South West, Midlands and the North. The smallest range of salary between minimum recorded salary and maximum noted earning is 6,000. This figure applies to both the the South West, Midlands and the North for the Assistant Pub Manager role; from 17,000 to 23,000. The South West has the lowest minimum salaries, with all three roles having the lowest minimum pay of this section; Area Manager 30,000, Pub Manager 23,000 and Assistant Pub Manager 17,000. Although the Midlands and the North also share 30,000, as the minimum paid for the Area Manager/Director role. The lowest earnings of this section is for the role of Assistant Pub Manager, 1,000, shared by the South West, Midlands and the North.

The second highest average salary for the role is 42,000, which is recorded for both the South East and Midlands. The top maximum pay for this job is 60,000, and is provided in London. The next maximum salary down is 50,000 for both the South East and the Midlands which is a marked difference of 10,000. The lowest minimum pay for the Area Manager/Director is 25,000, in both the South West and the North. London has the largest range between the minimum salary and maximum salary for this role; 30,000; with the minimum salary being 30,000 and the maximum 60,000. The highest average salary for a Store Manager is 28,000, and is based in London. The South East, South West and the Midlands offer the next highest average pay of 24,000 for this role. The highest noted maximum salary for this role is 35,000 in London. This income level is 5,000 more than the next highest recorded maximum salary of 30,000, which if offered in both the South East, South West and the Midlands. The highest recorded average earnings for the job of Assistant Store Manager is 19,500 based in London. The maximum paid for this role is also in London, 24,500. This is 2,000 more than the highest noted salaries in the other regions, which all pay less than 22,500. The higher wages offered in London is to be expected, as the capital has the most competitive retail catering sector. The lowest minimum salary included for the Assistant Store Manager is 14,000, which is the case in the South West, the Midlands and the North, with London a little ahead with 17,000 as the lowest wages for this role. The role of Assistant Store Manager, typically has the shortest range between the minimum and the maximum noted salary, with a difference of only 6,000 in the South West. As might be expected the South West offer the lowest overall average pay for the Area Manager, Store Manager roles and Assistant Store Manager salary.

16 Senior Head Office The highest average salary role in this section is for a HR Director, 87,000 in London. With a maximum salary of 145,000, noted in both London and the Midlands. The lowest minimum wage for this role is 40,000 is recorded for the South West. This is a 105,000 difference between the lowest lowest minimum and highest maximum for the role across the regions. The next highest paid role is for a Finance Director, with the highest average earnings of 85,000 in London. Both London and Midlands report the highest maximum salary for this role, of 110,000. The lowest minimum earnings recorded for this role are 63,000 and noted in the South West and the North. The next highest average paid roles are all Director positions; Marketing Director, Finance Director, Property & Facilities Director, Sales Director. These jobs pay an average of over 65,000 and are based in London. London offers the highest average salaries for the following roles; HR Director ( 87,000), HR Manager ( 45,000), Marketing Director ( 72,000), PR Manager ( 38,500), Marketing Manager ( 39,750), Finance Director ( 85,000), IT Director ( 60,000), IT Manager ( 48,000), Property & Facilities Director ( 71,000), Property & Facilities Manager ( 52,000), Sales Director ( 67,000), Sales Manager ( 43,000) and Revenue Manager ( 46,000). London, the South East and the Midlands share the highest average wages for Financial Controller ( 66,000), Credit Manager ( 39,500) and Payroll Manager ( 32,000). The greatest difference between average earnings offered for a role is for the HR Director role, with the South West paying 32,000 less for this senior position than the London based role. The lowest average paid role is Marketing Manager, which pays 30,000 in the South West and the North. The North and the South West both offer the lowest average salaries across the regions for all positions apart from the position of the HR Director, which is only the lowest in the South West and the job of Payroll Manager which has the same which has the same average earnings across all regions. The lowest minimum recorded wages are 27,000 and are recorded for the following roles in both the South West and the North; Training Manager, PR Manager, Marketing Manager, Credit Manager, Payroll Manager and Sales Manager. The South East and Midlands offer just 1000 more for each of these positions, with minimum earnings recorded of 28,000.
