1 Cooking with Hillstone Join our cooking scheme and take away the stress of deciding what to 10 easy to follow tea time recipes Step by step guide to create a great meal boxed up to take away each week Cheap and convenient Simply pay in advance before Friday and receive five recipe and method cards and a box of ingredients to make up the meals to be picked up on Monday after school. cook for tea! We have put together ten dishes for you to cook at home with ingredient list and methods. The idea behind it is the fact we all lead busy lives and shopping and planning meals can be difficult so we have created a menu that you can follow for a week but leaving in a bit of flexibility if you don t want to stick rigidly to the menu. Included in the box will be larder items, food that you can use over a longer period such as rice, tortilla wraps and spices. Also, frozen vegetables which you can take from the freezer as and when you need them. We hope you like the menu we have created but if there are things you would like us to put on then please let us know and we can put them on in the future. To reserve your food just pay at the office before Friday for you to pick it up on Monday. For further information you can send me an or contact the office.

3 Chilli con carne Beef mince Onions Tinned tomatoes Tomato puree Kidney beans 1 tsp chilli powder 1 tsp Cumin 1 tsp Cajun spice Salt and pepper Two cloves of garlic One tortilla wrap 340g rice Heat the oven to about 180 degrees gas mark 5. Cook off the mince in a pan on a low heat, breaking it up with a spoon. Finely chop the onion, with the back of a knife squash the peeled garlic cloves then chop. Drain the excess fat from mince. Fry the onions and garlic with the Cajun, cumin and chilli powder on a medium heat then add the drained mince. Add the tomatoes and tomato puree. Add the drained can of kidney beans and Cook for about twenty minutes. Cut up the tortilla wrap in to triangles, arrange on a baking tray, sprinkle with a little Cajun spice and bake for 5 minutes or until crisp. Bring a pan of water to the boil then rinse the rice with cold water then add to the boiling water. Cook for ten to twelve minutes or until the rice is cooked. Taste the chilli and add seasoning if you need to.

4 Chicken tray bake 4 large ripe tomatoes 2 red onions 1 red pepper 1 yellow pepper 8 boneless chicken thighs 4 cloves of garlic ½ a bunch of fresh thyme 1 teaspoon smoked paprika 3 potatoes Broccoli 2 carrots Preheat the oven to 180ºC/350ºF/gas 4. Quarter the tomatoes and place them in a large baking dish or roasting tray (roughly 25cm x 30cm). Peel the onions and cut into large wedges, then deseed and roughly chop the peppers. Add all these to the tray along with the chicken thighs. Squash the unpeeled garlic cloves with the back of your knife and add to the tray, then pick over the thyme leaves and sprinkle over the paprika. Add 2 tablespoons of oil and a good pinch of salt and black pepper. Toss everything together really well to coat, then spread across the tray, making sure the chicken isn t covered by the vegetables. Roast for around 1 hour, or until the chicken is golden and cooked through, turning and basting it a couple of times during cooking with the juices from the tray. Cut the potatoes in to large dice, boil for 5 mins, place on a baking tray and roast with a little oil, seasoning and some of the thyme. Cut the carrots in to rounds and boil for 5 mins or until soft. Cut the broccoli in to florets and boil for 3 to 5 minutes

5 Home made pizza 400g Pizza dough mix 300ml of water Pizza topping Cheese Green beans / mixed veg 3 Potatoes cut in to wedges 2 teaspoons of Oregano Pre heat the oven to 180 degrees or gas mark 5. Mix the pizza flour and oregano with water to form a dough and knead for 2 minutes. Leave to rest for 10 minutes. Roll out about 2cm thick on to a greased baking tray. Add pizza topping and cheese. Sprinkle with oregano. Leave to rest for 5 minutes. Cut up the potatoes in to wedges, boil for 5 minutes then bake in the oven with a little oil and seasoning. Put the pizza in the oven, Bake for 10 to 15 minutes. Bring a pan of water to the boil and cook the vegetables for 2 to 3 minutes.

6 Barbeque chicken 8 Chicken thighs Barbeque sauce Sweet potatoes Savoy cabbage Onion Leek Pre heat the oven to 180 degrees or gas mark 5. Wrap the sweet potatoes in foil and place in the oven to bake. These should take around 40 minutes to speed up you could micro wave the potatoes for about 10 minutes then place in the oven. Put the chicken on to a greased tray and bake in the oven for 20 minutes and cooked through. Slice finely the onion, leek and savoy cabbage. Put a pan on to heat up, melt some butter or margarine and oil in a pan. Stir fry the greens and season until tender. Heat up the sauce, add the chicken and serve piping hot with the baked sweet potato and fried greens

7 Lasagne sheets 2 Tins of tomatoes Onion 2 Courgette s 2 Peppers Tomato puree Grated cheese Baguette Garlic clove Flour Oregano Vegetable lasagne Pre heat the oven to 180 or gas mark 5. Dice up the peppers, courgette and onion. Heat up some oil in a pan then add the chopped vegetables and oregano, cook on a medium heat for 5 minutes then add the tinned tomatoes and tomato puree. Melt 25g of margarine or butter in a saucepan add 25g of plain flour and mix, cook for 1 to 2 minutes. Remove from the heat and blend in one pint of milk until you have a smooth sauce. Return to the heat stirring constantly until thick. Add the grated cheese and season with salt and pepper. Put a little of the sauce on the bottom of a dish and spread. Place two or three lasagne sheets in the dish then put a layer of the vegetable mixture on. Repeat two more times. Use the remaining sauce to cover the top layer of pasta. Cook in the oven for minutes or until the pasta is cooked. With the back of a knife break down the garlic with a little salt. Mix with a little margarine and cooking oil. Slice the baguette in half length ways then spread on to the baguette and bake for ten minutes

8 Hints and tips Always heat up your pan before cooking veg or meat, especially stir fried greens! Make a little extra so you can freeze it and use another day. Freeze in portions and just get them out when you need them. Maker extra sauce which can be used in other dishes Don t be afraid to experiment with the dishes to suit your personal tastes. Try adding pesto ( basil, pine nut, parmesan and olive oil sauce) to the pizza sauce or lasagne. A jar can be as little as 99p When baking the sweet potatoes micro wave them and then put them in the oven to speed up the cooking Cook the lasagne sheets in boiling water then put the lasagne together this will speed up the cooking process

9 Menu week two Beef meat balls with pasta Chicken Burritos (chicken and rice in a wrap) Shepherds pie with veg Chicken pie and new potatoes with honey carrots Sausage casserole with mini roast potatoes *if you have any allergies please get in touch with me via the office or

10 Meat balls with pasta 500g Lean mince beef 1 small onion, finely Chopped 2 garlic cloves crushed 1tsp dried oregano 1egg beaten Chopped basil (hand full) 1 Onion finely chopped 2 Cloves garlic crushed 2x 400g can of chopped tomato 1 tbls tomato paste Half tsp sweetener 320g pasta Heat the grill. Put beef, onion, garlic, oregano, egg and chopped basil in to a large bowl. Season with salt and pepper then divide mix in to meat balls. Grill for about ten minutes For the sauce Add all ingredients to saucepan and bring to the boil, turn down heat then simmer for ten minutes. Taste and season with salt and pepper if needed, add meat balls and simmer on gentle heat for fifteen minutes. Meanwhile bring a pan of water to the boil then add the pasta. Cook for 8 minutes until soft.

11 Chicken burrito 300g diced chicken Finley chopped onion Tin of tomatoes Diced pepper Smoked paprika Cajun spice Cumin 200g rice 50g grated cheddar 4 wraps 20 new potatoes Broccoli florets Preheat the oven to 180ºC/350ºF/gas 4. Place the new potatoes on to a baking tray and place in the oven. Bake until golden in colour. Rinse the rice in cold water then add to boiling water and cook until soft. Heat some oil in a frying pan. Add the chicken and a teaspoon of each of the spices. Cook for 2-3 minutes. Add the chopped onion and peppers. Cook for 5-6 minutes then add the tomatoes and cooked rice. Spoon a quarter of the mixture on to one of the wraps, sprinkle with cheddar and tuck in the sides of the wrap and then roll it up to create a cylinder. Add the broccoli florets in to boiling water and cook for 2-3 minutes. Serve with the mini jacket potatoes.

12 Shepherd's Pie 500g lamb mince Onion finely chopped 2 carrots diced Chopped rosemary Gravy mix 900g potatoes peeled Green beans Pre heat the oven to180ºc/350ºf/gas 4. Fry off the lamb then drain off the excess fat. Cut up the peeled potatoes in to quarters and boil until soft. Heat up a saucepan with a little oil, add the chopped onion, carrot and rosemary. Cook for 2 minutes then add the lamb and season with salt and pepper. Bring to the boil 500ml of water then blend in 40g of gravy mix. Add to the lamb and mix. Mash the cooked potatoes and season. Place the lamb mixture inn to a dish then spoon the mash on top and flatten down with a fork. Bake in the oven for 10 minutes Bring a pan of water to the boil place the green beans in and cook for 1 to 2 minutes.

13 Chicken pie 500g diced chicken Onion finely chopped 1 leek chopped New potatoes 500 ml white sauce Fresh thyme Puff pastry sheet 800g peeled potatoes 3 carrots battened Pre heat the oven to180ºc/350ºf/gas 4. Heat up a pan with a little oil, add the diced chicken and cook for 2-3 minutes. Add the onion, leek and thyme cook for another 4-5 minutes on a gentle heat Meanwhile place the potatoes in to a pan of water and cook until soft. Melt 50g of margarine or butter in a saucepan and add 50g of flour. Mix until a smooth paste. Blend in 500ml of milk and bring to the boil then cook gently for 10 minutes. Add the sauce to the chicken mix. Place in to a dish then cover with the puff pastry. Bake in the oven for minutes until the pastry is golden brown in colour. Cut each carrot in to three then in to thin batons. Boil until soft, drain then add a teaspoon of honey and a little butter or margarine, season and serve with the new potatoes

14 Sausage casserole 8 Sausages Finley chopped onion 2 tins of Tomatoes Tomato puree Fresh thyme and rosemary Can of mixed beans 900g potatoes diced Mixed veg Pre heat the oven to180ºc/350ºf/gas 4. Place the sausages in the oven in an oven proof dish and cook until golden in colour and cooked through. Bring a pan of water to the boil then add the diced potatoes and simmer for 5 minutes, drain and then place on a baking sheet with a little oil and seasoning, bake until golden brown. Heat up a pan with a little oil, add the chopped onions and fresh herbs cook gently for 5 minutes. Add the tomatoes and 50g of the puree. Add the can of mixed beans. Add the cooked sausages and simmer for 3-4 minutes. Bring to the boil a pan of water and then cook the mixed veg. Serve with the roast potatoes.

15 Hints and tips Add some fresh bread crumbs to the meat ball mix it will go a little bit further! Add some Worcestershire sauce to your shepherds pie mix To spice up the burrito Save a little of the pepper,onion and tinned tomato chop up finely and add some smoked paprika for a quick salsa. Add some low fat natural yoghurt to the wrap then roll! When making the white sauce heat up the milk and add it the flour and butter mix it will cook and thicken quicker! Add an egg yolk to the mash for your shepherds pie and a bit of grated cheese then grill for a crispy top If you make more than you need portion it up and freeze it. You can get out just what you need when you need it!
